THE BEST TRADITIONAL OLIEBOLLEN (DUTCH DONUTS) (SO DELICIOUS)
Oliebollen aka Dutch Donuts are eaten at New Year's Eve. A real dutch tradition. They're crispy on the outside and soft and juicy on the inside. Fill them with currants and apple or just let them be au naturel. And don't forget to sprinkle some icing sugar on them (it's a sweet tooth treat).

Steps:
- Wash the raisins and leave them in a small bowl, just below water level for about 1 hour.
- Melt the butter on low heat. Warm the milk to 100 °F / 37 °C.
- Stir the yeast in the milk.
- Mix the flour, salt, and sugar in a bowl and stir the eggs, one by one, through the batter.
- With a whisk mix the beer through the dough, bit by bit.
- Stir until all lumps are gone.
- Add the milk-yeast mixture, butter, and cinnamon and mix well.
- At last, add the raisins and the apple and stir slowly with a wooden spoon for a few minutes.
- Wet a towel with lukewarm water and lay this over the bowl. Top with plastic foil.
- Let the dough rise for about one hour in a warm area.
- Heat the sunflower oil to 350 °F / 180 °C.
- After this hour whisk gently with a wooden spoon through the batter.
- With two spoons make small balls and place them in the heated oil.
- Fry the donuts for 3 minutes at each site. Lay kitchen paper in a colander and get the donuts on top after baking, to get rid of excess oil.
- Dust the donuts with powdering sugar before eating them. They're delicious eaten warm and cold.

Steps:
- Soften yeast in lukewarm water.
- Add remaining ingredients, using enough water to make a soft drop batter.
- Let rise until light.
- While dough is rising, preheat oil to 365°F.
- Drop batter from a tablespoon into hot oil and fry until golden brown.
- Dip spoon into cold water between doughnuts to prevent batter from sticking.
- Drain doughnuts on paper towels and roll in confectioners' sugar.

OLIE-KOECKEN
Steps:
- Sprinkle the yeast in the water in a small bowl and sprinkle with the sugar. Let it stand for a moment, then stir to dissolve the yeast. Set aside in a warm place. In the meantime melt the butter and cool. Place the raisins in a saucepan, cover with water and bring to a boil. Allow them to boil for a minute and then turn off the heat. Let them stand for 5 minutes and drain. Pat them dry with paper towels and mix them with 1 tablespoon of flour. Place the rest of the flour in a large bowl, stir in the salt, cinnamon, cloves, and ginger, make a well in the middle and pour in the yeast. Stir from the middle and slowly add the melted butter and the milk. The dough should be very thick and hard to stir. Then add raisins, apples, and almonds and combine thoroughly. Allow this batter to rise for about 1 hour. When doubled in bulk, stir down the dough. Heat the oil to 350 degrees F. Scoop out a heaping tablespoon of dough and push it off the spoon with the aid of another spoon and let it (carefully) drop into the hot oil. They should be at least 2-inches in diameter. Fry the olie-koecken for about 5 minutes on each side. Drain on paper towels. The original recipe does not tell us to sprinkle or roll them in the sugar. They are very good plain, but if you prefer you can dust them with confectioners' sugar.

Steps:
- Cook the macaroni according to package directions.
- In a large skillet, over medium heat, brown ground beef with onion, till there is no pink left in the beef and then add garlic for a few minutes to cook, then drain beef mixture.
- Return pan to heat and add the can of diced tomatoes, salt and pepper to taste and allow to heat for about 5 minutes.
- Add completely drained pasta and allow to blend for several minutes.
- Add cheese and stir until blended and melted.
- Note: We always had this with sliced bread and butter and either apple sauce with cinnamon or green beans with butter.
