This dressing combines corn bread, turkey broth, three kinds of pepper and a healthy scattering of fiery sausage for a Thanksgiving dish that is crunchy on top, moist within and alive with flavor. The copious use of that turkey broth, or a good chicken broth, is crucial here; also necessary is an understanding that the cooking should last long enough to crisp the exterior without burning it, while not going on so long as to dry out the dish. When in doubt, add a splash more broth. And know that this dish works well for any gluten-avoiders at your table; the related cornbread recipe does not use wheat flour.

2 tablespoons extra-virgin olive oil
1 1/2 pounds andouille sausage, or substitute fresh chorizo or hot Italian sausage
1 medium yellow onion, peeled and diced
2 ribs celery, cleaned and diced
2 red or orange bell peppers, seeded and diced
2 poblano or Anaheim peppers, seeded and diced
2 serrano or jalapeño peppers, seeded and diced
2 tablespoons fresh cilantro, cleaned and roughly chopped
1 to 2 cups turkey or chicken stock (recipe here; if using store-bought broth, use low-sodium variety)
2 whole eggs, beaten
1 pan corn bread (recipe here), cut into chunks and allowed to dry overnight (alternatively, toast fresh corn bread in warming oven for approximately 10 minutes)
Kosher salt and freshly ground black pepper to taste

Steps:

  • Preheat oven to 375. Heat olive oil in large flat-bottomed sauté pan over medium-high heat. Add sausage and sauté until browned, approximately 10 minutes. Remove to a large bowl and set aside.
  • Add onions and reduce heat to medium, then sauté until they begin to turn clear and soften, approximately 5 minutes. Add celery and peppers and continue cooking until peppers begin to soften, approximately 10 minutes.
  • Pour vegetable mixture into bowl with sausage, add cilantro and toss to mix.
  • Return pan to heat and deglaze with a splash of chicken stock, then scrape contents into bowl with sausage and vegetable mixture.
  • Pour mixture into a large roasting pan and add beaten eggs and cubed corn bread, mixing by hand. Add turkey or chicken stock to moisten, cover with aluminum foil and place in oven for 30 to 35 minutes, or until it is soft and the flavors well incorporated. For a crunchy top, remove foil for final 10 minutes of cooking. Dressing can be made ahead of time and reheated later. Add additional stock if needed, and salt and pepper to taste.

Cornbread dressing is a staple of the Southern Thanksgiving celebration. I make mine with the holy trinity (green peppers, onions and celery) and lots of fresh sage and thyme. While most dressing recipes call for the bread to be toasted, here it just needs to be at room temperature. However, if you would like to start with day-old bread, that works too!

7 cups crumbled Cornbread (recipe follows), at room temperature
6 tablespoons unsalted butter, cut into pieces
1 small white onion, finely diced
1 medium green bell pepper, finely diced
1 medium stalk celery, finely diced
1 clove garlic, chopped
Kosher salt and freshly ground black pepper
1/2 cup cooked turkey giblets (see Cook's Note), finely chopped
1 tablespoon ground sage
1 tablespoon fresh thyme leaves, chopped
3 large eggs, beaten
1 1/2 cups homemade turkey stock (see Cook's Note)
4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups homemade turkey stock (see Cook's Note)
Kosher salt and freshly ground black pepper
1/2 cup cooked giblets from whole turkey or chicken (see Cook's Note), finely chopped
1 hard-boiled egg, finely chopped
1/4 cup heavy cream
Nonstick cooking spray
2 cups cornmeal
1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
Kosher salt
1 3/4 cups buttermilk
1 stick (8 tablespoons) unsalted butter, melted, plus 2 tablespoons, chopped
2 large eggs
2 tablespoons dark brown sugar

Steps:

  • For the dressing: Preheat the oven to 425 degrees F.
  • Put the crumbled cornbread in a large bowl and set aside.
  • Melt 4 tablespoons of the butter in a 10-inch cast-iron skillet over medium-high heat. Add the onion, green pepper, celery, garlic, 1 teaspoon salt and a generous amount of black pepper and cook, stirring occasionally, until the vegetables are tender, 5 to 7 minutes. Stir in the giblets, sage and thyme until just heated through, 1 to 2 minutes. Transfer to the large bowl, add the eggs and fold into the cornbread until well combined. Wipe the skillet clean and set aside.
  • Add 1/4 cup of the stock at a time to the bowl and fold after each addition until the mixture looks like batter (1 1/2 cups stock should be plenty). Transfer the dressing to the skillet and dot the top with the remaining 2 tablespoons butter. Bake until the eggs are cooked through and the top is golden brown, about 20 minutes.
  • Meanwhile, make the gravy: Melt the butter in a medium saucepan over medium-high heat. Add the flour and cook, stirring constantly, until golden brown, 5 to 7 minutes. Slowly pour in the stock, whisking constantly, until well combined. Season with 1/2 teaspoon salt and a generous amount of black pepper. Bring to a simmer and cook, stirring occasionally, until the flour taste is gone and the gravy has thickened, about 15 minutes. Fold the giblets, egg and heavy cream into the gravy. Season with 1/2 teaspoon salt and a few grinds of pepper. Serve alongside the dressing.
  • Preheat the oven to 425 degrees F. Spray a 10-inch cast-iron skillet with cooking spray.
  • Whisk together the cornmeal, flour, baking powder, baking soda and 1 teaspoon salt in a medium bowl until combined.
  • Whisk the buttermilk, melted butter, eggs and brown sugar in a large bowl until smooth. Fold in the cornmeal mixture until just combined (it should be a bit lumpy).
  • Transfer the batter to the prepared skillet and dot the top with the remaining 2 tablespoons butter. Bake until the top is golden brown and a toothpick inserted into the center comes out clean, about 22 to 25 minutes. Let cool in the skillet for 10 minutes, then invert the bread onto a rack to cool completely, about 30 minutes.

16 ounces cooked cornbread (crumbled)
1 tablespoon olive oil
1 pound pork sausage
1 cup yellow onion (chopped)
3 stalks celery (chopped)
2 cloves garlic (minced)

1/2 teaspoon poultry seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups chicken stock

Steps:

  • Preheat the oven to 400 degrees F. Spray the inside of a 9-inch x 13-inch casserole dish with cooking spray and set aside.
  • On a large baking sheet, add the cooked cornbread and toast in the heated oven for 10 minutes, making sure to toss it halfway through. Remove, set aside, and lower the heat on the oven to 350. degrees F.
  • Heat olive oil in a large skillet over medium heat for 2 minutes until the pan is well coated. Add the pork, onion, celery, and garlic cloves. Cook until the pork is browned and the onions are transparent and tender, about 5-8 minutes.
  • Add the sage, thyme, poultry seasoning, salt, and pepper. Stir so all the veggies are coated with the spices. Cook for 2 minutes more, and then remove from heat.
  • In a large bowl, add sausage mixture, toasted cornbread, chicken broth, and beaten eggs. Mix to combine. Transfer mixture to the prepared baking dish.
  • Cover dish with foil and bake for 30 minutes. Carefully uncover the dish and bake for 10 more minutes, or until the top is brown and toasted.
  • Remove from oven and allow the dressing to cool for 10 minutes. Garnish with fresh chopped parsley.

  • Heat the oil in a large skillet over medium-high heat. Add the vegetable and gizzards mixture and the country sausage and cook, breaking up the sausage into small pieces with a wooden spoon and seasoning with salt halfway through, until the sausage is browned, 5 to 7 minutes.
  • Melt the butter in a small saucepan over medium heat. Transfer the sausage mixture to a large bowl and add the cornbread, melted butter, garlic powder and dried Italian seasoning. Season with salt and pepper to taste and gently combine with a rubber spatula. Whisk together the milk and eggs in a small bowl and pour over the cornbread mixture. Add the chicken stock and stir to combine. Stir in the parsley and sage.

1 Tablespoon salted butter
2 cups onion, (finely diced (around 2 medium onions))
3-4 large celery ribs, (finely diced )

2 8 inch pans prepared, day-old corn bread, ((I made 2 pans of Jiffy corn bread the day before and left it out all night))
1 14.5 ounce can chicken broth ((omit this if you're using this as stuffing- it makes enough to stuff a 12-14 pound bird))

Steps:

  • Preheat the oven to 350 degrees. Grease a 9" x 13" pan with cooking spray and set aside.
  • In a large saute pan, saute the sausage over medium-high heat using a wooden spoon to break it up into bite-size pieces, stirring often until brown, about 10 minutes.
  • Remove the sausage crumbles from the pan, into a side bowl and melt butter in the empty pan.
  • Add onions and celery and season with sage, thyme, salt and pepper. Saute stirring often until soft, about 5 minutes.
  • Stir sausage back into the pan and crumble both corn breads into the pan.
  • Add broth and stir well to combine.

2 large eggs, beaten

1 teaspoon salt
1/4 teaspoon cayenne
1 cup buttermilk

Steps:

  • Preheat the oven to 350 degrees F. Generously butter a 13 by 9-inch baking dish and set aside.
  • In a large skillet, cook the sausage until brown and the fat is rendered, about 5 minutes. Add onions, celery, bell peppers, and garlic, and cook for 2 minutes. Remove from the heat and transfer to a large bowl to cool.
  • With your fingers, crumble the corn bread into the bowl, add bread, the green onions, parsley, and thyme, and mix well with your hands. Add the salt, pepper, cayenne, and eggs, and mix well with your hands. Add enough broth, 1/2 cup at a time, to moisten the dressing, being careful not to make it mushy.
  • Transfer to the prepared dish and cover with aluminum foil. Bake until heated through, about 25 minutes. Uncover and bake until golden brown, about 15 minutes.
  • Preheat the oven to 400 degrees F.
  • Pour the vegetable oil into a 9-inch baking pan or heavy cast iron skillet. Place the pan into the oven as it preheats, allowing it to heat for at least 10 minutes.
  • Combine the cornmeal, flour, baking powder, salt, and cayenne in a large mixing bowl and stir with a wooden spoon. Add the buttermilk and egg to the mixture, and stir well to blend. Pour the cornmeal batter into the preheated pan and bake in the oven for 25 minutes or until lightly golden brown. Remove from the oven and let cool before serving or using in the dressing.

Many, many years ago I got this recipe as part of a recipe chain letter (remember when we did those via the mail and not on the internet?) After one try, it became my go to recipe for dressing. Many thanks to Jill Bretcher for sharing her grandmother's recipe with a total stranger. It is now my family tradition! Preparation time does not include making the cornbread.

4 cups crumbled stale bread, toasted lightly
4 cups crumbled cornbread (I use 1 recipe's worth of Buttermilk Cornbread)
2 cups chicken broth, heated
1/2 cup butter
2 cups chopped onions
2 cups chopped celery
3 eggs
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 teaspoons poultry seasoning
16 ounces sausage

Steps:

  • Preheat oven to 350. Crumble and cook sausage. Drain and set aside.
  • Combine bread and cornbread into a large bowl. Pour hot broth over the bread and let stand until softened.
  • Saute onion and celery in butter until tender; add to bread. Add eggs and ix in with your hands.
  • Add salt, pepper, and poultry seasoning and mix.
  • Add cooked sausage and mix again. The mixture should be "sloppy" wet; if it isn't wet enough, add more chicken broth.
  • The original recipe says it is enough to stuff a 10-15 lb turkey, but I prefer to cook in a 13x9 pan for 55 minutes.
