MARY BERRY'S MINCEMEAT LOAF CAKES
This classic mincemeat loaf cake recipe from Mary Berry is a very useful recipe for using up leftover mincemeat and makes two loaves - one for yourself and one for a friend! A classic, light fruit cake that's perfect with a cup of tea or a glass of mulled wine.

Steps:
- Preheat oven to 180C/160Fan/350F.
- Grease and line 2 1lb (450g) loaf tins.
- Simply mix all the ingredients except for the blanched almonds together until they are well incorporated.
- Spoon the mixture into your loaf tins. Stud with the blanched almonds/halved cherries.
- Bake for 1 hour if using 1lb loaf tins or 35-40 minutes for mini loaf tins or until the cakes are shrinking from the sides, risen and golden and a skewer inserted in the middle comes out clean.

Have no idea where I found this recipe. I love anything with mincemeat and these are no exception. Have a nice spicy taste and great hot for a breakfast treat - enjoy.

Steps:
- Preheat oven to 375 degrees.
- Line with cupcake papers for easy removal.
- Measure all 7 dry ingredients and sift into a bowl.
- Beat egg until frothy.
- Mix in oil, mincemeat and milk (or juice).
- Add to dry mixture.
- Stir to moisten.
- Batter will be lumpy.
- Bake approximately 20 minutes.

These little cakes are delicious. Moist, fruity and nicely spiced! Quick and easy to make as well!

Steps:
- Preheat the oven to 325*F/160*C/gas mark 3. Have ready 12 paper cases or a 12 cup muffin tin. (you don't need to put the cases in a tin, they will cook properly just as is if you place them on a baking sheet.) If using a tin, butter it well.
- Combine all of the ingredients in a bowl and beat together for 2 minutes until light, fluffy and well combined.
- Divide equally amongst your muffin cups/paper cases.
- Bake for 25 to 30 minutes until golden brown and springy to the touch. Transfer to a wire rack and allow to cool completely.
- These are very pretty served dusted with icing sugar.

- For the mincemeat, place the currants, raisins, sultanas, cranberries, apricots, mixed peel, apple, butter, almonds, sugar, cinnamon, mixed spice, lemon zest and juice into a large pan and cook over a low heat, stirring occasionally for about 10 minutes.
- For the pastry, sift the flour and icing sugar into a mixing bowl and rub in the butter until the mixture resembles coarse breadcrumbs.
- Add just sufficient cold water to mix to a firm dough - if you prefer this can be made in a processor. If time allows, wrap the dough in cling film and chill for about 30 minutes.
- On a lightly floured work surface, roll out the pastry to a rectangle slightly larger than the prepared tin, then line the base and sides of the tin with pastry.
