THAI CORN CHOWDER

3 ears corn on the cob
6 cup water
1 medium potato (peeled and diced)
1 can (15oz light coconut milk)
1 tablespoon Thai red curry paste
1/4 cup loosely packed cilantro
1/2 pound medium shrimp
1 tablespoon fish sauce
1 lime (juiced)
Optional: thinly sliced jalapeno (for garnish)

Steps:

  • Cut the corn kernels away from the cob. Add the cobs, 6 cups of water, and the diced potato to a soup pot. Bring to a boil, then reduce heat and simmer 20 minutes. Discard the cobs.
  • Stir in coconut milk, red curry paste, and half of the reserved corn. Simmer for 5 minutes. Transfer to a blender or food processor and process into a smooth puree.
  • Return the puree to the pot. Add the remaining corn, cilantro, and shrimp. Simmer until shrimp are cooked through, about 5 minutes. Stir in fish sauce and lime juice. Garnish with jalapeno slices, if desired.

¼ cup diced onion
½ cup diced celery
6 tablespoons all-purpose flour

2 (15 ounce) cans creamed corn

2 tablespoons shredded carrot
1 cup half-and-half cream
¾ cup skim milk
½ teaspoon ground nutmeg

1 pinch salt

Steps:

  • In a large saucepan over medium heat, melt butter. Cook onions and celery in butter 3 minutes. Whisk in flour and cook 6 minutes more, until light brown. Whisk in broth and simmer 10 minutes.
  • Stir in creamed corn, corn, carrot, half-and-half, milk, nutmeg, pepper and salt. Simmer over low heat 10 minutes more.

BASIC CORN CHOWDER



Basic Corn Chowder image

This is chowder at its simplest: corn, onion, potatoes and milk, with a couple of chopped tomatoes and a handful of parsley to add flavor and color. Starting with bacon and finishing with cream makes a richer version of the dish. But you could easily expand its borders by adding curry powder and ginger, sour cream and cilantro. Or when the potato is replaced by rice and the cream with coconut milk, Southeast Asian seasonings can be added to make a chowder that has little in common with the original, save for its intense corn flavor.

4 to 6 ears of corn
1 tablespoon butter or neutral oil, like canola or grapeseed
1 medium onion, chopped
2 medium potatoes, peeled and diced
Salt and freshly ground black pepper
2 tomatoes, cored, seeded and chopped (optional)
1 cup whole or low-fat milk
1/2 cup chopped parsley (optional)

Steps:

  • Shuck corn, and use a paring knife to strip kernels into a bowl. Put cobs in a pot with 4 cups water; bring to a boil, cover and simmer while you continue.
  • Put butter or oil in a saucepan, and turn heat to medium-high. When butter melts or oil is hot, add onion and potatoes, along with a sprinkling of salt and pepper. Cook, stirring occasionally, until onion softens, about 5 minutes; add tomatoes and cook, stirring, for another minute or two.
  • After corncobs have cooked at least 10 minutes, strain liquid into onion-potato mixture; bring to a boil, then lower heat to a simmer. When potatoes are tender, add corn kernels and milk, and heat through. Taste, and adjust seasonings. Garnish with the parsley, and serve.

1 (14.5 ounce) can low-sodium chicken broth
1 egg, beaten
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • In a saucepan, combine the cream style corn and chicken broth. Bring to a boil over medium-high heat. In a small bowl or cup, mix together the cornstarch and water; pour into the boiling corn soup, and continue cooking for about 2 minutes, or until thickened. Gradually add the beaten egg while stirring the soup. Remove from heat and serve.

3 cups corn (frozen or fresh)
4 -5 cups water
1 low-sodium chicken bouillon cube
1 cup 1% low-fat milk (or fat free)
3/4 cup firm tofu, diced
2 tablespoons fish sauce (nam pla)
3 tablespoons dried shiitake mushrooms (ground into a powder or diced finely)
3 tablespoons sugar (or to taste)
2 tablespoons cornstarch
1 tablespoon garlic powder (or fresh minced garlic, (to taste)
fresh ground black pepper

Steps:

  • 1. Combine corn, water, bouillon, mushrooms, and garlic in large pot. Bring to a boil, stirring frequently.
  • 2. Blend approximately two-thirds of soup to create creamy texture. Cook on medium for 10 minutes (or more) so soup is simmering/at a low boil.
  • 3. Add sugar and fish sauce, stir, let cook several minutes and then taste. FIsh sauce will add a wonderful umami flavor and meld with the other flavors.
  • 4. Measure out cornstarch, add a small amount of milk, stirring until makes a smooth paste. Pour rest of milk into paste, stir and add to soup. Add diced tofu. Add black pepper to taste. Bring soup to a boil for 1 minute and serve.

2 cups diced red-skinned potatoes (about 12 ounces)
3/4 cup chopped scallions
2 tablespoons grated peeled fresh ginger
4 cloves garlic, smashed
8 black peppercorns
1 stalk lemongrass, cut into thirds (optional)
4 tablespoons unsalted butter
Kosher salt
1 red jalapeno pepper, seeded and minced
1 13 .5-ounce can coconut milk
8 fresh basil leaves
8 fresh mint leaves
4 radishes, thinly sliced
1/4 cup roughly chopped fresh cilantro
Juice of 1/2 lime, plus lime wedges for garnish
1 tomato, seeded and diced

Steps:

  • Cut off the corn kernels; set aside. Combine the cobs, 1 cup potatoes, 1/2 cup scallions, 1 tablespoon ginger, the garlic, peppercorns and 5 cups water in a pot. Smash the lemongrass, if using, and add to the pot. Bring to a boil, then simmer for 25 to 30 minutes.
  • About 10 minutes before the broth is finished, melt the butter over medium-high heat in a separate pot. Add the remaining 1 cup potatoes, season with salt and cook until slightly soft, 5 minutes. Add the remaining 1 tablespoon ginger and the jalapeno; cook 1 minute. Add the corn kernels; cook until the vegetables are just tender, 3 to 4 minutes.
  • Strain the broth, pressing out as much liquid as possible; discard the solids. Add 2 cups of the strained broth to the potatoes and corn; bring to a boil, cover and simmer for 10 minutes. Add the coconut milk, basil and mint; season with salt. Stir until simmering. Remove from the heat and add the radishes, cilantro and lime juice. Top with diced tomato and the remaining 1/4 cup scallions and serve with lime wedges.

1 stalk lemongrass, bruised
4 boneless skinless chicken thighs
1 chicken stock cube
1 liter water
1 large onion
1 clove garlic
1 small red chile
2 tablespoons vegetable oil
salt & freshly ground black pepper
1 (340 g) can sweetcorn
1 (200 ml) carton coconut cream
2 tablespoons coarsely chopped coriander
1 lime

Steps:

  • Put the lemongrass, chicken, stock cube and a litre of cold water in a large saucepan.
  • Bring to a boil, lower the heat and simmer for 15 minutes until the chicken is cooked.
  • Skim away any froth on the surface.
  • Meanwhile, peel and finely chop the onion, chilli and garlic.
  • Heat the oil in a frying pan and sauté the onion, chilli and garlic until they are softened.
  • Discard the lemongrass.
  • Chop the chicken into small pieces and season the meat with salt and pepper.
  • Set aside.
  • Drain the sweetcorn, then add the contents of the frying pan along with the corn to the stock.
  • Heat through with the coconut cream.
  • Use a hand blender to blitz the soup until it is almost smooth.
  • Return to a clean pan, stir in the chicken and reheat.
  • Just before serving, stir in the coriander with a lime wedge on the side.

4 ears sweet corn, husked
1 small red bell pepper, cored and cut into 4 planks
1 bunch scallions (6 to 7), trimmed
Extra-virgin olive oil, for brushing
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1 pound new potatoes, cut into 1/2-inch chunks
2 stalks celery, chopped
3 tablespoons all-purpose flour
2 teaspoons fresh thyme leaves
1/2 teaspoon smoked paprika
4 cups low-sodium chicken broth
3/4 cup heavy cream
1/4 cup fresh Italian parsley leaves, chopped
Hot sauce, for serving, optional

Steps:

  • Prepare a grill for medium heat.
  • Brush the corn, bell pepper and scallions lightly with olive oil. Season with salt and pepper. Grill, turning as needed, until the vegetables are charred and just tender, 8 to 10 minutes for the corn, about 6 minutes for the peppers and 2 to 3 minutes for the scallions. Let cool.
  • Cut the corn kernels from the cobs and place it in a medium bowl. Chop the bell pepper. Finely chop the scallions, keeping the white parts separated from the green parts.
  • Melt the butter in a medium Dutch oven over medium heat. Add the scallion whites, potatoes and celery. Cook, stirring occasionally, until the celery softens, 3 to 4 minutes.
  • Sprinkle in the flour, thyme, paprika, 1 teaspoon salt and several grinds of black pepper. Stir until the flour evenly coats the vegetables, about 1 minute. Add the broth and 1 cup water and whisk to combine. Bring to a simmer, adjust the heat and simmer until the potatoes are almost tender, 8 to 10 minutes.
  • Stir in the corn, peppers and cream and return to a rapid simmer. Cook until the soup is thickened and the vegetables are tender, 8 to 10 minutes. Season with more salt and pepper if desired. Stir in the scallion greens and parsley. Serve with hot sauce if using.
