Peppermint Hot Chocolate image

This festive holiday drink is served with a peppermint stick.

1/3 cup unsweetened cocoa powder
1 quart milk
1/2 cup semisweet chocolate chips (3 ounces)
7 peppermint sticks; 3 crushed (1/4 cup), 4 left whole
pinch of salt

Steps:

  • Place cocoa in a medium saucepan. Gradually whisk in milk until cocoa has dissolved. Add chocolate chips and crushed peppermint; simmer over medium heat, stirring occasionally, until chocolate and peppermint have melted, 8 to 10 minutes.
  • Bring to a boil and immediately remove from heat. Add salt. Ladle into mugs; serve each with a peppermint stick.

4 cups half-and-half cream
7 ounces white baking chocolate, chopped
2 ounces milk chocolate, chopped
1/4 to 1/2 teaspoon red food coloring
1/4 to 1/2 teaspoon peppermint extract
Dash salt
Optional: Sweetened whipped cream, candy canes and marshmallows

Steps:

  • In a large saucepan, heat cream over medium heat until bubbles form around sides of pan (do not boil). Remove from the heat; whisk in the chocolates, food coloring, extract and salt until smooth. Return to the heat; cook and stir until heated through. Pour into mugs; top with whipped cream, candy canes and marshmallows.

Steps:

  • In a saucepan, combine the cream, milk, sugar, and salt and heat over medium-low heat. When the cream mixture just begins to steam, add the chopped chocolate, and stir, until melted. Stir in the peppermint oil. Divide the hot chocolate among mugs and top with whipped cream and chocolate shavings.

A couple of years ago, I saw a recipe for a peppermint red velvet cake that called for cake mixes. I prefer homemade cakes, so I developed this one from scratch. It is a beautiful, elegant dessert. 1-1/2 cups sugar
2 large eggs, room temperature
1/2 cup sour cream
1 bottle (1 ounce) red food coloring, optional
1 teaspoon white vinegar
2-1/2 cups cake flour
4 teaspoons baking cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
FROSTING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup butter, softened
1-1/2 teaspoons peppermint extract
2 cups confectioners' sugar
1 cup crushed peppermint candies
31 peppermint candies

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in sour cream, food coloring if desired, and vinegar. Combine the flour, baking cocoa, baking powder, baking soda and salt; add to the creamed mixture alternately with the buttermilk, beating well after each addition., Transfer to two greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean., Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, beat cream cheese and butter until combined. Beat in extract. Gradually add confectioners' sugar; beat until smooth. Spread frosting between layers and over top and sides of cake. Press crushed candies on top and sides of cake. Arrange whole candies around bottom of cake.

In another bowl, whisk flour, cocoa, baking powder and salt; gradually beat into creamed mixture., Shape dough into 1-in. balls. Place 1 in. apart on ungreased baking sheets. Press a deep indentation in center of each with the end of a wooden spoon handle., Bake 9-11 minutes or until set. Remove from pans to wire racks to cool completely., In a microwave, melt baking chips with oil; stir until smooth. Spoon a scant teaspoon filling into each cookie. Drizzle tops with remaining mixture. Sprinkle with peppermint candies. Let stand until set.
