2 teaspoons vegetable oil
3 crookneck yellow squash, diced
½ sweet yellow onion, diced
2 tablespoons water, or as needed
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
½ cup shredded Cheddar cheese
½ (6 ounce) box dry bread stuffing mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
  • Heat oil in a skillet over medium heat; cook and stir squash and onion until tender, 8 to 10 minutes. Add water and simmer to soften squash, 2 to 4 minutes. Stir cream of chicken soup, sour cream, and Cheddar cheese into squash mixture; mix well.
  • Transfer squash mixture to the prepared baking dish; top with stuffing mix.
  • Bake in the preheated oven until cheese is bubbling and stuffing is browned, about 30 minutes.

This is my go-to recipe for a quick and easy side dish. It bakes perfectly each time, and is a hit at local pot-lucks or when I serve it to company.

2 lbs squash
salt and pepper
1/2 cup margarine
1 small onion, chopped (optional)
1 cup sharp cheddar cheese
1 cup crushed Ritz cracker (I wait and crush mine during the recipe.)
1 egg (whisked)
1/2 cup milk
1 teaspoon seasoning salt (optional)

Steps:

  • This is the way that I make mine, so that I do not have several bowls and dishes to wash at the end of the recipe! I end up using only one pot, one collander, one measuring cup, one spoon and one baking dish.
  • Preheat your oven to 350 degrees.
  • Cover squash and chopped onion with water in a pot and boil over medium heat until the squash is tender.
  • Drain squash and onion in the collander, and return to the pot. (I use the same pot, removed from the heat!)
  • Place the butter into the squash and onion mixture and allow it to melt from the heat of the hot squash and onion.
  • To the pot, add the salt, pepper, cheese, seasoning salt and crush the cracker crumbs by hand into a measuring cup and then pour them into the pot. Measure the milk in the same measuring cup that held the cracker crumbs. Add the egg to the measuring cup, and using a spoon, stir gently. Add this to the pot.
  • Mix everything in the pot until incorporated, but not so much that you completely mush up the squash. The end result will be a little runny, but it will firm during cooking.
  • Place everything in to an ungreased casserole dish using the same spoon that you used to mix your egg mixture.
  • Bake at 350 degrees for 30 - 40 minutes. Let stand at least five minutes before serving.
  • Enjoy!

Yellow squash is easily overlooked (cauliflower gets all the attention), but with the addition of cheese and a buttery cracker topping, you can transform it into a summer casserole perfect for a barbecue or potluck.

8 tablespoons (1 stick) unsalted butter
4 medium yellow squash, cut into 1/2-inch-thick rounds (about 2 1/2 pounds)
Kosher salt and freshly ground black pepper
1 green bell pepper, diced
Half medium onion, diced
2 cloves garlic, minced
1/2 cup sour cream
4 large eggs
8 ounces shredded Cheddar (about 2 cups)
1/2 teaspoon thyme leaves (from 10 sprigs)
4 sprigs fresh chives, chopped
1 sleeve buttery crackers, such as Ritz (about 30 crackers), crushed
1/2 teaspoon hot sauce

Steps:

  • Preheat the oven to 400 degrees F. Put a large colander inside a large bowl.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Add a third of the squash to the skillet, arrange in a single layer and sprinkle with 1/2 teaspoon salt and a few grinds of pepper. Cook, tossing occasionally, until the squash begins to soften and are golden brown spots, about 5 minutes. Transfer to the colander. Repeat 2 more times using 2 tablespoons of butter for each batch and sprinkling with 1/2 teaspoon salt and few grinds of pepper. Transfer each batch to the colander.
  • Add 1 tablespoon butter to the skillet along with the pepper and onion and cook, stirring occasionally scraping up any brown bits, until the vegetables are soft, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Let cool for 5 minutes then fold into the squash. Transfer the mixture to a 2-quart casserole dish.
  • Whisk together the sour cream, eggs, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Fold in the Cheddar, thyme and chives. Pour over the squash making sure that some of the mixture sinks down to the bottom.
  • Microwave the remaining tablespoon of butter in a medium bowl until melted. Fold in the crackers and hot sauce. Sprinkle evenly over the squash. Bake until the eggs are cooked through and the crackers are golden brown, 30 to 35 minutes. Let sit for 10 minutes before serving.

2 pounds yellow squash, cut into 1/2 to 1-inch cubes
Kosher salt and freshly cracked black pepper
1 cup good quality mayonnaise
1 1/2 cups grated Gruyere cheese
1 1/4 cups crushed butter crackers, divided

Steps:

  • Preheat the oven to 350 degrees F.
  • In a heated skillet, cook the onions, adding a little water to prevent them from burning. Cook until lightly brown, adding more water, if needed. Add the squash, season with salt and pepper, to taste, and cook until the squash is tender, about 8 to 10 minutes. Remove the skillet from the heat and stir in the mayonnaise, 1 cup of the cheese and 1 cup of the crumbled crackers. Pour the mixture into a 1 1/2-quart baking dish. Sprinkle with remaining cheese and top with remaining 1/4 cup of butter crackers. Bake until the casserole is bubbly around edges, about 25 minutes. Remove the casserole from the oven and serve hot.

1 medium green bell pepper, diced
1 bunch green onion, chopped
2 tablespoons butter
1 cup milk
1/4 cup brown sugar

1 cup breadcrumbs

Steps:

  • Wash and dice squash.
  • Put in saucepan.
  • Add 2 cups water.

4 1/2 cups zucchini (diced)
4 1/2 cups yellow squash (diced)
1 1/2 cups yellow onions (chopped)
1 (8 ounce) box Jiffy corn muffin mix (prepare as directed on box)
3/4 cup butter
8 ounces process American cheese (diced, use a store brand not Velveeta)
3 chicken bouillon cubes
1 teaspoon garlic (minced)
1 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon thyme
1 tablespoon parsley (chopped)

Steps:

  • Prepare Jiffy Mix as directed, set aside to cool.
  • Place zucchini and yellow squash in a large sauce pan and add just enough of water to cover.
  • Cook on medium low heat just until tender, remove from heat.
  • Drain squash, reserve one cup of water for casserole.
  • On medium low temperature place all of the butter in large sauce pan and sauté the onions until the onions turn clear, add salt, pepper, thyme, and parsley.
  • Add chicken bouillon cubes and garlic to onions, stir.
  • Add drained squash and diced cheese, stir.
  • Crumble corn bread in squash and pour the reserved cup of water and mix well.
  • Place squash mixture in a 13"x11" baking pan that has been sprayed with a none stick spray.
  • Cover casserole and place in a preheated oven at 350 degrees.
  • Bake for 50- 60 minutes.
  • Remove cover the last 20 minutes of baking time.

My mother always made a heavenly squash casserole when I was growing up. This is my trimmed-down version that's super-easy to make and never dissapoints on taste. In the summer my husband and I eat this at least once a week and it's nearly guilt-free! I use 2% sharp cheddar and turkey bacon, but feel free to go full fat with some of the ingredients.

1 1/2 lbs summer squash, sliced
3 slices turkey bacon, cut into 1 inch bits
1 large egg, beaten
1 cup low-fat sharp cheddar cheese
salt & pepper

Steps:

  • Put squash & bacon into glass, microwave-safe dish. Add salt & pepper & cover dish tightly with cling wrap.
  • Microwave squash for 13 - 15 minutes. Remove clear wrap carefully. There will be lots of steam.
  • Mash squash slighly with potato masher or large fork.
  • Drain squash well (do NOT skip this step or casserole will be watery) and add back to glass bowl.
  • Taste squash and season further if needed.
  • Add beaten egg to squash and stir. Microwave until egg is set 3 - 5 minute.
  • Transfer mixture to baking dish, cover with cheese & broil until cheese is melted.
