PASTA WITH PHILADELPHIA CREAM CHEESE
I found a similar recipe in our local newspaper, but it did not have the taste and flavor that I feel did it justice. So, I made numerous additions and came up with this tasty, delicious recipe.

Steps:
- In a large cooking pot or pasta pot, fill 3/4 full with hot water and bring to boil.
- Add 2 tablespoons of vegetable oil and 1 tablespoon of salt and penne and rotini pasta.
- Bring to boil and continue to cook uncovered for about 20 minutes or until el dente.
- Meanwhile, in a large frying pan on medium-high heat add olive oil and butter.
- Add onions and garlic and cook for 3 minutes, stirring often, but do not burn.
- Add mushrooms, sweet red pepper, green pepper and stir fry for 4 minutes.
- Add pesto, basil, salt, pepper and red pepper flakes, mix well to blend.
- When pasta is cooked, drain well but reserve 1/2 cup of cooking water.
- Add pasta and 1/4 cup of pasta water to the mixture in the frying pan and stir well to coat.
- Add the cream cheese and stir well to coat the pasta.
- Reserve the remaining 1/4 cup of pasta water to be used later if necessary.
- Serve pasta immediately.
- Refrigerate any unused portions. Cover with plastic wrap.
- To re-warm the next day. Press parchment paper into a frying pan. Using scissors, cut the protruding parchment paper level with the top of the frying pan.
- Add 1/4 cup of pasta water and the pasta and
- stir to blend.
- Cover the frying pan with a lid and heat the pasta on medium heat for about 5 minutes, stirring occasionally.
- Serve hot.

ONE-PAN BAKED CREAM CHEESE PASTA
Steps:
- Heat oven to 400ºF.
- Combine tomatoes, garlic, dry seasonings and 2 Tbsp. dressing in 13x9-inch baking dish sprayed with cooking spray.
- Place block of cream cheese in center of tomato mixture.
- Bake 30 to 35 min. or until tomatoes are tender, stirring after 20 min.
- Add pasta, boiling water and remaining dressing to ingredients in baking dish. Use back of spatula to gently press pasta into boiling water so most the pasta is covered with water. Cover with foil.
- Bake 20 min. Remove baking dish from oven. Stir ingredients in baking dish; cover. Let stand 5 min.
- Sprinkle with parsley before serving.

- Cook pasta as directed on package, omitting salt. Meanwhile, cook and stir bacon in large skillet until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings from skillet.
- Add remaining ingredients to reserved drippings; cook on low heat 3 to 5 min. or until cream cheese is completely melted and mixture is well blended, stirring frequently.
- Drain pasta; place in large bowl. Add cream cheese sauce and bacon; mix lightly.

Steps:
- Preheat oven to 375 degrees.
- Cook pasta according to directions on the box, set aside.
- Brown the ground beef, onion, and garlic until cooked through.
- In a bowl, combine 8 ounces softened cream cheese, 1 cup sour cream, and one egg. Blend thoroughly.
- Add spaghetti sauce to the cheese mixture. Blend thoroughly.
- Add one cup shredded Italian cheese. Mix together.
- In a casserole dish, combine 13.25 oz (one box) whole wheat rotini, ground beef mixture, and sauce blend.
- Top with remaining 1/2 cup Italian Cheese.
- Bake uncovered for 25-35 minutes, or until cheese is bubbly.
