Bowtie Pasta Salad - Crunchy with lots of delicious Italian seasonings no mayo, it's perfect for a cookout, barbecue or potluck!

1 32 oz. box Bow Tie Pasta
1 bunch green onions (chopped)
1 bell pepper (green or red - use your favorite)
1 cup cherry tomatoes sliced in half
1/2 cucumber (cut in half and then quartered and thinly sliced)
1/2 cup roasted red pepper
3 oz. jar marinated artichoke hearts
2 tablespoons Johnny's Salad Elegance seasoning salt ( or McCormick's Salad Supreme Seasoning*)
1 to 1 1/2 cups Italian Salad Dressing
Prior to serving check the seasonings - you may need to add a bit of salt depending upon which seasoning spice you use. If needed add about 1/2 teaspoon of salt and mix to combine.

Steps:

  • In a large pot, cook the bow tie pasta to al dente in boiling salted water. Remove drain well and allow to cool completely.
  • When you are ready to assemble the salad, thinly slice the onions - both the white and green parts, red or green bell pepper, slice the cherry tomatoes and cucumber.
  • Drain the roasted red pepper and chop. Drain the artichoke hearts and dice.
  • Add all of the ingredients to a large mixing bowl. Sprinkle with the salad seasoning and add the salad dressing. Mix well to combine. Cover tightly and refrigerate at least 6 hours before serving.
  • Prior to serving, stir well and check seasoning. You may need to add a touch of salt, black pepper and/or additional salad dressing.
  • Can be served cold or at room temperature.

3 cups uncooked Farfalle pasta
3/4 cup creamy Italian dressing ((such as Olive Garden Italian Dressing), separated)
1 pint grape tomatoes, halved
1 (8 ounce) block Mozzarella cheese, cut into a 1/4" dice
1 (6 ounce) can pitted black olives, drained
1/4 cup finely chopped, fresh basil

Steps:

  • Bring a large pot of salted water to a roaring boil and cook the pasta to al dente according to package instructions. Drain and rinse under cool running water until just warm to the touch.
  • Transfer to a large mixing bowl and toss with a 1/4 cup of Italian dressing and a generous pinch of salt. Set aside and allow to cool completely while you prepare the vegetables.
  • Add the tomatoes, Mozzarella, olives, and basil the bowl, along with the remaining 1/2 cup of Italian dressing. Toss to combine and season to taste with salt and pepper.

1 medium cucumber
1 medium yellow summer squash
1 medium zucchini
1 medium sweet red pepper
1 medium green pepper
4 cups fresh broccoli florets
3 cups fresh cauliflowerets
1 small red onion, finely chopped
2 packages Italian salad dressing mix
4-1/2 cups uncooked bow tie pasta
1/4 cup olive oil
1/4 cup red wine vinegar
3/4 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Wash the first five ingredients but do not dry; chop and transfer to a large bowl. Add remaining vegetables. Sprinkle with dry dressing mix; toss to coat. Refrigerate, covered, 4-6 hours or overnight., Cook pasta according to package directions. Drain; rinse with cold water. Add to vegetable mixture. In a small bowl, whisk remaining ingredients. Add to salad; toss to coat.

1 (8 ounce) package bow tie pasta
1 large cucumber, thinly sliced
1 large onion, thinly sliced
1 ½ teaspoons dried dill
¾ cup white vinegar
1 cup white sugar
1 cup water
1 tablespoon vegetable oil
1 tablespoon prepared mustard
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook the bow tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes. Drain and rinse several times with cold water until pasta is cool.
  • Stir pasta, cucumber, onion, and dill in a salad bowl. Whisk vinegar, sugar, water, vegetable oil, mustard, salt, and black pepper in a separate bowl until sugar and salt have dissolved. Pour dressing over the pasta mixture and toss lightly to coat with dressing. Let chill for 2 hours before serving.

1 medium orange or yellow pepper (chopped)
1 medium red pepper (chopped)
2 cups sliced and quartered english cucumber

1 cup cherry tomatoes (cut in half)
1 cup Italian dressing
1 cup Caesar dressing
1/2 cup grated Parmesan cheese
extra cherry tomatoes (fresh parsley (chopped), shredded Parmesan for garnish (optional))

Steps:

  • Cook pasta according to package directions for al dente. Immediately rinse in cold water.
  • In medium bowl whisk dressings and grated Parmesan cheese until well combined.
  • In extra large bowl mix together pasta, vegetables and dressing.
  • Pour into serving bowl and top with fresh parsley, shredded Parmesan and cherry tomatoes (if desired.)
  • Refrigerate at least four hours before serving.

4 ounces bow tie pasta (farfalle)
2 tablespoons rice vinegar
1 1/2 tablespoons peanut oil or 1 1/2 tablespoons vegetable oil
1 teaspoon sugar
1 teaspoon hot chili oil
1/4 teaspoon salt, to taste
1 small cucumber, scored,thinly sliced (about 2 cups)
1/2 cup chopped red bell pepper
1/3 cup very thinly sliced red onions or 1/3 cup other sweet onion

Steps:

  • Bring 3 quarts water to a boil over medium-high heat.
  • Pour in pasta and return to a boil.
  • Cook until al dente, 8-10 minutes, stirring occasionally.
  • Meanwhile, in a medium bowl, combine vinegar, oil, sugar, chili oil, and salt; mix well.
  • Add the cucumber, bell pepper, and onion, and toss to coat.
  • Drain the pasta and rinse with cold water.
  • Drain again, add to the cucumber mixture, and toss well.
