1 kilogram Pear
500 grams jam sugar (2: 1)
1 Vanilla bean
1 Orange (juiced)
40 grams Walnut

Steps:

  • Peel and core pears, cut into small cubes. Place pear pieces into a large saucepan with sugar and slit vanilla pod. Add orange juice and let stand, covered, for at least 1 hour. Chop walnuts coarsely.
  • Bring pear mixture to a boil and simmer, stirring, for about 4 minutes. Remove from heat, take out vanilla pod and puree jam finely. Add walnuts and chopped vanilla pod to the pan. Pour jam into prepared preserving jars, seal well and turn upside down, let cool for about 10 minutes. Return jars to normal position and cool completely. Store in a cool, dark place and serve as needed.

  • Bring to a full rolling boil over high heat, stirring constantly.
  • Reduce heat; simmer for 15 minutes, stirring frequently.
  • Remove from the heat; stir in gelatin until dissolved.
  • Pour into jars or containers; cool to room temperature, about 1 hour.
  • Cover and let stand overnight or until set, but not longer than 24 hours.
  • Refrigerate.

This recipe came from a sure-Jell pamphlet dated 1974. As a new bride then, I was inspired by my sister-in-law to try canning, and I've been "putting up" ever since. I had marked this recipe to make it, but never did. I wish I hadn't waited so long! It is a great "morning" jam---wakes up you taste buds, but without the astringency of marmalade. Great on bagels!

4 1/2 cups prepared fruit (about 2 1/2 lb. fully ripe pears and 2 medium or 3 small oranges)
1/2 cup chopped walnuts
5 1/2 cups sugar
1 box sure-jell fruit pectin (powdered)
1/2 teaspoon butter

Steps:

  • Peel and core about 2 1/2 pouds pears.
  • Peel oranges, remove seeds and any loose membrane. (I used "juice" oranges, not navels, for a more intense flavor.).
  • Grind or chop pears and oranges very fine.
  • Mix well.
  • Measure 4 1/2 cups of the mixture into a very large saucepan.
  • Add 1/2 cup chopped walnuts.
  • Measure sugar and set aside.
  • Mix pectin into fruits in saucepan.
  • Place over high heat, stirring continually, until the mixture comes to a hard boil.
  • Immediately add all the sugar and butter and stir well.
  • Bring to a full rolling boil and boil hard 1 minute, stirring constantly.
  • Remove from heat and skim off any foam with a metal spoon.
  • Stir and skim for 5 minutes to cool slightly and prevent floating fruit.
  • Ladle quickly into glass jars, wipe rims and apply lids & rings.
  • Process in a water-bath canner for 10 minutes for half-pints, 15 minutes for pints.
  • Remove from canner and place jars on a clean towel to cool.

1/4 cup (50 grams) sugar
1/2 teaspoon kosher salt
1 cup (226 grams) unsalted butter, cold and cubed
8 ounces (226 grams) cream cheese, straight from the fridge
2 large egg yolks
1 teaspoon vanilla extract
1/2 teaspoon almond extract, optional
3/4 cup (245 grams) orange marmalade
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
3/4 cup (64 grams) finely chopped toasted walnuts
1 large egg beaten with a splash of water
A few pinches flaky salt
2 tablespoons sugar or coarse sanding sugar
Colorful sugar or sprinkles, if desired

Steps:

  • To make the dough, combine the flour, sugar and kosher salt in a stand mixer fitted with a paddle. Add the cubed butter, distributing it all over the top of the dry ingredients, and dollop in the cream cheese (1-inch dollops should do it, but it doesn't need to be perfect). Turn the mixer on low and stir until the mixture is mostly mealy and there are still some larger clumps of butter and cream cheese intact. Continue mixing and add the yolks, vanilla and almond extract if using. Continue mixing until the dough comes together. Divide the dough in half and shape into discs. Wrap tightly in plastic wrap and refrigerate for at least 1 hour or up to 2 days.
  • Mix the marmalade, cinnamon and cloves in a small bowl and set aside.
  • To form the rugelach, working with one dough disc at a time, roll it out on a lightly floured surface, dusting with flour as needed to prevent it from sticking, until it is a wide rectangle, 18-by-9-inches. Use an offset spatula to spread on half of the marmalade in a thin even layer, leaving a 1-inch border along the long edge that's furthest from you. Sprinkle on 1/2 cup of the walnuts. Brush the 1-inch border with a thin layer of egg wash and then start on the end closest to you and roll the dough into a long tight log, placing it seam-side down. Transfer to a cutting board or baking sheet and refrigerate for at least an hour or up to 2 days (depending on fridge space, you might want to cut the log in half so you're dealing with 4 shorter logs as opposed to 2 really long ones). If you're only refrigerating for an hour or 2, no need to cover the logs. If longer than that, cover with plastic wrap.
  • To bake, preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper. Brush the logs with a thin layer of egg wash, sprinkle with a few pinches of flaky salt, the remaining 1/4 cup walnuts and the colorful sugar or sprinkles if using. Cut into 1 1/2-inch slices and transfer to the baking sheets, 1-inch apart. Bake until golden brown on top; begin checking for doneness at 24 minutes. (You might notice that the cookies seem to sweat and leak out some fat while in the oven, this is completely normal.) Let cool on the pans for 5 minutes and then transfer to a wire rack to cool completely. Or enjoy them warm! Leftovers can be stored at room temp for several days.

6 cups sugar
1/2 teaspoon ground cinnamon
1 cup chopped walnuts, toasted

Steps:

  • In a Dutch oven over medium-high heat, bring apples, pears, clementines and lemon juice to a boil, stirring constantly. Reduce heat; simmer, uncovered, 10 minutes or until fruit is tender, stirring occasionally., Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar and cinnamon; return to bring to a full rolling boil. Boil and stir 1 minute., Remove from heat; skim off foam. Stir in walnuts. Ladle hot mixture into eight hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process 10 minutes. Remove jars and cool. ,
