When blackberries are in season, there is nothing that says summer like this simple, delicious cobbler. Adapted from The Pioneer Woman Cooks, this easy cobbler will work with a multitude of fresh (or frozen if you must)fruits. Incredible with homemade vanilla ice cream!

1/2 cup butter, melted
1 1/4 cups sugar
2 tablespoons sugar
1 cup flour
1 1/4 teaspoons baking powder
1/8 teaspoon salt
1 cup milk
2 cups fresh blackberries (or frozen)

Steps:

  • Preheat oven to 350 degrees. Grease a 3-quart baking dish.
  • In a medium bowl, whisk 1 cup of the sugar with the flour, baking powder, salt and milk. Whisk in melted butter.
  • Meanwhile, rinse the blackberries and pat them dry. Pour the batter into the greased baking dish and sprinkle blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries.
  • Bake for one hour, or until golden brown and bubbly. When 10 minutes of cooking time remain, sprinkle the remaining two tablespoons of sugar over the top, and let that get all mouth-wateringly crispy and carmelized.
  • Try to stop drooling.
  • Serve with vanilla ice cream and enjoy!

4 cups berries, rinsed and drained
1 cup sugar
2 Tbsp. cornstarch (or tapioca if you prefer)
2 cups all-purpose flour
6 - 10 Tbsp. sugar (taste to get to the sweetness you prefer & we like ours on the sweeter side)
1 Tbsp. baking powder
1/2 tsp. salt
6 Tbsp. cold butter
1/2 cup heavy cream
2 beaten eggs
extra sugar to sprinkle on top

Steps:

  • In a large mixing bowl, gently blend the blackberries with sugar and cornstarch/tapioca.
  • In another large mixing bowl, sift together the flour, sugar, baking powder, and salt.
  • Cut the butter into the flour mixture until mixture resembles coarse crumbs.
  • In a separate bowl, combine heavy cream with the beaten eggs.
  • Add the cream-egg mixture to the flour-butter mixture.
  • Stir just to moisten; do not over stir.
  • Pour berry mixture into a baking dish.
  • Bake at 400 degrees for 20 minutes to get the berries partially cooked and thickened. This prevents the biscuits from absorbing the juice before they're fully baked.
  • Remove the hot berries from the oven and spoon cobbler biscuits on top in nice-sized mounds.
  • Sprinkle the biscuits liberally with sugar.
  • Turn the oven temperature down to 375 degrees and bake for another 20 - 30 minutes on the lowest rack to prevent the biscuit topping from burning.

  • Pour batter on top of melted butter in baking dish.

  • heat, cook the blackberries and 1 1/4 c sugar until mixture begins to boil.
  • Add blackberries to top of batter and bake in 350 deg preheated oven until batter begins to brown (approx. 20 mins) Cover with as much brown sugar topping as desired.

  • Cool and top with vanilla ice cream.

3 pounds firm but ripe nectarines, halved, pitted, cut into 1/2-inch-thick wedges
6 cups fresh blackberries (about five 6-ounce baskets)
1 tablespoon fresh lemon juice
2 tablespoons (1/4 stick) unsalted butter, cut into small pieces
For topping
2 cups all purpose flour
1/2 cup plus 1 tablespoon finely chopped crystallized ginger
1/3 cup plus 1 tablespoon sugar
1 tablespoon baking powder
1 teaspoon grated lemon peel
3/4 teaspoon salt
6 tablespoons (3/4 stick) chilled unsalted butter, cut into pieces
3/4 cup plus 2 tablespoons chilled whipping cream
1/4 teaspoon ground cinnamon

  • Place biscuits atop hot fruit, spacing closely. Mix 1 tablespoon crystallized ginger, 1 tablespoon sugar and 1/4 teaspoon cinnamon in small bowl; sprinkle over biscuits. Bake cobbler until fruit is tender and biscuits are golden, about 25 minutes. Serve warm or at room temperature.
