Steps:
- Peel, core and chop pears into cubes 1/4 to 1/2 inch. In a large wide saucepan, combine pears with remaining ingredients.
- Place pan over high heat, and bring to a boil, then reduce heat to low. Simmer, uncovered, until chutney has thickened and melted together, about 1 1/2 hours. Meanwhile, sterilize 6 1-cup (or 12 1/2-cup) jars and lids by running through a dishwasher on high heat, or by filling with boiling water, draining and drying in a low oven.
- Pour chutney into warm jars, and screw on lids. Chutney may be stored unopened at room temperature for six months.

PEAR CHUTNEY RECIPE
Summer is the best time to enjoy many fresh fruit recipes. Spicy pear chutney is one such recipe that is religiously followed by many families during summer when ripe and juicy pears available in abundance. Apart from pear, sugar and vinegar, this recipe also uses apple, ginger, cinnamon and clove for complex sweet, sour and spicier flavor.

- Directions:Peel, core and chop pear into small 1/2-inch pieces. Peel apple, remove stems and cores and finely chop into small pieces. (You can use red delicious apple or granny smith apple according to your choice.)Heat 1 teaspoon oil in a pan. Sauté onion until it turns light brown.Add chopped apple, chopped pear, raisins, ginger, sugar, ground cinnamon, ground cloves, cayenne pepper, cider vinegar and salt and cook over medium heat. Stir to combine all ingredients. When mixture starts to boil, reduce to simmer.Simmer until mixture thickens or for around 40 minutes. Stir in between occasionally. If mixture is still runny after 40 minutes, then simmer it for 10-15 minutes more.Turn off heat and let it cool at room temperature. Store prepared pear apple chutney in refrigerator and consume within 2 weeks.
CHRISTMAS CHUTNEY
This is so-named because it is made with dried fruits, which I always associate with Christmas: prunes, dates and apricots It's dark, spicy and delicious with cold cuts, pork pies or hot sausages - and it goes splendidly with matured Cheddar.

- The dried fruits and the onions need to be chopped very small, and this can be done in a food processor, or with an old-fashioned mincer, or else with a sharp knife and lots of patience! When they're all dealt with, put the vinegar in a large saucepan with the salt and the ginger, then tie the allspice berries up in a small piece of muslin, or gauze, very securely so they can't escape and add these to the pan. Bring everything up to the boil, then stir in the chopped dried fruits and onions together with the sugar. Leave it all to simmer very gently without a lid for about 1½ hours, or until the chutney has thickened. Stir it from time to time during the cooking period. When it's ready, you will be able to draw a spoon across the surface of the chutney and make a trail that doesn't immediately fill up with surplus vinegar. In the meantime, the jar should be washed thoroughly in warm soapy water, rinsed, dried and heated in a moderate oven for 5 minutes. Spoon the cooked chutney into the warmed jar, seal well with waxed discs and tight lids, and label as soon as it's cold. Keep this chutney for 1 month to mature before eating.
PEAR CHUTNEY
A winter recipe for a fruity pear chutney that goes beautifully with our poppy and sesame seed crackers. Along with some artisan cheese, the three would make a lovely Christmas present.

- Peel and core the pears, then chop them into chunks. Place them in a pan with the prunes, sultanas, raisins, shallots, apples, sugar and cinnamon stick. Pour in half of the cider vinegar, season and slowly bring to a simmer, stirring, until the sugar has dissolved. Cook for 25 minutes more, until tender.
- Pour in the rest of the cider vinegar and cook for a further 30 minutes, stirring often, until thickened. If it's still runny, simmer for another 10-15 minutes.
- Divide the hot chutney between sterilised jars (see tip), place a disc of waxed paper directly onto the chutney and seal with airtight lids or cellophane and elastic bands. Leave to cool.

- In 2-quart saucepan, combine red pepper, onion, jalepeno, vinegar, honey, and allspice. Heat to boiling over medium heat. Reduce heat to low and cook, stirring occasionally, 5 minutes.
- Add pears and raisins and return to boiling. Cook chutney, stirring occasionally, 5 to 8 minutes longer or until pears just start to soften.
- Meanwhile, in large kettle, cover 2 pint or 4 half-pint canning jars with water and heat to boiling over high heat; boil 10 minutes to sterilize. Drain jars on clean towel. In small saucepan, cover the jar lids and bands with water and heat to simmering. Remove from heat and leave lids and bands in water until ready to use
- Spoon chutney into drained, hot jars Fill to within 1/2-inch of top of jars. Wipe rims of jars with damp cloth and seal with lids and bands. Process in boiling water bath 10 minutes. Cool jars; label and store in cool, dark, dry place.
TOMATO PEAR CHUTNEY

- In a medium nonreactive saucepan, stir together the vinegar, spiced rum, sugar, onions, ginger and mustard seeds until the sugar dissolves. Bring to a boil over high heat. Adjust heat so the mixture boils gently and cook for 15 minutes to reduce the mixture slightly. Remove pan from the heat.
- Peel and core the pears. Cut them into 1/4 inch chunks.
- Immediately stir the pear chunks into the vinegar mixture to prevent discolouring.
- Return the saucepan to the heat. Bring mixture to a simmer over medium high heat. Add the tomatoes. Reduce the heat and simmer, stirring occasionally for 50 minutes longer, or until the pears have cooked down and are softened but still retain some shape. (The chutney will be just slightly fluid but will thicken when chilled.) Let cool briefly.
- Pour the chutney into glass storage jars. Cover and refrigerate for at least 3 hours or until thoroughly chilled and slightly thickened.

- Put all of the ingredients into a stainless-steel preserving pan, except for the sugars. Bring to the boil, then simmer for 15 minutes, to soften the pears.
- Add the sugar and heat gently until dissolved. Bring to the boil, then simmer for 1-11/2 hours until thick. Draw a wooden spoon across the base - it should leave a clear trail for a few seconds.
- While the pear chutney is still hot, pot in sterilised jars and store in a cool, dark place for at least a month before eating.
SPIKED PORK TENDERLOIN WITH SUNNY PEAR CHUTNEY
All I can say about this dish is "Wow!!" The pork absolutely melts in your mouth! One of our church members made this dish for the church staff when we were invited to her home for a Christmas luncheon. It was fabulous! We all begged for the recipe! - Combine first seven ingredients in a large shallow dish.
- Add pork.
- Cover and chill 30 minutes, turning occasionally.
- Remove pork from marinade.
- Bring marinade to a boil in a saucepan; keep warm.
- Place pork on a lightly greased rack in a roasting pan.
- Bake at 375 degrees for 30-35 minutes or until a meat thermometer inserted in thickest portion registers 160 degrees, basting often with reserved marinade.
- Let stand 10 minutes before slicing.
- Serve with Sunny Pear Chutney (directions below).
- To make the Chutney, cook first seven ingredients in a large saucepan over medium heat 20 minutes.
- Stir in walnuts, lime juice, and red pepper.
- Cook 10 minutes.
- Cool slightly.
