PEAR BUTTER
Pear butter is lightly scented with orange and nutmeg. This is an old recipe from a dear friend. Its taste is so good in toast or even on top of steak or chicken.

- Place pears into a large pot over medium heat, and add just enough water to cover the bottom of the pot and keep them from sticking, about 1/2 cup. Cook until the pears are soft, about 30 minutes. Press pears through a sieve or food mill, and measure out 2 quarts of the pulp.
- Pour the pear pulp and sugar into a large saucepan and stir to dissolve sugar. Stir in the orange zest, nutmeg and orange juice. Cook over medium heat until the mixture is thick enough to mound in a spoon. When the mixture begins to thicken, stir frequently to prevent scorching on the bottom. This will take about 1 hour.
- Ladle the pear butter into hot sterile jars, leaving 1/4 inch of headspace. Remove air bubbles by sliding a metal spatula around where the pear butter touches the glass. Wipe jar rims clean, and seal with lids and rings. Process for 10 minutes in a boiling water bath. The water should cover the jars by 1 inch. Check with your local extension for exact processing times for your area.

PEAR BUTTER
This recipe I found in Ball recipe book Tweaked a lot.I used my vita mix so I didn't need to cook, peel or seed my pears.I just pureed them then cooked with rest of ingredients. If you need to you can peel, seed and cook to soften the pears then puree in food processor. I just like the idea of all the vitamins and fiber I get to have because of this method. The prep time is what it took me from start(fruit) to finish(butter). This can be used on bread, waffles,pour it on a layer of cream cheese for a cracker spread,serve with a pork roast or turkey. Try it straight out of the jar.

- Wash 8-10 pint jars in hot soapy water or in dish washer.
- Keep hot until needed.
- Prepare lids as manufacturer directs.
- Place in a 6-quart pot.
- Pour orange juice over fruit.
- Stir in orange peel, sugar, spices and seed of vanilla bean.
- Use a hand blender if need be to get a nice smooth puree.
- Stirring constantly over medium heat, bring to a boil.
- Ladle into hot jars 1 at a time, leaving 1/4 inch headspace.
- Release trapped air.
- Wipe rim of jars with a clean damp cloth.
- Attach lid.
- Place in canner.
- Process in a boiling-water bath.
- For 15 minutes.

SPICED PEAR BUTTER

- Place pears and 1/2 cup water in a large saucepan over medium heat. Cook until softened, about 20 minutes. Transfer pears to a blender or food processor; puree until smooth but not liquefied.
- Return pear puree to the saucepan. Add agave nectar, lemon juice, orange zest, vanilla extract, cinnamon, nutmeg, cloves, and allspice. Reduce heat to medium-low. Simmer pear butter until thickened, stirring frequently, 70 to 90 minutes.
- Wash and rinse six 1/2-pint jars, lids and rings; let jars and rings dry on a rack. Immerse lids in a dish of boiling water.
- Fill a large canning pot with water. Bring to a boil; cover and keep simmering.
- Fill the dry jars to 1/2 inch from the top with hot pear butter using a ladle and canning funnel. Wipe rims clean. Pick up lids using tongs; cap jars and screw on the rings. Use canning tongs to completely immerse jars into the pot of boiling water. Cover pot; boil jars for 10 minutes.
- Remove jars with your tongs. Let cool, about 24 hours. Check seals to make sure lids have sucked down; listen for a popping sound. Label jars and store.

- Peel, core and slice pears. Pulse pears in blender until smooth. Pour blended pears into crockpot.
- Add cinnamon and sugar and gently stir. Cook with lid off (your house is going to smell amazing!!) for 16-24 hours. Pear butter should be thick enough to gently mound on spoon.
- Stir in lemon juice. Ladle pear butter into half pint (8 ounce) small jam jars, leaving 1/4 inch head space. Wipe rim with damp cloth. Store pear butter in fridge up to one week or process for canning.
- To can pear butter: Place half pint jars into canner. Fill canner with water just to the tops of the jars. Bring water to a boil and boil for 20 minutes. With canning lifter remove jars to cool on a towel on the kitchen counter for 12 hours. Enjoy!

- In a large stainless steel saucepan, combine the pears, water, lemon zest and juice.
- Bring to a boil over medium-high heat. Reduce heat and boil gently, occasionally stirring, for 20 minutes.
- Working in batches, transfer mixture to a food processor fitted with a metal blade and puree just until a uniform texture is achieved. Do not liquefy. Alternatively, you may use an immersion blender.
- Measure 8 cups of pear puree (I used the excess as Pear Sauce).
- In a clean large stainless steel saucepan, combine pear puree, sugar, orange juice, vanilla, cinnamon, cardamom, and nutmeg.
- Stir until sugar dissolves.
- Bring to a boil over medium-high heat, stirring frequently. Reduce heat and boil gently, stirring frequently, until mixture thickens and holds it shape to a spoon and liquid does not separate. This will take 6-8 hours.
- Meanwhile, prepare canner, jars and lids:
- Wash and rinse the jars in hot soapy water. Drain the jars well of any excess water.
- Set the screw bands aside - they don't require sterilizing. Place the lids - the flat round portion of the two-piece closures - in a small saucepan, cover with water and bring to a simmer. Don't boil.
- Keep lids hot until you're ready to use them.
- Ladle hot butter into hot jars, leaving 1/4 inch head-space.
- Remove air bubbles and adjust head-space, if needed, but adding more butter. Wipe rim.
- Center the lid on jar and screw band down until resistance is med, then increase to fingertip tight.
- Place jars in canner, ensuring they are completely covered with water. Bring to a boil and process for 10 minutes.
- Remove canner lid. Wait 5 minutes, then remove jars, cool and store.

- Place all the ingredients in a slow cooker and cook on LOW for 8-10 hours or on HIGH for 5-6 hours. Use an immersion blender (or transfer to a countertop blender) and puree until smooth.
- Leave the lid of the slow cooker open and continue to simmer on LOW for 6+ hour, or on HIGH for 4+ hours, or until the pear butter has thickened to the desired consistency.
- Taste the pear butter and if you prefer it sweeter add some more brown sugar and let it simmer for another 30 minutes or so.
- Optional: Pears tend to be a little gritty. For a smoother taste, process the pear butter in a food mill.
- If you're not canning the pear butter, it will store in the fridge for about 2 weeks.
- To can for long-term storage: Ladle the hot pear butter into sterilized jars and screw on the washed lids and rims. Process in a boiling water bath for 10 minutes. Remove and let sit undisturbed for 24 hours before moving the jars. Store in a dark, cool place for up to a year. For best flavor consume within 4-6 months.

PEAR BUTTER
Steps:
- Simmer pear halves and brandy in a saucepan for 20 minutes over medium heat. In a separate saucepan, combine sugar, zest, and orange juice. Set aside. When pears are soft, transfer to a blender and puree*. Add puree to saucepan and simmer for 1 1/2 hours over low heat, stirring occasionally. - Combine pears, wine and lemon juice in heavy large saucepan. Cover and simmer until pears are soft, pushing unsubmerged pears into liquid occasionally, about 25 minutes. Force through food mill or coarse sieve to remove pear peel. Transfer to processor and puree.

Press center of each lid. If lid stays down, jar is sealed. (If lid pops up, store butter in refrigerator.) Store in cool dry place up to 1 year. Refrigerate after opening.

- Do not peel the pears (peels add flavor and nutrition!) Cut into 3/4-inch to 1-inch chunks. Add to slow cooker along with 1/2-cup water, lime juice, brown sugar, ginger and lime peel.

- Your first step is to cook and puree the pears to make pear sauce. The most basic way to do this is to peel, stem and core the pears by hand and then cook them in a thick bottomed pot or enameled dutch oven, along with a small amount of water for 30-40 minutes until soft.Alternately, you can just coarsely chop the pears and cook them with skins and cores intact and then use a food mill to remove the seeds and cores. I cooked my pears in an instant poton high pressure for 10 minutes and then used a kitchen aid food mill attachmentto remove the seeds for start to finish pear sauce in about 30 minutes, mostly hands off.
- If you didn't use a food mill, process your pears in batches through a food processor or use an immersion blenderto thoroughly blend the pears into pear sauce.
- Return the mixture to your dutch oven or pot and add whiskey and maple syrup. Simmer, uncovered until the mixture thickens, darkens in color and holds its shape on a spoon. I like to cook it until you can pull the spoon across the bottom of the pot and it's thick enough that it takes a while for the mixture to fill the gap back in.
- If canning, ladle the hot pear butter into jars, leaving 1/4 inch of headspace. Remove air bubbles, lid, and band jars. Process in a water bath canner for 10 minutes, adjusting for altitude.

- If you're starting with fresh pears you need to peel and core the pears before cooking. If you are using a food mill then you can skip that step. Wash the pears and cut into quarters.
