This Coleslaw is a family favorite of mine for anytime of the year. I have a very picky 9 year old son who will not eat any type of salad but he LOVES this recipe....

1 can orange juice concentrate (thawed)
1 1/2 cups golden raisins
1/2 cup mayonnaise (approx)

Steps:

  • Mix all ingredients in a large bowl.
  • Let chill for 2 to 3 hours.
  • Enjoy!

1/4 head red cabbage, shredded
2 medium carrots, julienned
1 1/2 cups pineapple juice
1 serrano chili, halved and seeded
2 tablespoons lime juice
1/4 teaspoon orange zest
1 tablespoon unseasoned rice vinegar
1 tablespoon light vegetable oil

Steps:

  • Put the chili in a small saucepan with the pineapple juice. Bring to a boil. Reduce to 1/4 cup. Remove and discard the chili.
  • Mix remaining dressing ingredients and set aside until cool.
  • Toss cabbage and carrots in the dressing.

1/2 cup extra-virgin olive oil
3 tablespoons orange juice
1 tablespoon honey
Pinch garlic powder
Pinch kosher salt
Pinch freshly ground black pepper
One 14-ounce bag multicolor coleslaw mix with carrots
1 cup shredded kale
1/2 cup sliced almonds
1/2 cup crispy onions (or you can substitute raw onions)
3 clementines, peeled and separated

Steps:

  • For the vinaigrette: Combine the apple cider vinegar and mustard in a small bowl, then slowly whisk in the olive oil (this step is called emulsifying). Make sure it's fully incorporated. Whisk in the orange juice, honey, garlic powder, salt and pepper, then set aside or refrigerate.
  • For the salad: Combine the coleslaw mix, kale, almonds, onions and clementines in a large salad bowl. Toss with the vinaigrette and serve.
