1 cup egg whites (about 7)
5 egg yolks
1-1/2 cups sugar, divided
2 tablespoons water
1/2 teaspoon each almond, lemon and vanilla extract
1 cup all-purpose flour
1/2 teaspoon cream of tartar
1/2 teaspoon salt
FILLING:
1 package (3 ounces) strawberry gelatin
1 cup boiling water
1/2 cup ice water
1 pint fresh strawberries, sliced
1 carton (8 ounces) frozen whipped topping, thawed, divided
Additional strawberries

Steps:

  • Let egg whites stand for 30 minutes. In a large bowl, beat egg yolks on high speed for 5 minutes or until thick and lemon-colored. Gradually beat in 1/2 cup sugar. Stir in water and extracts. Sift flour twice; gradually add to yolk mixture and mix well (batter will be very thick). , In a large bowl with clean beaters, beat the egg whites, cream of tartar and salt until soft peaks form. Gradually add remaining sugar, 1 tablespoon at a time, beating until stiff peaks form; set aside. Fold into egg yolk mixture just until blended., Spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets; smooth the top. Bake at 325° for 50-55 minutes or until cake springs back when lightly touched. Immediately invert pan; cool completely., In a large bowl, dissolve gelatin in boiling water. Add ice water and stir. Place bowl in ice water for about 5 minutes or until slightly thickened. Fold in strawberries and 1/2 cup whipped topping., Run a knife around side and center tube of pan. Split horizontally into three layers; place bottom layer on a serving plate. Spread with half of the gelatin mixture. Repeat. Top with remaining cake layer. Frost top and sides with remaining whipped topping. Garnish with strawberries. Refrigerate leftovers.

1/4 cup water
1 tablespoon minced fresh lemon verbena leaves
1 teaspoon vanilla extract
1-1/2 cups sugar, divided
1-1/4 cups all-purpose flour

1/2 teaspoon salt
LEMON BUTTER FROSTING:
4-1/2 cups confectioners' sugar
1/3 cup butter, softened
1/4 cup lemon juice
1 teaspoon vanilla extract
1/4 teaspoon lemon extract
Daisies and additional lemon verbena leaves, optional

Steps:

  • Preheat oven to 350°. In a bowl, beat the egg yolks on high until thickened and lemon-colored. Add water, lemon verbena and vanilla. Gradually beat in 1 cup sugar. beat for 4-5 minutes or until mixture doubles in volume. Combine flour and baking powder; sprinkle 1/4 cupful over batter and fold in until combined. Repeat with remaining flour mixture; set aside. , In another bowl, beat the egg whites, cream of tartar and salt until soft peaks form. Add remaining sugar, 1 tablespoon at a time, beating until stiff peaks form. Gently fold into batter. Pour into an ungreased 10-in. tube pan. Bake until top springs back when lightly touched, 45-50 minutes. Immediately invert the pan; cool completely. Run a knife around sides of pan and remove cake to a serving plate. , In a bowl, cream 2 cups sugar, butter, lemon juice and extracts. Slowly add remaining sugar. If needed, beat in a small amount of water until the frosting reaches desired spreading consistency. Frost cake. Garnish with daisies and lemon verbena if desired.

Nonstick baking spray with flour
2 sticks (16 tablespoons) unsalted butter, at room temperature
2 3/4 cups (550 grams) sugar
1 teaspoon fine salt
1/4 teaspoon baking powder
1 tablespoon vanilla extract
1/4 cup vegetable oil
Zest from 3 lemons
Zest from 3 oranges
6 large eggs, at room temperature
3 cups (360 grams) cake flour
3/4 cup heavy whipping cream, cold
1/4 cup buttermilk
1 lemon
2 to 3 oranges
1/3 cup sugar

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Generously spray a 10-cup Bundt pan with nonstick baking spray with flour.
  • Add the butter, sugar, salt, baking powder, vanilla, oil and citrus zests to the bowl of a stand mixer fitted with the paddle attachment and beat on medium speed for 4 minutes. Stop the mixer and scrape the bowl and beater. Add the eggs, 2 at a time, beating on medium speed for 30 seconds after each addition. Scrape the bowl.
  • Add 1 1/2 cups cake flour and blend on low to combine. Add the cream and buttermilk and blend on low to combine. Scrape the bowl. Add the remaining 1 1/2 cups cake flour, blending on low to combine and then raise the mixer to medium speed and beat for 4 minutes. Transfer the batter to the prepared pan.
  • Bake the cake until a toothpick inserted near the center comes out with a few moist crumbs, 65 to 70 minutes. The cake will rise to fill the pan and will settle slightly once removed from the oven.
  • Meanwhile, for the syrup: While the cake bakes, juice the lemon and oranges to make 1/2 cup of citrus juice. Transfer the juice to a small saucepan and add the sugar. Bring the mixture to a simmer and swirl the pan to dissolve the sugar. Turn off the heat. Reserve the syrup at room temperature while the cake bakes.
  • When you've removed the cake from the oven, use a toothpick to pierce the top crumb of the cake about 30 times and then slowly pour the syrup evenly over the hot cake. Cool the cake in the pan for about 30 minutes before turning out of the pan on a wire rack to cool completely before serving.

FILLING:

Steps:

  • Preheat oven to 350°. Line bottom of a greased 15x10x1-in. jelly-roll pan with parchment; grease paper., In a large bowl, cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla and citrus zest. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition., Transfer to prepared pan. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Cool in pan 5 minutes before removing to a wire rack; remove paper. Cool completely., For filling, in a small saucepan, combine sugar, cornstarch and salt. Whisk in water. Cook and stir over medium heat until thickened and bubbly. Remove from heat., In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Stir in butter. Gently stir in lemon juice. Press plastic wrap onto surface of filling; cool slightly. Refrigerate until cold., For frosting, in a large bowl, cream butter until fluffy. Beat in confectioners' sugar, corn syrup, orange juice, vanilla, orange zest and salt until smooth. Tint orange with yellow and red food coloring. , Trim edges of cake; cut crosswise into thirds. Place 1 cake layer on a serving plate; spread with half the filling. Repeat layers. Top with remaining cake layer. Frost top and sides of cake with frosting. Insert lollipops in top for flowers. This cake is a joy - banana, courgette and carrot are the hidden gems that children will not realise are there! To give added interest and texture, use fresh or dried banana slices for decoration. This is not a deep cake, as it has a closer texture than a plain sponge.

225g/8oz self-raising flour
175g/6oz caster sugar
1 tsp baking powder
4 large free-range eggs
225ml/8fl oz sunflower oil, plus extra for greasing
100g/3½oz carrot, peeled and coarsely grated
100g/3½oz overripe banana, mashed
100g/3½oz courgettes, coarsely grated
75g/2¾oz chewy dried banana slices, broken into pieces
100g/3½oz butter, softened
100g/3½oz full-fat cream cheese
1 tsp vanilla extract
225g/8oz icing sugar

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4. Grease two loose-bottomed 20cm/8in sandwich cake tins and line the bases with baking paper.
  • Place the flour, sugar and baking powder in a large bowl. Beat the eggs in a separate bowl, then add the oil, carrot, banana and courgettes to the eggs and stir. Add the wet ingredients to the dry ingredients and whisk together using an electric whisk until combined.
  • Divide the mixture between the two tins and bake for 25-30 minutes, or until well risen and lightly golden. Leave to cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely. The cakes will shrink back a little when cooling.
  • To make the icing, place the butter and cream cheese in a large bowl and whisk with an electric whisk until combined. Add the vanilla and half of the icing sugar and whisk again until combined. Add the remaining icing sugar and whisk until light and fluffy.
  • Spread half of the icing over one cake. Sandwich the cakes together, then spread the remaining icing on the top and swirl. Arrange dried banana slices in a ring or spiral pattern on top of the cake. Cut into slices to serve.

  • Separate eggs. Sift the flour, baking powder, and salt together three times.

Ever wonder what to do with all those left-over egg yolks from baking an angel food cake? This is what my grandmother did with hers! A luscious, eggy sponge cake. You can frost it or not, your choice!

1 2/3 cups cake flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
10 egg yolks (at room temperature)
3/4 cup hot water
1 teaspoon lemon extract

Steps:

  • Sift together cake flour, baking powder and salt. Set aside.
  • With electric mixer, beat egg yolks until slightly thickened; add hot water gradually, beating until mixture is very thick and light (about 10 minutes).
  • Add flavoring to egg yolks, then add sugar gradually, beating constantly.
  • Fold in flour, about a fourth at a time (I do this by hand) folding until well blended.
  • Pour batter into an ungreased 10-inch tube pan.
  • Bake at 375°F for 40-50 minutes until done.
  • Remove cake from oven and invert pan.
  • Let cake stand for an hour until cool.

225g golden caster sugar
4 large eggs
½ lemon, zested
1 tsp vanilla extract
225g self-raising flour
splash of milk
Optional fillings of lemon curd, jam, lightly whipped cream

Steps:

  • Heat oven to 180C/160C fan/gas 4, butter and line the base of two 20cm spring-form cake tins with baking parchment.
  • Using an electric whisk beat the butter and sugar together until pale and fluffy. Crack the eggs in one at a time and whisk well, scraping down the sides of the bowl after each addition. Add the lemon zest, vanilla, flour, milk and a pinch of salt. Whisk until just combined then divide the mixture between the two tins.
  • Bake in the centre of the oven for 25-30 mins until a skewer inserted into the middle of each cake comes out clean. After 10 mins remove the cakes from their tins and leave to cool completely on a wire rack. Fill how you like. My personal favourite is a good dollop of lemon curd and some fresh cream, then dust the top with icing sugar. Will keep for 3 days.

OVERNIGHT CAKE 1964

This is an easy recipe, similar to an Angel Food Cake, but I find the cake is not as sweet and a moister texture. It is like eating an angel food cake combined with a scratch white cake. Its nice with a cup of tea, a glass of cold milk, or with fruit and sauce. Give it a try. I always use a two part tube pan when making this cake. It is easier to remove from the pan. Save your egg yolks and make recipe #75074 which is another nice cake. I have had this recipe for over 42 years, and my friend had it before that in her family, so it is an oldie.

2 cups flour, sifted
2 cups granulated sugar, sifted
1/2 teaspoon salt
1 cup boiling water
2 teaspoons baking powder
2 teaspoons vanilla
1 teaspoon almond extract
1 cup egg white (8 large whites)
1 pinch salt
1 teaspoon cream of tartar

Steps:

  • Early in the day or last thing at night, sift the sugar flour and salt together well.
  • Add the boiling water and stir until well blended.
  • Cover and leave until cold a 8 hours or overnight.
  • Later that day or next day,.
  • When you are ready to make your cake, preheat your oven to 250 degrees.
  • In a large bowl,( wiped down with vinegar just to make sure there are no oils) add the room temperature egg whites and beat until foamy.
  • Add the pinch of salt and the tartar, beat until stiff peaks but not dry.
  • While whites are beating, to the cold batter, add the two teaspoons baking powder, the almond and vanilla extracts, and stir well.
  • Once the whites are ready, fold in a little of it to lighten into the batter.
  • Fold in all the whites now into batter, trying to fold in well, and not deflate.
  • Place into a ungreased angel food tube pan.
  • Place into preheated 250 degrees oven and bake for 15 minutes on the medium centre rack.
  • After 15 minutes increase heat without opening door to 300 degrees and bake for another 20 minutes.
  • After the 20 minutes increase heat to 350 degrees, without opening the door, and finish baking for 15 minutes.
  • Test cake to see if its completely cooked with a long skewer.
  • If done remove, if not reduce the heat to 325 and continue until tester shows done. I have never had to leave in any longer but all ovens are different. Also please use a timer for each of the oven temperatures when increasing.
  • When done, remove to wire rack.
  • Turn upside down until cool, and then run knife around edges and release cake.
  • I do have to run the knife around all edges then remove the bottom part of the pan and then again under the bottom.
  • I always use a two piece tube pan for this recipe.
  • The almond and vanilla can be as original recipe one teaspoon each or more as I have increased . The combination of both is a must in the recipe.

2 (15 ounce) cans mandarin oranges, drained

Steps:

  • PINEAPPLE CURD: Bring juice from canned pineapple to boil. Whisk together eggs, yolk, and sugar in medium bowl. Add to pineapple juice, whisking continuously over medium heat until it becomes thick (3-4 minutes). Take off heat, stir in butter and salt. Pour in small bowl, cover with plastic wrap and refrigerate for 1 hour.
  • CAKE: Slice cake horizontally into 3 even layers.
  • In a mixing bowl, add vanilla frosting, orange juice and orange zest; stir to combine. Place bottom layer of cake on platter, spread 1/2 of orange frosting on bottom layer, top with mandarin oranges.
  • Place another layer of cake on top, spread pineapple curd over this layer and top with 4 slices of pineapple rings cut in 1/2.
  • Add third layer of cake, frost all around the sides with rest of orange frosting. Frost top with cream cheese frosting.
  • Layer 4 pineapple rings on top, cut into 1/4 and second can of mandarin oranges.Press toasted coconut into sides and on top of cake.

½ cup vegetable oil

Steps:

  • Beat the eggs, and add them to the boxed cake mix. Add the oil and the mandarine oranges to the batter; remember to add the juice as well as the fruit. Pour the batter into a greased and floured 9 x 13 inch pan.
