An invention of mine to make use of some leftover chicken breasts. Its ingredients mainly belong to the Far-Eastern cuisine, but it also has a slight Latin twist and a Lebanese hint! ENJOY

1 tablespoon sesame oil
½ teaspoon minced garlic
1 pinch salt
¼ cup pine nuts
2 cooked, boneless chicken breast halves, diced
1 tablespoon peanut butter
1 dash soy sauce
3 pickled jalapeno pepper slices, chopped
½ cup water

Steps:

  • Heat the sesame oil in a skillet over medium heat. Stir in the garlic and salt. Cook and stir 1 minute, then stir in the pine nuts, and cook until golden, about 5 minutes. Add the diced chicken breast, and cook a few minutes to reheat. Stir in the peanut butter, soy sauce, and jalapeno pepper until the peanut butter has melted. Pour in the water, and bring to a simmer. Cook and stir until the sauce has thickened, about 5 minutes more.

1/2 cup water
2 teaspoons sugar
1 teaspoon black pepper
2 teaspoons salt
2 tablespoons oil
1/4 cup vinegar
2 teaspoons peanut butter
2 teaspoons soy sauce
1 garlic clove, minced

Steps:

  • Mix all ingredients together and marinate chicken for 1 hour or longer. Turn chicken once or twice to ensure that all pieces are covered in the marinade. Remove chicken from marinade and discard. Place chicken on grill or in a large skillet with a small amount of oil and cook until done.

2tbsp vegetable oil
8 skinless boneless chicken thighs, cut into chunks
1 onion, finely chopped
3 garlic cloves, crushed
2 red chillies, finely sliced (deseeded if you don't like it too hot)
2tsp fresh ginger, grated
2tbsp garam masala
100g smooth peanut butter
400ml coconut milk
400g can chopped tomatoes
coriander , ½ roughly chopped, ½ leaves picked
roasted peanuts, to serve
cooked basmati rice, to serve

Steps:

  • Heat 1 tbsp of the oil in a deep frying pan over a medium heat. Brown the chicken in batches, setting aside once golden. Fry the onion for 8 minutes until softened. Then add the garlic, chilli and ginger and fry in the other 1 tbsp oil for 1 min. Add the garam masala and fry for 1 min more.
  • Stir in the peanut butter, coconut milk and tomatoes, and bring to a simmer. Return the chicken to the pan and add the chopped coriander. Cook for 30 mins until the sauce thickens and the chicken is cooked through.
  • Serve with the remaining coriander, roasted peanuts and rice, if you like.

½ cup hot water
½ cup creamy peanut butter
¼ cup chile paste
¼ cup soy sauce
2 tablespoons vegetable oil
2 tablespoons white vinegar
4 cloves garlic, minced
2 teaspoons grated fresh ginger root
¼ teaspoon ground red pepper
3 pounds skinless, boneless chicken breast halves - cut into bite-size pieces

Steps:

  • In a large bowl, gradually stir hot water into peanut butter. Stir in chili paste, soy sauce, oil, vinegar, garlic, ginger and ground red pepper. Place chicken in marinade, and turn to coat evenly. Cover, and refrigerate overnight, turning occasionally.

1 cup creamy peanut butter
1/4 cup low sodium soy sauce
1/4 cup lemon juice

Steps:

  • Place chicken in a plastic Ziplock bag or a glass pan.
  • In a bowl, whisk together the peanut butter, soy sauce, lemon juice, vinegar, brown sugar, garlic powder, red pepper flakes and ginger. Pour this marinade over chicken.
  • Chill and allow the chicken to marinate for 6 - 8 hours, or up to 24 hours.
  • Lightly oil grill.

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add chicken, a few pieces at a time, and shake to coat. , In a large skillet, brown chicken in oil on all sides; remove to paper towels. Drain, reserving 2 tablespoons drippings. , In the drippings, saute onion and garlic until tender. Add the tomato sauce, water, peanut butter, sugar, vinegar and chili powder. 1/2 cup peanut oil
1/4 cup white wine vinegar
1/4 cup soy sauce

Steps:

  • Mix all ingredients together until well blended.
  • The neatest way to do it is to pour the 1/2 cup oil into a large glass measuring cup (2 cup size or larger), add peanut butter to the oil until the total comes out to 1 cup.
  • I continue adding vinegar, soy sauce& lemon juice to the measuring cup in this manner.
  • I pour it all out into a small mixing bowl to add the seasonings.
  • This way the peanut butter pours out w/the oil instead of making a mess in the measuring cup.
  • I use jarred garlic& ginger- this accounts for the 5 minutes prep time.
  • I mainly use this for tofu chunks or chicken- marinate at least one hour or overnight.
  • If using chicken'tenders' set aside some of the marinade (before adding the rest of it to chicken) to use as a dipping sauce.
