GRILLED MISO CHICKEN

Grilled Miso Chicken image

My mom makes miso every year and this is one of the first things that we make with her miso. The recipe (with a variety of differences) is readily available, but I tend to go with the most simple versions of things, so this is what we use. The grilling/broiling instructions are a bit vague, but grills are different enough that the operator should use whatever method they think is most reasonable, just keep an eye on it to make sure it doesn't burn. Burnt miso is not a good thing. Prep time includes marinating time.

Provided by Akikobay

Categories     Poultry

Time 1h25m

Yield 4 serving(s)

Number Of Ingredients 9

2 tablespoons soy sauce
2 tablespoons sake
2 tablespoons mirin
2 tablespoons miso, preferably white miso
2 green onions, thinly sliced
1 teaspoon fresh grated ginger
1 clove garlic, crushed
8 boneless chicken thighs (take the skin off if you prefer)
1 teaspoon sesame seeds, lightly roasted

Steps:

  • Mix together the soy sauce, sake, mirin, miso, onions, ginger and garlic in a shallow dish.
  • Place chicken pieces into marinade, turn to coat well and marinate for 1 hour, turning several times.
  • Preheat grill so that it is very hot.
  • This can also be broiled in the oven, turning only once halfway through the cooking time.
  • Remove the chicken from the marinade and pat dry on kitchen paper.
  • Grill the chicken until cooked through and juices run clear.
  • Sprinkle with sesame seeds, serve with steamed rice.

MISO CHICKEN

Miso Chicken image

Making a compound of unsalted butter and the salty, fungal deliciousness of Japanese miso paste is a surefire way of adding immense flavor to a simple weeknight meal. Here the mixture is spread over chicken thighs, which are then roasted to golden perfection. But you could easily use it on salmon or flounder, on corn or potatoes. The recipe calls for white miso, which is more mild than the aged version known as red miso. But you could certainly use red for a more intense result.

Provided by Sam Sifton

Categories     main course

Time 45m

Yield 4 servings

Number Of Ingredients 6

4 tablespoons unsalted butter, softened
1/2 cup white miso
2 tablespoons honey
1 tablespoon rice vinegar (do not use seasoned rice vinegar)
Black pepper, to taste
8 skin-on, bone-in chicken thighs, approximately 2 1/2 to 3 pounds

Steps:

  • Heat oven to 425 degrees. Combine butter, miso, honey, rice vinegar and black pepper in a large bowl and mix with a spatula or spoon until it is well combined.
  • Add chicken to the bowl and massage the miso-butter mixture all over it. Place the chicken in a single layer in a roasting pan and slide it into the oven. Roast for 30 to 40 minutes, turning the chicken pieces over once or twice, until the skin is golden brown and crisp, and the internal temperature of the meat is 160 to 165 degrees.

MISO HONEY CHICKEN

Miso Honey Chicken image

It's not hard to make a great marinade with just a few ingredients, as long as one of those ingredients is the magical miso. This super savory paste, made from fermented rice, barley, and soybeans, isn't that hard to find. While the marinade is simple, the flavors are anything but.

Provided by Chef John

Categories     Meat and Poultry Recipes     Chicken     Whole Chicken Recipes

Time 2h55m

Yield 8

Number Of Ingredients 9

3 tablespoons white miso
2 tablespoons honey
¼ cup rice vinegar

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 17

Olive oil, for the grill
3 tablespoons white miso
3 tablespoons mirin
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons chopped fresh ginger
1 tablespoon toasted sesame oil
1 1/4 pounds chicken cutlets (4 to 6)
Kosher salt and freshly ground pepper
2 Persian cucumbers, halved and thinly sliced
1 carrot, halved and thinly sliced
1 small red onion, halved and thinly sliced
1 Fresno chile pepper, thinly sliced
1 1-inch piece ginger, sliced
1/2 cup rice vinegar

Refrigerate, stirring once or twice, until chilled, 30 minutes. Drain.
  • Season the chicken with salt and pepper and grill until browned and well marked, 2 to 3 minutes. Flip and grill until the chicken is cooked through, about 2 more minutes.
  • Top the chicken with the quick pickles.

MISO CHICKEN NOODLE SOUP

Miso Chicken Noodle Soup image

Get the recipe for Miso Chicken Noodle Soup.

Provided by Lindsay Maitland Hunt

Number Of Ingredients 9

8 cups chicken broth or stock
3 tablespoons white miso paste
0.25 cup soy sauce
1 bunch scallions, very thinly sliced, some green parts saved for serving
1 14-oz package extra-firm tofu, cut into ½-inch cubes
8 ounces udon or soba noodles
2 cups cooked shredded chicken
4 to 6 large egg yolks
1 cup kimchi

Steps:

  • Bring the chicken stock to a boil in a covered large pot over high heat.
  • In a small bowl, whisk the miso and 1 tablespoon of the soy sauce. (You do this so that the miso can easily integrate with the stock, otherwise you'll get big clumps.) Add this to the pot with the remaining 3 tablespoons soy sauce, the scallions, and tofu.
  • Return to a boil and add the noodles. Cook until they're just barely tender, 2 to 3 minutes, then stir in the chicken and cook until the noodles are al dente and the chicken is hot, 2 to 3 minutes more. Ladle the soup into bowls while it's super hot and then drop an egg yolk into each bowl. Stir to mix the yolk into the soup, and then top with the kimchi and more scallion greens. • Preheat the oven to 400°. In a small bowl, combine 1 1/2 tablespoons of the miso with the garlic, ginger and honey.
  • Pat the chicken breasts dry with paper towels. Using your fingers, make a small opening in each breast between the meat and skin (be careful not to break the skin). Stuff a quarter of the miso paste through each opening and press lightly on the skin to work the paste all over the breasts. Lightly season both sides of the chicken with salt and pepper.
  • Heat the vegetable oil in a large skillet. Add the chicken breasts to the pan, skin side down, and cook over moderately high heat until brown and crusty, about 4 minutes. Turn and cook on the other side until brown and crusty, about 3 minutes. Transfer the chicken to a baking sheet and bake for about 15 minutes, or until cooked through.
  • Pour off the fat from the skillet. Add the scallions to the skillet and cook over high heat until fragrant, about 1 minute. Pour in the chicken stock and scrape the bottom of the pan with a wooden spoon to loosen the browned bits. Cook over high heat until the sauce has reduced to 1/2 cup, about 12 minutes. Whisk in the remaining 1 tablespoon miso. Strain the sauce through a fine-meshed sieve, pressing on the solids. Stir in the basil and season with salt and pepper.

WHAT IS MISO AND HOW IS IT USED? - THE SPRUCE EATS
Miso Uses. Miso is a paste and can be mixed into sauces, dressings, batters, and soups. It can be eaten cooked or raw. Since miso is a cultured food, it's best to add it to long-cooked dishes at the end of cooking. Be careful not to boil dishes like miso soup—too much heat will kill the active bacteria in the miso.
