Baked oatmeal is like having dessert for breakfast! Made with healthy ingredients-bananas, pears, oats, nuts and maple syrup, it will leave you satisfied all morning.

2 large ripe bananas ((the riper the better) sliced into 1/2″ pieces)
1 1/2 cup diced and peeled ripe pears (1-/2 inch dice)
5 tablespoons pure maple syrup
1 cup uncooked quick oats*
5 tablespoons chopped walnuts
1/2 tsp baking powder
1 tsp cinnamon
pinch of salt
1 cup fat-free milk (or dairy-free milk such as almond or soy)
1 large egg
1 teaspoon vanilla extract
*check labels for gluten-free

Steps:

  • Preheat the oven to 375° Lightly spray a 8 x 8″ or 9 x 9″ ceramic baking dish with cooking spray; set aside.
  • Arrange the banana slices in a single layer on the bottom of the ceramic dish. Top with the pears, 1/4 teaspoon of the cinnamon, 2 tablespoon of the maple and cover with foil.
  • Bake 20 minutes, until the bananas get soft.
  • Meanwhile, in a medium bowl, combine the oats, half of the walnuts, baking powder, 1/2 teaspoon cinnamon, and salt; stir together.
  • In a separate bowl, whisk together the remaining maple syrup, milk, egg, and vanilla extract.
  • Remove the fruit from the oven, then pour the oat mixture over the baked fruit.
  • Pour the milk mixture over the oats, making sure to distribute the mixture as evenly as possible over the oats.
  • Sprinkle the remaining 1/4 teaspoon cinnamon and walnuts over the the top.
  • Bake the oatmeal for about 35 minutes, or until the top is golden brown and the oatmeal has set. Serve warm from the oven.

2 cups old-fashioned oats (do not use quick-cooking)
1 cup chopped walnuts, toasted

Steps:

  • Heat oven to 350°F. Line cookie sheets with cooking parchment paper.
  • In medium bowl, mix flour, baking soda and salt; set aside. In large bowl, beat butter, brown sugar and granulated sugar with electric mixer until creamy. Add eggs and vanilla, beating well. Beat in flour mixture until blended. Stir in oats. Fold in walnuts and dried pear. Onto cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake 12 minutes or until brown around edges. Cool 2 minutes; remove from cookie sheets to cooling racks.

½ cup coconut oil
½ cup coconut sugar or brown sugar
1 large egg
1 tsp vanilla extract
½ tsp. baking soda
¼ tsp. salt

¾ cup whole wheat
1½ cup old fashion oats (I used Trader Joe's rolled oats)
1 cup pear, peeled, cored, diced small (1 large pear)

Steps:

  • Preheat oven to 350 degrees.
  • Line 2 baking sheets with parchment paper; set aside.
  • In a large bowl; add coconut oil, coconut sugar, egg and vanilla extract. Mix with a spoon, until well combined.
  • Add to the same bowl, baking soda salt, cinnamon and whole wheat flour; mix until well combined. Stir in pear and oatmeal.
  • With a large cookie scoop (I used 3 tbsp. capacity scoop), scoop out the dough and pat it into the scoop to form a firm cookie. Place onto prepared baking sheet, spaced about 2" apart. I put 9 cookies per baking sheet. Note: I used my fingers to pat the top of the cookie to flatten a bit and to make sure it is held together.
  • Bake in oven for 10 minutes, until bottom of cookie turns lightly brown. Let cool on cookie sheet for 5 minutes; place on cookie rack until completely cooled.

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt; stir into the sugar mixture until well blended. Fold in the walnuts, oats, pears and chocolate chips. Drop dough by spoonfuls about 2 inches onto ungreased cookie sheets.
  • 3. Bake for 12 to 15 minutes (or until lightly browned) in the preheated oven. Let cool on wire rack

2 tablespoons canola oil
1 egg
cooking spray

Steps:

  • Preheat oven to 400 degrees. Prepare muffin cups with a light coating of cooking spray.
  • Combine dry ingredients (flours, baking soda, baking powder, salt and cinnamon) together in a bowl.
  • Core and dice the pears into small chunks. Combine the pears, buttermilk, maple syrup, oil, sugar, egg and all but 2 tablespoons of the oatmeal together in a second bowl. Let sit for 5 minutes.
  • Combine the pecans and reserved oatmeal together to use as a topping for the muffins. Set aside.
  • Combine the wet and dry ingredients together until just mixed. Spoon batter into muffin cups, filling 2/3s full. Sprinkle with the pecan/oatmeal mix. Bake 18 to 20 minutes until a toothpick inserted in the middle comes out clean. Cool 5 minutes and remove from pan.
  • Serve warm or let the muffins finish cooling on a rack.

I've been making this (or versions of it) since I was 12 years old. This is an evolved version of the "Quaker Oatmeal Apple Crisp". It is easy to make and to play with, try adding some chopped walnuts to the crisp or use a completely different fruit for the filling, such as peaches. It's great warmed up in the microwave but it's equally good straight out of the fridge. Wonderful comfort food for winter or exam time. Very easily converted into vegan by substituting margarine for butter.

  • Make the Caramelized Pears: Rinse your pear, and thinly slice it, discarding the core. Melt butter in a saucepan over medium heat. Add pears, and cook for 1-2 minutes, stirring occasionally so pears get evenly coated in the butter. Pears should be fork-tender. Add the brown sugar and stir to coat pears evenly. Cook another minute until you see a sort of caramel sauce forming, then sprinkle on the cinnamon, stir to coat pears, and remove pan from the heat.
  • Make your Oatmeal: I recommend doing this second, because oatmeal gets funky pretty quick if you cook it and then let it sit in the pot. Cook oats according to package directions - I use the quick cook oats. Stir in brown sugar and cinnamon if desired. You can also stir in some of the leftover caramel sauce from the pan - YUM.
  • Serve + Store: Add oats to a bowl, top with the pears and walnuts. Enjoy immediately! I DON'T recommend making extra oatmeal and trying to reheat it later - it's one of those things that just needs to be made fresh. Store leftover pears in airtight container in the fridge and reheat in a pan or in the microwave. I use about 1/3 of a pear in my oatmeal, so this should make enough caramelized pears for three breakfast bowls.
