COFFEE-RUBBED RIBS RECIPE

Coffee-Rubbed Ribs Recipe image

Not a coffee drinker myself, I wasn't sure how this would go over, but I ended up loving it-the way the coffee plays with the other spices, smoke, and meat. And the coffee-ness didn't dominate. Rather, the ground beans added an earthy quality to an already complex mix of flavors. The ribs eaten dry were fantastic, but even better with a coating of stout barbecue sauce.

Number Of Ingredients 14

For the Rub:
2 tablespoons freshly ground coffee
2 tablespoon kosher salt
2 tablespoons paprika
1 tablespoon ancho chili powder
1 tablespoon dark brown sugar
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground black pepper
1/2 teaspoon cocoa powder
1/2 teaspoon coriander
2 racks spare ribs, preferably St. Louis cut
Stout barbecue sauce (optional)

Steps:

  • Mix together the coffee, salt, paprika, chile powder, dark brown sugar, oregano, garlic powder, onion powder, black pepper, coco powder, and coriander in a small bowl to make the rub.
  • Remove the membrane from the back of the rack, and trim the ribs. Rub each rack liberally with the rub. Wrap ribs in foil or place in a large container and store in the refrigerator over night (optional) .
  • Remove the ribs from the fridge while preparing the smoker. Fire up the smoker to 225°F, adding a few chunks of smoking wood chunks when at temperature. When the wood is producing smoke, place the ribs in the smoker, meat side up, and smoke until the ribs have a slight bend when lifted from one end, about 5-6 hours. If using sauce, brush on the sauce and continue to cook until sauce has caramelized, about 15-20 minutes longer. Remove from the smoker, slice, and serve.

SINGAPOREAN COFFEE RIBS

Singaporean Coffee Ribs image

Provided by Food Network

Time 1h

Yield 2 servings

Number Of Ingredients 12

6 pieces prime pork ribs (about 1/2 pound per pork rib)
2 egg whites
2 1/2 oz. packets instant coffee mix
3 tablespoons Asian oyster sauce.
3 tablespoons cornstarch
2 tablespoons sugar
2 red chilis, chopped (preferably, bird's eye chillies)
2 sprigs spring onions
1/2 cup water
2 tablespoons cinnamon powder for dusting
Vegetable oil, as needed for deep frying
Pinch salt

Steps:

  • In a medium-sized bowl, marinate the ribs at room temperature for at least 30 minutes in egg whites along with a pinch of salt. Using your hands, rub in the corn starch, making sure that it partially coats all of the ribs. Allow them to sit for 10 minutes.
  • In a high-sided pot, heat the peanut oil to 350 degrees F and deep fry the ribs for about 5 minutes, or until roasting needle comes out clear, and set aside. Meanwhile, in a separate pan, add 1/2 cup of water, the instant coffee mix, oyster sauce and one chile and simmer over medium heat until sauce thickens.
  • While simmering, add the sugar and allow the sauce to caramelize. Add the ribs to the pan and gently toss until they are fully coated and little sauce remains.
  • Serve with a dust of cinnamon powder and top with chopped spring onions and the remaining chile.

COFFEE RUBBED RIBS

Categories     Pork

Yield 4

Number Of Ingredients 19

RUB
2 tablespoons ground coffee
1 tablespoon packed dark brown sugar
1 tablespoon smoked paprika
1 tablespoon kosher salt
2 teaspoons coarsely ground black pepper
½ teaspoon garlic powder
2 meaty racks baby back ribs, each 2 to 2½ pounds
SAUCE
2 tablespoons unsalted butter
1½ cups minced yellow onion
¾ cup strong brewed coffee
½ cup ketchup
2 tablespoons packed dark brown sugar
2 tablespoons cider vinegar
2 tablespoons molasses
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon mustard powder

Steps:

  • Combine the rub ingredients. Using a dull knife, slide the tip under the membrane covering the back of each rack of ribs. Lift and loosen the membrane until you can pry it up, then grab a corner of it with a paper towel and pull it off. Season the racks evenly all over with the rub and allow them to stand at room temperature for 45 minutes before grilling. Prepare the grill for indirect cooking over low heat (250° to 350°F). Meanwhile, make the sauce. In a saucepan over medium-high heat, melt the butter. Add the onion and cook until softened and beginning to brown, 7 to 8 minutes, stirring occasionally. Stir in the remaining sauce ingredients and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, until slightly thickened and reduced to 1½ cups, 16 to 18 minutes. Remove from the heat. If you prefer a smooth sauce, use an immersion blender or regular blender to puree the sauce. Place the racks standing upright in a rib rack, both facing the same direction. Place the rib rack over indirect low heat, as far from the heat as possible, close the lid, and cook for 2½ hours. After the first hour, baste the racks with water, particularly any areas that are looking a little dry. Continue to baste with water every 30 minutes or so. After 3 hours, check to see if one or both racks are ready to come off the grill. They are done when the meat has shrunk back from the ends of most of the bones by ¼ inch or more. Lift a rack by picking up one end with tongs. It should bend in the middle and the meat should tear easily. If the meat does not tear easily, return the racks to the rib rack on the grill, close the lid, and continue cooking for about 30 minutes more. Remove the racks from the grill and lightly brush them on both sides with some of the sauce. Wrap each rack individually in heavy-duty aluminum foil. Return the racks to the grill and cook over indirect low heat, with the lid closed, until very tender, 30 to 45 minutes more.

Time 11h50m

Yield 1 serving

Number Of Ingredients 20

2 tablespoons instant espresso powder
2 tablespoons Aleppo pepper
2 tablespoons dark brown sugar
2 teaspoons smoked paprika
1 1/2 teaspoons mustard powder
4/5 teaspoon chili powder
4/5 teaspoon ground ginger
One 6-ounce boneless short rib
Kosher salt and freshly ground black pepper
Grapeseed oil
1 ounce mirepoix (diced celery, carrot and onion)
2 ounces red wine
8 ounces beef stock
2 florets cauliflower, sliced thin or florets
Grapeseed oil
2 cloves garlic, thinly sliced
2 shallots, sliced thin
2 1/2 ounces heavy cream
2 ounces blue cheese crumbles
1 tablespoon thinly sliced green onion, for garnish

Steps:

  • For the coffee rub: Combine the espresso powder, Aleppo pepper, brown sugar, smoked paprika, mustard powder, chile powder and ground ginger. Mix to blend.
  • For the short rib: Sprinkle the short rib with salt and pepper, and then coat with 1 ounce of the coffee rub. (Reserve the remaining coffee rub for another use.) Refrigerate overnight.
  • In a hot skillet, add a small mount of grapeseed oil and sear the coffee-rubbed short rib on all sides. Remove the short rib from the pan, add the mirepoix, and deglaze with red wine. Cook until reduced by half, 2 to 3 minutes.
  • Add the beef stock, bring to a boil, and then turn down to a simmer. Braise until the short rib is tender, 2 1/2 to 3 hours (longer if needed).
  • Remove the short rib from the braising liquid, and reduce the sauce to 1 ounce.
  • For the fondue: Saute the cauliflower in grapeseed oil until lightly browned, 2 minutes. Add the garlic and shallots; saute until caramelized, another 3 minutes.
  • Add the heavy cream, reduce for 2 minutes to thicken, and then stir in the blue cheese to make a fondue. Add salt and pepper to taste.
  • To plate: Place some cauliflower in the center of a serving plate and spoon over the fondue. Set the braised short rib on the cauliflower; drizzle the reduced sauce over the top. Garnish with green onions.

COFFEE CHILI RUBBED BEEF SHORT RIBS

Coffee Chili Rubbed Beef Short Ribs image

This RawSpiceBar's Dark Coffee & Chiles can also be used on pork aside from Coffee Chili Rubbed Beef Short Ribs. Just place the meat in a dish, dredge with the rub, and mix it into the meat. Cover and put in refrigerator for 8 to 24 hours. Let the meat come to room temperature before cooking.

Provided by RawSpiceBar

Categories     Steak

Time P1DT1h

Yield 2 , 2 serving(s)

Number Of Ingredients 11

1 teaspoon dark coffee & chile
2 lbs bone-in beef short ribs, cut into squares between the bones (about 2 1/2 by 2 1/2 inches)
1 1/2 tablespoons olive oil
2 garlic cloves, finely chopped
1 yellow onion, roughly chopped
1 jalapeno, seeded if desired and roughly chopped
1/2 cup freshly brewed espresso
1/2 of 28-ounce can chopped tomato
1 tablespoon balsamic vinegar
sea salt & freshly ground black pepper, to taste
torn basil leaves

Steps:

  • Place the ribs in a large bowl and sprinkle them with the full amount of RawSpiceBar's Dark Coffee & Chiles. Massage the ribs with the rub, using your hands to ensure the ribs are completely coated. Cover and refrigerate for 6 to 24 hours.
  • Preheat the oven to 350ºF (180ºC).
  • Remove the ribs from the fridge. In a Dutch oven or casserole dish large enough to fit all the ribs, heat the oil over medium-high heat. Working in batches, brown the ribs on all sides, which ought to take 6 to 10 minutes. Be mindful of not smoking the kitchen up too much. Remove the ribs from the pot as they are done and place them on a plate.
  • Add the garlic, onion, and jalapeños to the drippings in the pot and cook until softened, 3 to 5 minutes, turning down the heat to medium-low if necessary. Carefully pour in the espresso, tomatoes, and vinegar, season with salt and pepper, and bring to a simmer. Return the ribs to the pot, put the lid on, and slide it into the oven. Let the ribs braise until tender, 2 to 3 hours. (Begin checking the ribs at 2 hours and then check every 20 minutes or so after that.).
  • Remove the pot from the oven and let it rest for 30 minutes. If desired, skim any fat from the surface of the sauce. Serve the ribs in bowls with lots of sauce and sprinkle with torn basil leaves, if desired.
