TURKEY BACON AND BROCCOLI QUICHE
A turkey bacon lattice topper adds an impressive element to this classic quiche combination. Using a prepared crust makes it super easy to pull together.

- Preheat the oven to 400 degrees F. Unroll the pie crust and fit it into a 9-inch deep-dish pie plate.
- Arrange 6 strips of the bacon one above the other in a square on a baking sheet; the edges should touch but not overlap. Working with one of the remaining strips at a time, weave them over and under to form a lattice.
- Whisk the Cheddar, milk, eggs, broccoli, 1 teaspoon salt and a few grinds of pepper in a medium bowl until well combined. Pour into the pie crust. Bake the bacon lattice and quiche on separate baking sheets until the bacon is just starting to crisp up and the quiche is slightly set but still jiggly in the center, about 15 minutes.
- Use 2 spatulas to transfer the bacon lattice to the top of the quiche. Continue baking until the bacon is golden brown and crisp and the quiche is set, 15 to 20 minutes more. Let stand for 10 minutes before serving.
TURKEY AND CHEDDAR QUICHE
Add fresh dill to this shredded-turkey quiche with a homemade crust.

- Pulse together the flour, sugar and salt in a food processor fitted with a metal blade. Add about a third of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, pulsing quickly a few times as you do it, add the ice water through the tube. Squeeze some dough between your fingers, it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly and take care not to overwork or the dough will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
- Lightly flour a work surface, then roll the dough into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
- Preheat the oven to 375 degrees F.
- Press a piece of foil over the chilled crust, then fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
- Sprinkle the scallions evenly into the crust. Combine the turkey with the Cheddar and sprinkle it in an even layer over the scallions.
- Whisk together the heavy cream, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl. Stir in the dill.
- Pour the custard over the filling. Lower the oven temperature to 350 degrees F and bake until set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

Bacon, green chiles and pepper jack are baked into a cilantro-and-chile powder custard in a homemade crust.

TURKEY BACON QUICHE
The secret to this recipe? I whisk the eggs with sour cream and Greek yogurt instead of the traditional milk, half and half, or cream. The result is a delicious custard like filling that the guests at Belle Oaks Inn and Boothe House (where I am the resident innkeeper/chef) absolutely love!

- Preheat oven to 350 degrees. Spray a 9" tart pan with non-stick spray and set aside.
- Roll crust into tart pan and press into bottom and up sides of pan. Trim any excess. You may blind bake the crust if you wish, but it is not necessary.
- Cook turkey bacon in a saute pan on stove top until crisp. Cut turkey bacon in 1/2 inch pieces and spread on bottom of pan. Add minced shallots.
- In a medium bowl, whisk the eggs with sour cream and yogurt. Add salt, pepper, and paprika.
- Pour egg mixture slowly into crust. Add remaining minced shallot evenly over the top of the egg mixture.
- Bake 30 minutes, or until a toothpick or knife inserted into center of quiche comes out clean. Cool on a wire rack in pan for 5 minutes.
- Slice green onions, including green parts, and spread over top of quiche. Remove tart pan sides, slice into 8 wedges, and serve warm.

- Place unthawed pie crust on a baking sheet. In a medium bowl, mix the bacon, onions, and both cheeses. Pour this mixture into the crust.

- Preheat oven to 450°. Line unpricked crust with a double thickness of heavy-duty foil. Bake 8 minutes. Remove foil; bake until golden brown, 5-7 minutes longer. Reduce heat to 375°., Sprinkle turkey into pastry shell. In a large bowl, whisk eggs and cream. Stir in the shredded Swiss cheese, onions, pimientos, oregano, parsley, salt and pepper. Pour into crust. , Bake 20 minutes. Arrange Swiss cheese strips in a lattice pattern over quiche. Bake until a knife inserted in the center comes out clean, 10-15 minutes longer. Let stand 10 minutes before cutting.

- Preheat oven to 375 degrees F. Grease a 9 inch pie pan with nonstick cooking spray. Add potato slices all around the base and sides. Cut some in half if you need them to fit on the sides. Spray the potatoes with additional nonstick cooking spray. Bake for 20 minutes. Once done, remove from oven and allow to cool for 5 minutes. Keep heat in oven.
- While potato crust is baking, cook the turkey bacon. After turkey bacon cooks, remove and transfer to a plate and set aside.
- Add olive oil to the same skillet you cooked your turkey bacon; saute jalapeno, diced tomato, and diced bell pepper for a few minutes. Then add spinach and saute for another few minutes, or until spinach wilts. Remove from heat and set aside.
