PECAN BARS
Steps:
- Preheat oven to 350 degrees F.
- Line a 13 by 9-inch baking dish with foil allowing an overhang about 2 inches off the sides. Butter the foil.
- In a food processor, blend together flour, sugar, butter and salt until the mixture resembles coarse sand. Add 2 tablespoons cold water and mix until the dough just holds together. Press dough into bottom of buttered baking dish and bake in oven until golden in color, about 20 to 25 minutes.
- Meanwhile, make the filling. In a stand mixer fitted with paddle attachment, add the butter, brown sugar and a pinch of salt and mix on medium speed until light and fluffy, about 3 minutes. Add the corn syrup, flour and pecans and mix until just combined. Spread the filling over the baked crust and bake until golden brown, about 30 to 35 minutes. Remove the dish from the oven and allow it to cool completely in the pan.
- Remove from pan by pulling up the foil sides and putting it on a cutting board. Cut bars in desired size with a sharp knife and arrange them on a serving tray. Can be stored in an airtight container up to 2 days.
CLASSIC PECAN PIE BARS
Steps:
- Heat oven to 350°F.
- Combine 1 3/4 cups flour, butter and sugar in bowl. Beat at medium speed, scraping bowl often, until mixture resembles coarse crumbs. Stir in 1/3 cup pecans.
- Press crust mixture evenly onto bottom of ungreased 13x9-inch baking pan. Bake 18-22 minutes or until edges are very light golden brown.
- Combine brown sugar, 6 tablespoons flour, and salt in large bowl; whisk until mixed. Add corn syrup, eggs and vanilla; mix well. Stir in 1 1/2 cups chopped pecans. Spread evenly over hot, partially baked crust. Bake 30-35 minutes or until filling is set and knife inserted 1-inch from edge comes out clean.
- Cool completely. Refrigerate 30 minutes. Cut into bars.

- Preheat oven to 350 degrees. Bake the pecans on a rimmed pan for about 10 minutes or until lightly toasted and fragrant, stirring halfway through.
- Line a 13- x 9-inch cake pan with heavy-duty aluminum foil, allowing a couple of inches to extend over sides. Spray the foil lightly with cooking spray.

Steps:
- Shortbread base: mix above ingredients together until mixture is crumbly.
- Pat crumbs into a lightly-greased 13x9 inch pan.
- Bake at 350° for 15-20 minutes.
- While this is baking, prepare filling.
- Filling: melt butter over low heat in small saucepan.
- Once melted, stir in remaining ingredients except for pecans.
- Simmer over low heat for about a minute.
- Remove from heat and stir in pecans.
- Pour mixture over hot crust and spread evenly.
- Bake at 350° for 20 minutes until center is bubbly.
- Remove from oven and allow to cool completely.

- 1. Heat oven to 350 degrees F. Spray bottom of 13x9-inch baking pan with non-stick cooking spray.
- 2. In large bowl, combine flour, 1/2 cup brown sugar and butter. Spread on bottom of prepared pan. Bake for 20 minutes.
- 3. In medium bowl, beat together egg, sweetened condensed milk, vanilla and remaining brown sugar. Stir in pecans. Pour on top of baked cookie layer. Bake 25 minutes. Cool. Cut into bars. Store leftovers covered at room temperature.
- 4. Tips: I added 2 Tbsp of light corn syrup to the pecan mixture someone had mentioned doing this but I am not sure it made much of a difference I guess the next time I make it I will do without and see. I also forgot to melt the room temp butter but managed to work it in enough and pressed it into the pan and it seemed to cook just fine. Happy mistake but it did take some effort so maybe melting would be best. I used light condensed milk.
