Chicken breasts slow cooked with a creamy white wine and mushroom mixture. This quick and easy recipe calls for just five main ingredients, yet is tasty enough to serve for company! My husband normally doesn't like chicken, yet asks for seconds whenever I prepare this. I spoon the sauce over the chicken and serve with rice or noodles.

6 skinless, boneless chicken breast halves
salt and pepper to taste
paprika to taste
½ cup dry white wine
1 (10.75 ounce) can condensed cream of mushroom soup
1 (4.5 ounce) can sliced mushrooms, drained
1 cup sour cream
¼ cup all-purpose flour

Steps:

  • Sprinkle chicken breasts lightly with salt, pepper, and paprika to taste. Place in slow cooker.
  • In a mixing bowl, combine the wine, condensed soup, and mushrooms. In another bowl, mix together sour cream and flour. Stir sour cream mixture into the mushrooms and wine. Pour over chicken in slow cooker. Sprinkle with additional paprika, if desired.
  • Cover, and cook on Low for 6 to 8 hours.

2 tablespoons canola oil
1/3 cup soy sauce

Steps:

  • In a large skillet over medium heat, brown the chicken in oil on all sides. Transfer to a 5-qt. slow cooker. Combine the soy sauce, brown sugar, water, garlic and ginger; pour over chicken. , Cover and cook on low for 5-6 hours or until chicken juices run clear. Remove chicken to a serving platter sprinkle with almonds.

A friend researched it (I'm hoping she'll stop by here and add some information in the comments on how she found/changed it) because we were reading Dorothy Dunnett's Niccolo Rising novels (set in that time period) and we were curious about what the characters were eating. So we ate this along with #124576, and it was fantastic, if a little time consuming

4 chicken breasts (with bone and skin)
1 celery rib
2 teaspoons thyme
2 tablespoons parsley
1 bay leaf
1 tablespoon peppercorn (cracked)
5 juniper berries, mashed
3 cups walnuts (ground)
2 lemons, juice of
1 teaspoon salt
1 teaspoon cinnamon
1 cup pomegranate juice (I use a brand called P.O.M.)
5 tablespoons unsalted butter
1 1/2 large onions, finely diced
1/3 cup sugar
2 cups water

Steps:

  • Wash 4 half chicken breasts (with bones and skin) and put them in a good-sized pot. Add celery rib, thyme, parsley sprigs, bay leaf, cracked peppercorns, and juniper berries.
  • Barely cover the breasts with cold water, cover the pot, and bring to a gentle simmer (the surface of the water shakes and only a few bubbles break). Hold it there for 20 minutes; turn off the heat; let the breasts rest in the hot water for 10 minutes.
  • Transfer chicken to a strainer. Let it rest until cool enough to handle and then cut or pull the meat into bite-sized pieces. Use the skin, bones, and broth to make stock for some other dish.
  • Grind six or so handfuls of walnuts fine in a food processor to produce three cups. You want to end up with about three cups.
  • Heat 5T unsalted butter in a large, heavy saucepan, and add onions, chopped fine. Cook onions until they are golden, 8 minutes or so. Add ground walnuts and stir constantly (very important) for about five minutes. They will stick if you don't stir.
  • Add the lemon juice, salt, cinnamon, sugar, pomegranate juice, and two cups water. Cover pot and let mixture simmer for up to 40 minutes.
  • Five minutes before you're ready to serve, add the chicken. Keep the heat low so it doesn't toughen up and cook it only until everything is heated through. Turn off the heat and let it rest if you must. It will stay hot for quite a while.

500 g basmati rice
1 medium onion
5 tablespoons margarine or 5 tablespoons oil
1 large roasting chicken, jointed
salt and black pepper
1 tablespoon raisins (or more)
150 g apricots, dried
1 teaspoon cinnamon, ground

Steps:

  • Fry the onion in 3 tbsp of margarine or oil until golden, add the chicken pieces and brown on all sides.
  • Season to taste with salt and pepper, add raisins and apricots, and continue to cook for a minute or two longer, turning the fruit in the fat.
  • Sprinkle with cinnamon, cover with water and simmer gently, covered, until the chicken is very tender and the sauce reduced.
  • Bone the chicken if you like.
  • Wash and cook the rice, but do not steam it.
  • It should be just partially cooked.
  • Put 2 tbsp melted margarine or oil at the bottom of a large heavy saucepan.
  • Spread half of the partly cooked rice over this, cover with the chicken pieces, pour the rich fruity sauce over them and cover with the remaining rice.
  • Cover the pan with a cloth, put the lid on tightly, and steam over a very low heat for 20 to 30 minutes.
  • The cloth will capture the steam rising from the rice and help to make it fluffy.
  • Serve all mixed together.

1 teaspoon saffron threads
3 tablespoons hot water, or more as needed
1 ½ pounds boneless, skinless chicken thighs
2 teaspoons kosher salt, divided
freshly cracked black pepper to taste
1 tablespoon vegetable oil
1 yellow onion, finely chopped
4 cloves garlic, minced
1 tablespoon curry powder
1 ½ cups chicken stock

Steps:

  • Place saffron threads into a small bowl and crush them up a bit with a spoon. Add 3 to 4 tablespoons of hot water and stir. Let bloom for about 10 minutes - the water should turn bright yellow/orange. Set aside.
  • Season chicken thighs on both sides with about 1 teaspoon salt and freshly cracked pepper.
  • Heat oil in a large nonstick skillet over medium-high heat. Add chicken thighs and sear on both sides until golden, 3 to 4 minutes per side. Remove and place on a plate to the side. Add onion to the same skillet and cook until soft and translucent, 3 to 4 minutes. Stir in garlic and curry powder and cook until fragrant, about 1 minute.
  • Pour in chicken stock and bring to a boil. Reduce heat to a simmer and add saffron mixture. Season with remaining 1 teaspoon salt and freshly cracked pepper. Stir to combine. Return chicken thighs to the skillet, cover, and simmer over low heat for 20 minutes, flipping thighs halfway through cook time. Season to taste and serve with the sauce.

2 teaspoons turmeric
2 teaspoons paprika

450 ml chicken stock (made from 2 chicken Oxo cubes)

Steps:

  • Slash each piece of chicken 2 or 3 times with a sharp knife.
  • Mix the flour, turmeric and paprika in a small plastic bag.
  • Shake the chicken pieces in it to coat them thinly.
  • Heat the oil in a frying pan, add the chicken and cook until browned on all sides.
  • Transfer to a plate.
  • Add the onion and garlic to the frying pan and fry, stirring for 5 minutes until lightly browned.
  • Stir in the remaining spiced flour and stir into the onion and garlic mixture.
  • Add the cloves, ginger and some pepper.
  • Pour in and gradually incorporate the stock.
  • Bring to the boil stirring.
  • Pack the chicken joints into the slow cooker and pour in the hot stock mixture. Cover with the lid.
  • Cook on high for 2 hours, then on medium for another 4 hours (or on medium for longer).
