Even people who think they don't like carrots will eat and enjoy this dish. When I was working as housekeeper and cook for a lawyer years ago, he was so pleased with this recipe that he insisted I cook it whenever he entertained. 2 cups julienned carrots
1/2 cup water
1/4 teaspoon salt
2 tablespoons chopped salted peanuts
1 tablespoon butter
2 teaspoons sugar
Pepper to taste

Steps:

  • In a saucepan, bring carrots, water and salt to a boil. Reduce heat; cover and cook for 10 minutes or until carrots are crisp-tender. Drain. Add the peanuts, butter, sugar and pepper; toss to coat.

I had some shredded carrot to use and was thinking it would be tasty with peanut butter...after a quick search, I came up with this tasty morsel. Adapted from a cookbook by JoAnna Lund. I've also made this with chopped dried fig in place of the raisins; dried cherries or cranberries would be good too.

1/4 cup peanut butter (creamy or chunky)
1 tablespoon orange marmalade or 1 tablespoon apricot marmalade
1/2 cup finely shredded carrot
2 tablespoons raisins

Steps:

  • In a small bowl, combine peanut butter & marmalade; add carrots & raisins. Mix well.
  • Use as a sandwich filling with your favorite bread or enjoy with crackers.

This dish comes together quickly when one person prepares the sauce while another sautes the vegetables. Break the pasta in half before cooking to make serving easier. These noodles complement the pork perfectly, but they also become their own main dish when you add cooked shrimp or chicken.

2 carrots, peeled
1 tablespoon vegetable oil, divided
2 teaspoons grated peeled fresh ginger
3 garlic cloves, minced
1 cup fat-free, less-sodium chicken broth
1/2 cup natural-style peanut butter
1/4 cup low-sodium soy sauce
3 tablespoons rice or white wine vinegar
1 teaspoon chili garlic sauce (such as Lee Kum Kee)
1/4 teaspoon salt
cooking spray
2 cups red bell pepper strips
1 pound snow peas, trimmed
8 cups hot cooked linguine (about 1 pound uncooked pasta)
1/2 cup chopped fresh cilantro

Steps:

  • Shave the carrots lengthwise into thin strips using a vegetable peeler, and set aside. Heat 1 teaspoon oil in a small saucepan over medium heat. Add the ginger and minced garlic; saute 30 seconds. Add chicken broth and the next 5 ingredients (broth through salt); stir until well-blended. Reduce heat, and simmer 7 minutes, stirring occasionally. Remove from heat, and keep warm. Heat 2 teaspoons oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add bell peppers and snow peas; saute 5 minutes or until tender. Remove from heat. Combine carrot, peanut butter mixture, bell pepper mixture, and linguine in a large bowl; toss well. Sprinkle with cilantro. Serve warm or at room temperature.

3/4 tablespoon minced garlic
1 tablespoon minced ginger
1 1/2 tablespoons light soy sauce
3 tablespoons peanut butter
2 tablespoons vegetable oil
1 tablespoon chili oil
3 tablespoons rice vinegar
1 dash crushed red pepper flakes
1 lb cabbage and carrot coleslaw mix
1 celery, thinly sliced
4 scallions, thinly sliced
1/2 tablespoon dried cilantro (or fresh!)
1 tablespoon raisins
sesame seeds

Steps:

  • In medium bowl - whisk together all dressing ingredients.
  • Let sit at least a 1/2 hour.
  • Add slaw ingredients, one by one, mixing together to dressing before adding in the next one.
  • Toss sesame seeds.
  • Great as a side, or can be added with grilled chicken & a whole wheat wrap for a filling lunch! I also love with sliced cucumber too! The raisins are great for sweetness, rather than using pure sugar!

Peanut butter chips and a coconut frosting make this carrot cake special.

3 large eggs eggs
¾ cup vegetable oil
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
¾ cup white sugar
½ cup light brown sugar
1 ¼ teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon salt
2 cups carrots, grated
1 (10 ounce) package REESE'S® Peanut Butter Chips
½ cup chopped walnuts
1 (5 ounce) can evaporated milk
⅔ cup white sugar
¼ cup butter
1 egg
1 cup MOUNDS® Sweetened Coconut Flakes
¾ cup chopped walnuts
½ teaspoon vanilla extract

Steps:

  • Heat oven to 350 F. Grease and flour two 8-inch round baking pans.
  • In large bowl, beat eggs, oil and vanilla. Stir together flour, granulated sugar, brown sugar, baking soda, cinnamon and salt; add to egg mixture and blend well. Stir in carrot, peanut butter chips and walnuts.
  • Pour batter into prepared pans. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire rack. Cool completely. Spread Nutty Coconut Frosting between layers and on top of cake. 10 to 12 servings.
  • Nutty Coconut Frosting: In medium saucepan, combine evaporated milk, granulated sugar, butter and egg. Cook over medium heat, stirring constantly, until mixture comes to a full boil; boil and stir 2 minutes. Cool slightly; add coconut, walnuts and vanilla. Cool to spreading consistency, about 10 minutes, stirring occasionally.
