If you have never had Southern Pecan Cheese Wafers you are missing out! This cheese crackers recipe is nothing like you have ever bought at the store. It is a really fun cocktail appetizer and goes great with drinks and a cheese plate!

Number Of Ingredients 8

1 cup butter (softened (2 sticks))
1 teaspoon Worcestershire sauce
2 cups flour (spooned and leveled)
1/2 teaspoon salt
1/2 to 3/4 teaspoon cayenne pepper
1/4 teaspoon smoked paprika (optional)
1 pound sharp cheddar cheese (freshly shredded*)
60-70 pecan halves

Steps:

  • In a large bowl or stand mixer, beat the butter and 1 teaspoon Worcestershire sauce until smooth and creamy.
  • Add 2 cups flour, 1/2 teaspoon salt, cayenne pepper, and smoked paprika, if you're using it. Beat well, scraping the sides.
  • Add the cheddar cheese and beat well, scraping the sides and bottom of the bowl.
  • Cover the dough and chill well, at least 2 or 3 hours or up to 3 days.
  • Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
  • Roll the dough into 1-inch balls and place on the baking sheet 1 inch apart. Press the top of each ball with a fork (if the fork sticks, coat with flour).
  • Place a pecan half on top of each wafer.
  • Bake at 350 degrees for 18-20 minutes, until the edges are quite brown.
  • Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely. Store covered on the counter. Best served within 2 days.
  • Re-heating: I made these a day in advance as Thanksgiving appetizers. They lose a bit of their crunch by day 2, so I spread them out on baking sheets and baked at 350 for about 5 minutes until they got crispy again. Worked great!

1/2 cup butter, softened
6 tablespoons brown sugar
6 tablespoons sugar
1 egg
1/2 teaspoon vanilla
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped pecans

Steps:

  • Cream butter and sugars until light.
  • Beat in egg and vanilla.
  • Sift dry ingredients and stir into batter.
  • Blend until creamy.
  • Stir in pecans.
  • Drop by teaspoon onto ungreased cookie sheet.
  • Bake at 350 F for 10-12 minutes.

1/2 package (17.3 oz.) Pepperidge Farm® Puff Pastry Sheets (1 sheet)
1/2 cup packed brown sugar
2 tablespoons butter OR margarine, melted
1/3 cup chopped pecans
Confectioners' sugar

Steps:

  • THAW pastry sheet at room temperature 40 min. Preheat oven to 400 degrees F. Mix brown sugar, butter and pecans.
  • UNFOLD pastry on lightly floured surface. Roll into 15"x 12" rectangle. Cut into 20 (3") squares. Press squares into bottoms of 3" muffin-pan cups. Place 1 heaping tsp. pecan mixture in center of each.
  • BAKE 12 minutes or until golden. Remove from pans. Let cool. Sprinkle with confectioners' sugar. Makes 20 pastries.

2/3 cup pecans, finely chopped

Steps:

  • Preheat oven to 350°F.
  • Beat together butter and Cheddar in a bowl with an electric mixer until smooth, then beat in remaining ingredients.
  • Roll rounded teaspoons of dough into balls and arrange 3 inches apart on buttered baking sheets. Flatten each ball into a 1 1/2-inch disk and bake in batches in middle of oven until golden, 15 to 18 minutes.

Crisco® Butter No-Stick Cooking Spray
1 (18.25 oz.) pkg. Pillsbury® Reduced Sugar Yellow Cake
1/3 stick Crisco® Butter Shortening Sticks or 1/3 cup Crisco® Butter Shortening
1/4 cup cold water
1 large egg
2/3 cup chopped pecans
2 tbsps. sugar
1/4 cup finely chopped pecans
1 large egg white, beaten

Steps:

  • HEAT oven to 375 degrees F. Spray cookie sheets with no-stick cooking spray.
  • COMBINE cake mix and shortening in a medium bowl with an electric mixer at medium speed until coarse meal forms. Add water, egg and 2/3 cup pecans, mixing on low until dough comes together.
  • SHAPE dough into forty-two 1-inch balls. Place 2 inches apart on prepared cookie sheets. Spray bottom of a cup with no-stick cooking spray. Flatten dough to 2-inches in diameter, spraying cup as needed.
  • COMBINE sugar and finely chopped nuts in a small bowl. Brush unbaked cookies with egg white. Sprinkle with sugar-pecan mixture.
  • BAKE 6 to 8 minutes or until edges are light golden brown. Cool 1 minute. Remove to cooling rack.

4 large eggs, lightly beaten
1 cup packed dark-brown sugar
1 cup light corn syrup
4 ounces (1 stick) unsalted butter, melted and cooled
2 tablespoons pure vanilla extract
1/2 teaspoon salt
Cream Cheese Pie Crust

Steps:

  • Preheat oven to 325 degrees. Set aside 16 pecan halves for garnish; coarsely chop remaining pecans. Stir together eggs, sugar, corn syrup, butter, vanilla, and salt in a medium bowl until well combined. Stir in chopped pecans, and pour mixture into prepared piecrust, spreading evenly. Garnish edges with remaining pecan halves.
  • Place dish on a rimmed baking sheet, and bake, rotating halfway through, until filling is just set and crust is golden brown, about 90 minutes. (Tent with foil if nuts are getting too dark.) Transfer to a wire rack, and let cool completely.

Steps:

  • Set oven to 375 degrees.

  • Spread into unbaked pie crust; sprinkle with chopped pecans.
  • In another bowl, beat 3 eggs, corn syrup, 1/4 cup sugar and 1 tsp vanilla until well blended.
  • Pour the mixture over the cream cheese and pecans (that is already in the crust).
  • Place the pie on the lower rack in oven (Place the pie on a cookie sheet to prevent any spills).
  • Bake for 40-45 minutes, or until center is firm.

1 cup unsalted butter, softened
2-1/2 cups shredded extra-sharp cheddar cheese
2 cups all-purpose flour
3/4 teaspoon salt
1/2 teaspoon cayenne pepper
2-1/2 cups Rice Krispies
Pecan halves, optional

Steps:

  • Beat butter and cheese until blended. In another bowl, whisk flour, salt and cayenne; gradually beat into cheese mixture. Stir in Rice Krispies. If necessary, turn onto a lightly floured surface and knead 4-6 times, forming a stiff dough., Divide dough in half; shape each into a 7-in.-long roll. Wrap and refrigerate 1 hour or overnight., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on parchment-lined baking sheets. If desired, top each slice with a pecan half. Bake until edges are golden brown, 14-16 minutes. Remove from pans to wire racks to cool. To Make Ahead: Dough can be made 2 days in advance.   • Combine cheese and butter in a large mixing bowl. Beat at medium speed until blended. Add hot sauce and mustard. Gradually add flours, mixing until blended. Stir in cereal and pecan pieces. Shape dough into 1-inch balls. Place on cookie sheet, then flatten with fork. Bake at 350 degrees for 12-14 minutes.

1 pound extra-sharp cheddar, grated
1 cup plus 1 tablespoon butter
1 1/3 cups pecans
Kosher salt
2 cups all-purpose flour
1 1/4 teaspoons cayenne pepper
1/2 teaspoon black pepper

Steps:

  • Preheat the oven to 350°F.
  • Coarsely grate the cheddar cheese, and transfer it to the bowl of an electric mixer fitted with the paddle attachment. Cut the two sticks of butter into sixteen pieces, and scatter the pieces over the cheese. Let the cheese and butter soften. Place the pecans in one layer on a baking sheet, and toast them in the oven until they are a shade darker and fragrant, 7 to 8 minutes. While the nuts are still warm, transfer them to a medium bowl and toss with the remaining tablespoon of butter (the hot nuts will melt the butter) and salt to taste. Cool the nuts completely, then finely chop.
  • Add the chopped pecans, flour, a pinch of salt, cayenne, and black pepper to the bowl of the mixer, and beat the ingredients at medium speed until the mixture pulls together into a dough, about 2 minutes.
  • Divide the dough into eight pieces. On a sheet of waxed paper, roll each piece of the dough into a log 1 inch in diameter, and wrap the logs tightly in waxed paper and foil. Chill the logs for at least 8 hours and up to 1 week. The dough will keep frozen for 2 months.
  • Preheat the oven to 350°F.
  • Working with one log at a time, cut the log crosswise into 1/8-inch-thick slices, and arrange the slices 1/2 inch apart on parchment-lined baking sheets. Bake the crisps in batches until they are golden and just firm to the touch, 10 to 12 minutes. Cool the wafers on the baking sheet. Stored in an airtight container at room temperature, the wafers will keep for up to 4 days.
