PHILLY CHEESESTEAK STROMBOLI

Philly Cheesesteak Stromboli image

This is a variation of the recipe submitted by Chef #844314 for the Poor Boy Stromboli (http://www.recipezaar.com/304802). The SO absolutely loves those Dominos Philly Cheesesteak pizzas®, so I decided to modify Chef #844314's recipe to incorporate the flavors of the pizza. The outcome is, in my humble opinion, delicious! Sorry the picture came out a bit blurry, but you get the idea.

Time 1h20m

Yield 8 serving(s)

Number Of Ingredients 9

1 refrigerated pizza crust
1/2 lb roast beef, sliced
1/2 lb provolone cheese, sliced
1 yellow onion, sliced
1/2 green pepper, chopped
1 (4 ounce) can sliced mushrooms
2 tablespoons butter
1 tablespoon butter, melted
salt and pepper

Steps:

  • Melt 2 tablespoons butter in large skillet and add sliced onions, salt and pepper. Saute for about 5 mins, just as they start to turn translucent.
  • Add green pepper and saute for another 4-5 minutes.
  • Add mushrooms and continue to saute for another 3-4 minutes then take off heat and set aside.
  • Lay Pizza Crust out on Countertop and roll out so its about 1/4 inch thick all the way around and square in shape.
  • Layer cheese on pizza crust leaving about 2 inches from each side.
  • Layer roast beef leaving same amount of space on each side.
  • Layer onions, peppers, and mushrooms onto roast beef, again leaving 2 inches on each side.
  • Starting at the edge closest to you, start to roll the dough tightly until all the toppings are enclosed in the middle, and seal the seam along the bottom and on the ends by pinching the dough together.
  • Brush the top of the dough with the melted butter, and cut a few slits in the top of the dough to let moisture escape.
  • Put loaf on baking pan and bake at 350 degrees for about 35 minutes, or until golden brown on top.
  • Let stand about 10 minutes before cutting to keep the cheese from running out all over the place.
  • Enjoy!

1/2 cup thinly sliced red bell peppers
1/2 cup thinly sliced green bell peppers
2 tablespoons thinly sliced seeded and stemmed jalapenos
2 tablespoons minced garlic
1 teaspoon Italian seasoning
1/2 pound sliced ham
1/4 pound thinly sliced pepperoni or salami
1/2 cup sliced black olives
2 cups grated provolone
2 cups grated mozzarella
1 large egg, beaten with 1 tablespoon water to make an egg wash
1 cup finely grated Parmesan
1 cup warm (110 degrees F) water
1 (1/4-ounce) envelope active dry yeast
1 teaspoon sugar
1 tablespoon plus 1 1/2 teaspoons extra-virgin olive oil
3 cups bleached all-purpose flour
1 teaspoon salt
1 cup warm (110 degrees F) water
1 (1/4-ounce) envelope active dry yeast
1 teaspoon sugar
1 tablespoon plus 1 1/2 teaspoons extra-virgin olive oil
3 cups bleached all-purpose flour
1 teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F. Grease a large baking sheet and set aside.
  • In a large skillet, cook the sausage over medium-high heat until browned and the fat is rendered, about 5 minutes. Remove with a slotted spoon and drain well on paper towels. Discard all but 1 tablespoon of fat from the pan. Add the onions, bell peppers, and jalapenos and cook, stirring, until very soft, 4 to 5 minutes. Add the garlic and Italian seasoning and cook, stirring, for 1 minute. Remove from the heat and cool.
  • Punch down the dough and divide half. On a lightly floured surface, roll out half of the dough to a large rectangle, about 10 by 14 inches. Spread half of the cooled sausage mixture across the dough leaving a 1-inch border. Overlapping slightly, layer half of the ham, pepperoni, olives, provolone and mozzarella cheeses over the top. Using a pastry brush, paint the border of 1 long edge with egg wash. Starting at the opposite long end without egg wash, roll up the dough into a cylinder, pinching the edges to seal. Place on the prepared baking sheet and repeat with the remaining ingredients. Let the dough rise, 20 to 30 minutes.
  • Brush the top of each stromboli with egg wash. Bake until nearly completely golden brown and starting to crisp, about 20 minutes. Sprinkle each stromboli with Parmesan cheese and return to the oven until the cheese is melted and the dough is golden brown, about 5 minutes.
  • Remove from the oven and let stand 10 minutes. Slice thickly and serve.

  • In a large bowl, combine the water, yeast, sugar, and 1 tablespoon oil and stir to combine. Let sit until the mixture is foamy, about 5 minutes.
  • Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until all the flour is incorporated but the dough is still slightly sticky. Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes.
  • Oil a large mixing bowl with the remaining 1 1/2 teaspoons olive oil. Place the dough in the bowl and turn to oil all sides. Cover the bowl with plastic wrap and set in a warm, draft-free place until nearly doubled in size, 1 to 1 1/2 hours.

PHILLY CHEESE STEAK STROMBOLI

Philly Cheese Steak Stromboli image

Provided by Robert Irvine : Food Network

Time 50m

Yield 5 to 6 servings

Number Of Ingredients 8

1 pound beef rib steak, sliced thin
Salt and freshly ground black pepper
All-purpose flour, for rolling dough
One 16-ounce ball pizza dough
2 cups shredded mild cheese blend, such as provolone, mozzarella and Parmesan
1 cup tomato sauce (gravy)
1 tablespoon minced fresh parsley
2 eggs, beaten, for egg wash

Steps:

  • Preheat the oven to 375 degrees F.
  • For the beef filling, sprinkle the slices with salt and pepper. In a large skillet over medium-high heat, add the beef and cook until cooked through, 6 to 7 minutes. During this time, stir and shred the beef with tongs or a spatula. The beef should be a shredded cheese steak consistency. Once cooked, remove from the heat and allow to cool until building the stromboli.
  • On a clean, dry work surface sprinkled with flour, roll the pizza dough into a 10 by 14-inch rectangle, making sure not to flip the dough over, just rotating by 90 degrees as needed. Once the dough is rolled out, sprinkle half the cheese in the center, leaving a 2-inch border on all sides. Top with the beef, followed by the tomato sauce, in a stacked fashion. Top with the herbs and the remaining cheese. Brush the edges with some of the egg wash. Fold the bottom and top edges over the filling, and then fold the sides over twice, 1-inch at a time, resulting in a 6 by 14-inch tube. Brush the outside of the stromboli with the remaining egg wash, place on a sheet pan lined with parchment paper and bake until firm and golden brown, 15 to 18 minutes. Remove from the oven and let rest for 5 minutes. Cut into 5 to 6 portions and serve.

  • 1. Preheat the oven to 400. Starting with 2 tablespoons, add the olive oil to a medium saute pan on medium heat. When the oil is hot, add the onions, salt and pepper. Mix and let cook slowly. If the onions look dry, add the additional tablespoon of oil. Stir occasionally. You are looking for soft onions, not crispy. If the onions start getting crispy, turn the heat down a little and stir a little more frequently.
  • struction-step-2″>2. While the onions are cooking, let’s start on the dough. Give the pan a little bit of an olive oil grease, by drizzling a bit of olive oil on the pan and with a paper towel, wipe it all around. Ok, breathe and prepare for a heart attack while you open the dough can. If it doesn’t open when you peel the paper off, give it a whack on the corner of your counter. Unroll the dough onto the pan. Melt the butter and add the garlic, granulated garlic, and parsley. Mix, and using a brush (if you have…its one of those brushes that comes with any grill kit…usually silicon or strawish bristles) or a spoon, evenly spread the garlic butter onto the dough. If you are using a spoon, I would even get in there with my hands and spread it around evenly. Reserve a little less than half of the garlic butter.
  • step-3″>3. Now take the American cheese and break into small pieces spreading it around the dough (see photo walk through above). Then put a small sprinkling of the Mexican 4 cheese on top. Next, lay down a slightly overlapping layer of roast beef. At this point the onions should be done. They should be nice and soft and brown. Sprinkle, as best you can, the onions on top of the roast beef. Then add a healthy amount of Mexican 4 cheese and a sprinkling of mozzarella. Top with another light layer of roast beef (not overlapping). This layer might not cover the entire thing and that’s ok. Top with another sprinkling of mozzarella. 4.
  • Pull the dough out a little bit more from the edges. You want to make sure that you have enough room for the meat and cheese to be covered by the dough. Let’s roll. Start with one of the short sides and fold over looking to see that the dough line created is even. Continue to roll until you reach the end. Before you make your last roll you will have to pull the dough out again from the edge to make sure that the meat and cheese are covered. Place the log on seam side down in the center of the pan. You want to try to put the weight of the Stromboli on top of the seam so it doesn’t open. Next we have to close up the ends. Take the left and right pieces in both hands and push them towards each other like you’re wrapping a gift. Then take the bottom piece and fold toward the top, and take the top piece and place over the entire end, tucking it under the Stromboli. When you’re done, it should look like a loaf of bread. 5.
