ALMOST-FAMOUS BAKED POTATO SOUP



Almost-Famous Baked Potato Soup image

For a place with a carb-forward name, Panera Bread sells a lot of soup: nearly 250 million cups per year. Broccoli Cheddar has been the chain's perennial best seller, and the creamy Baked Potato Soup has never been far behind. The company has taken the potato soup off most menus permanently, and although we're not sure why it disappeared, we have a fix: Our test kitchen chefs created this version you can make at home.

1 tablespoon unsalted butter
4 slices thick-cut bacon, cut into 1/4-inch pieces
1 onion, finely chopped
2 scallions, sliced (white and green parts separated)
Kosher salt
3 tablespoons all-purpose flour
1/4 teaspoon celery seeds
1/4 teaspoon ground white pepper
1 1/4 pounds russet potatoes, peeled and cut into 1/2- to 3/4-inch pieces
1 cup half-and-half
2 ounces cream cheese
1 tablespoon grated parmesan cheese
1/4 to 1/2 teaspoon hot sauce
Shredded cheddar cheese and chopped fresh chives, for topping

Steps:

  • Melt the butter in a large pot over medium-high heat. Add the bacon and cook, stirring occasionally, until crisp, 4 to 6 minutes. Remove the bacon with a slotted spoon and transfer to a paper towel-lined plate.
  • Reduce the heat to medium and add the onion, scallion whites and a big pinch of salt to the pot. Cook, stirring occasionally, until the onion is soft but not browned, about 8 minutes. Add the flour, celery seeds and white pepper; stir until combined.
  • Add the potatoes, 3 1/2 cups water and 1 teaspoon salt to the pot. Bring to a boil over high heat, then reduce the heat to medium and simmer until the potatoes are tender but not falling apart, about 10 minutes.
  • Remove the pot from the heat and transfer 1/2 cup of the potatoes to a blender. Add the half-and-half, cream cheese and parmesan and blend until very smooth. Gently stir the mixture into the pot along with the scallion greens, hot sauce and half of the bacon. Bring to a gentle simmer over medium heat; season with salt.
  • Divide the soup among bowls. Top with cheddar cheese, the remaining bacon and chives.

4 large baking potatoes
6 bacon slices, plus crumbled cooked bacon, for serving
2/3 cup (11 tablespoons) butter
2/3 cup all-purpose flour
8 cups milk
5 ounces Cheddar, shredded, plus more for serving
2 teaspoons salt
1/2 teaspoon freshly ground pepper
2 green onions (scallions), finely chopped, plus more for serving
8 ounces sour cream, plus more for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Wash the potatoes and prick them several times with a fork. Wrap them individually in foil and bake until they are soft when squeezed, about 1 hour (see Cook's Note). Let the potatoes cool slightly.
  • While the potatoes bake, cook the bacon in a small skillet, in a microwave or on an indoor grill until crisp. Drain the bacon on paper towels and, when cool enough to handle, crumble into small pieces. Set aside.
  • In a large heavy saucepan, melt the butter over low heat. Add the flour, stirring constantly for 1 minute until smooth. Gradually whisk in the milk and cook over medium heat, stirring constantly, until the mixture is thick and bubbling, 5 to 10 minutes. Cut the potatoes in half lengthwise and scoop the flesh into the thickened milk mixture. Add the Cheddar, salt, pepper, green onions and reserved bacon. Cook over low heat just until heated through, then stir in the sour cream. Garnish with shredded Cheddar, crumbled bacon and chopped green onions and serve with more sour cream on the side.

PENZEY'S BAKED POTATO SOUP



Penzey's Baked Potato Soup image

A great soup for any leftover boiled potatoes. Found in Penzeys Christmas 2006 catalog. Hearty soup!

Number Of Ingredients 12

5 lbs russet baking potatoes
1/2 lb bacon
3 cups 2% low-fat milk
1/2 cup butter
3 cups onions, minced
7 1/2 cups chicken stock (or 1 TB of chicken soup base dissolved in 7 1/2 cups of)
water
3/4 cup all-purpose flour
1/2 teaspoon thyme
1 tablespoon parsley
1/4 teaspoon cayenne pepper
1 teaspoon salt (optional)

Steps:

  • Preheat oven to 350°F.
  • Wash and dry potatoes, poke with a fork, and bake for 1 hour and 15 minutes or until soft.
  • Cool to room temperature by refrigerating for 1 hour.
  • Remove the skins and coarsely chop the potatoes; set aside.
  • Finely chop bacon and fry until crispy.
  • Drain the bacon on paper towels and set aside.
  • Let the milk come to room temperature.
  • Place 1 1/2 cups of chopped potatoes into blender.
  • Blend or mash with a little water to make potatoes thin, yet smooth and creamy.
  • In a large, heavy pot, melt the butter over medium-low heat.
  • Add the onions and cook until they are soft and translucent, about 10 minutes.
  • In a separate pan, heat the chicken broth to boiling.
  • Using a wooden spoon, gradually mix the flour into the onion mixture, slowly add the rest of the chicken broth to the onion mixture.
  • Next, add the potato puree. Mix well.
  • Lower the heat to simmer and cook for 30 minutes. Stir often.
  • If soup is too thick, thin with more milk.
  • Add 3/4 of the crisp bacon and mix well.
  • Serve garnished with the remaining bacon, cheddar cheese, and chives.

12 slices bacon
⅔ cup margarine
⅔ cup all-purpose flour
7 cups milk
4 large baked potatoes, peeled and cubed
4 green onions, chopped
1 ¼ cups shredded Cheddar cheese
1 cup sour cream
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.
  • In a stock pot or Dutch oven, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
  • Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

1/2 # bacon
3 cups 2% milk, room temperture
1 stick butter or margarine
3 cups minced onions
7 1/2 cups chicken stock, hot
1/2-3/4 cup all purpose flour
1/2 teaspoon thyme
1 tablespoon parsley
1/4 teaspoon cayenne pepper
salt and pepper to taste

Steps:

  • Bake potatoes, cool to room temperture, and roughly chop. Finely chop bacon, fry until crisp, and drain fat. Put 1 1/2 cups of the potatoes in blender with a little water and blend until thin, smooth and creamy. Melt butter; add onions and cook until soft and translucent, ~10 minutes. Add flour to onions and stir for 3 minutes. Do NOT brown. While stirring, add the hot chicken stock and potato puree to the onion mixtuure. Simmer 30 minutes, stirring often. Add milk, spices and potatoes. Simmer 30 minutes, stirring occasionally Add bacon (saving some for garnish id desired). Garnish with reserved bacon, cheese and chives. Enjoy

4 large potatoes, peeled
2 carrots, peeled
1 onion, peeled and minced
2 tablespoons butter, cut into small pats
1 teaspoon dill (may sub 2 t fresh dill)
1/2 teaspoon black pepper
1/2 teaspoon salt
2 tablespoons cream (may sub whole milk)

Steps:

  • Preheat oven to 350° (usually this dish is getting baked alongside a roast or chicken, and it will be fine at 325° or 375°, too).
  • Shred the carrots and potatoes in a food processor; squeeze the potatoes and discard the extra liquid.
  • Toss the potatoes, carrots, onion, dill, salt and pepper together and place it in the bottom of a greased/buttered, small baking dish.
  • Dot the top of the veggies with the butter pats, pushing some butter bits down into the potatoes.
  • Drizzle the cream/milk over the top, and bake one hour.
  • NOTE: Cover with foil if the dish starts to get overly brown.
