1 1/2 cups long grain white rice
2 garlic cloves, minced
2 tablespoons vegetable oil
1/4 cup onion, finely diced
4 ounces el pato salsa fresca (or tomato sauce if you cant find el pato sauce)
2 1/2 cups chicken broth
1 teaspoon cumin
1 tablespoon chili powder
1/2 teaspoon sea salt
pepper

Steps:

  • in a bowl combine broth, cumin, chili powder, salt & half a can of el pato sauce (if you can't find el pato use regular tomato sauce).
  • brown rice, in hot oil, in a large skillet for approximately 5 minutes flipping occasionally.
  • add diced onion, minced garlic, sauté for 1 minute.
  • add seasoned broth, bring to a boil.
  • reduce heat to low, cover and simmer for 15 minutes. do not check on the rice before the 15 minutes is up, this will allow steam to escape and may make your rice turn out undercooked.
  • most of the water will absorb before the 15 minute time limit but keep covered and continue to steam for the entire 15 minutes. this will make for perfect rice that isnt crunchy.
  • after 15 minutes turn heat off, uncover & flip rice over. recover & let sit until everything else is ready. you can let the rice sit covered for up to 25 minutes which will cook out most of the moisture & leave perfect fluffy rice.

1 tablespoon butter
2 cups uncooked long-grain white rice
⅓ cup diced jalapeno pepper
⅓ cup chopped green onion
1 clove garlic, crushed
1 teaspoon chili powder, or to taste
1 teaspoon ground cumin
½ teaspoon salt
½ teaspoon chipotle chile powder, or to taste
½ teaspoon cayenne pepper, or to taste
2 ¼ cups chicken stock
½ cup tomato sauce

Steps:

  • Melt butter in a pot over medium-low heat. Stir rice, jalapeno, green onion, and garlic together in the melted butter until rice is completely coated with butter. Add chili powder, cumin, salt, chipotle chile powder, and cayenne pepper; cook and stir until fragrant, about 1 minute.
  • Stir chicken stock and tomato sauce into rice mixture. Bring to a simmer, cover the pot, reduce heat to low, and simmer for 20 minutes. Turn heat off and leave pot covered on the burner for 8 minutes. Remove cover and fluff rice with a fork.

Abuelita's Spanish Rice image

This is one of the ways my mother-in-law cooks rice. She is from Puerto Rico, her father is from Spain. She lives in Los Angeles now, and every time she visits she shares more of her cooking styles with me. When I visit her, we end up eating out! That's because there is a little home-run Puerto Rican restaurant around the corner from her. Their rice tastes like this, too.

2 package(s) safron yellow rice mix (10 ounces total)
1/4 cup(s) chopped bacon or salt pork
1 tablespoon(s) dried oregano
2-3 clove(s) garlic, smashed and slivered
1/2 teaspoon(s) salt
1/2 teaspoon(s) ground black pepper
2 tablespoon(s) cider vinegar
1 or 2 - seeded chopped tomatoes
3 cup(s) chicken stock or water
1/2 cup(s) sliced pimento-stuffed olives (optional)

Steps:

  • In a large saucepan, cook bacon until fat is rendered. Use a bit of olive oil if necessary to crisp up the bacon or salt pork.
  • Stir in oregano, garlic, salt, pepper, and vinegar, and cook a couple of minutes over medium heat until fragrant. Add in tomatoes and cook until their liquid is released.
  • Stir in the rice mix until rice is well coated, then stir in the chicken stock or water. Bring to a boil.
  • Stir well. Reduce heat to a simmer, cover pot, and cook very slowly without lifting lid for 20 minutes. Then, remove lid, stir well, and allow to cook uncovered until rice dries out slightly, stirring occasionally.
  • Top with sliced green olives, if desired. Another option is to stir in 1 cup peas, or chickpeas, or pigeon peas and heat through.
  • NOTE: My mother-in-law used to make this with plain rice and real saffron. But the cost of real saffron has skyrocketed, and she is OK with using the rice mix. She sometimes also adds 1 packet of the Goya Sazon Azafran. I usually leave that out because it is mostly MSG.

1 jalapeno, seeded and finely diced (or 1/2 small can of diced jalapenos)
3 -4 garlic cloves, minced
1 lb ground beef
5 cups cooked white rice
24 ounces classico spicy red pepper sauce
2 tablespoons hot sauce (or to taste)
8 ounces cheddar cheese, shredded
6 -8 slices American cheese

Steps:

  • Preheat oven to 350°F.
  • Brown ground beef with veggies.
  • Stir in rice, sauces, cheddar.
  • Transfer to lightly greased casserole dish.
  • Cover with American cheese.
  • Bake at 350F for 30 minutes or until brown/bubbly.
