1/2 cup butter, melted
1 egg
1 tablespoon Gold Medal™ all-purpose flour
1 tablespoon water
24 Reese's peanut butter cups miniatures, unwrapped
3/4 cup M&M's® peanut butter chocolate candies

Steps:

  • Heat oven to 350°F. In large bowl, mix brownie mix, melted butter, egg, flour and water until well blended. Let stand 15 minutes.
  • Shape dough into 24 (1 1/2-inch) balls. For each cookie, flatten ball into palm of hand to about 2-inch circle. Press 1 peanut butter cup, bottom side down, into center. Wrap edges of dough around it to completely enclose; reshape into ball. Place 2 inches apart on large ungreased cookie sheets. Press M&M's™ candies on tops of cookies.
  • Bake 10 to 12 minutes or until edges are set. Cool 10 minutes; remove from cookie sheets to cooling racks. Cool completely, about 30 minutes. Store covered in airtight container.

1 cup chocolate, melted

Steps:

  • Prepare a cupcake tin with 6 liners.
  • Stir peanut butter and powdered sugar together until smooth.
  • Spread 1 to 2 tablespoons of chocolate in the bottom of each cupcake liner.
  • Dollop 1 to 2 teaspoons of the peanut butter mixture on top of the chocolate.
  • Cover each dollop of peanut butter with more chocolate and smooth out the top.
  • Refrigerate for 1 hour or until chocolate has hardened.

1 1/4 cups (336 grams) creamy conventional peanut butter ((NOT 'natural')**)
10 tablespoons (142 grams) unsalted butter
4 ounces (113 grams) semisweet baking chocolate, chopped
1 cup (200 grams) granulated sugar
2 large eggs plus 1 egg yolk
1 teaspoon vanilla extract
1/2 cup (64 grams) all-purpose flour
1/4 cup (25 grams) unsweetened cocoa powder, sifted
1/4 teaspoon fine salt

Steps:

  • Place the peanut butter in a heat safe bowl and microwave for 20 to 30 seconds, or until pourable but not super hot.
  • Line a metal 8-inch square pan with parchment paper, leaving an overhang. Spread the peanut butter into an even layer in the pan. Freeze for 1 hour or until solidified. Use the parchment to remove from pan and return peanut butter sheet to freezer. Keep frozen while making the brownie batter.
  • Preheat oven to 350°F. Line the square pan again with parchment paper, leaving an overhang.
  • In a large microwave-safe bowl combine the butter and chocolate. Microwave in 30-second bursts, stirring between each burst, until the mixture is melted and smooth. Add the sugar to the hot butter mixture and whisk vigorously until combined. Allow to cool until just barely warm.
  • Add in eggs, yolk, and vanilla extract and whisk for about 1 minute, or until very well combined.
  • Use a rubber spatula to stir in flour, cocoa powder, and salt until just combined.
  • Pour half of the batter into prepared pan and smooth out. Carefully place the frozen peanut butter sheet over the batter. Pour remaining batter on top, covering completely.
  • Bake in the preheated oven for about 30 minutes, or until cooked through but still very slightly gooey in the center. Let cool in pan 30 minutes. Remove from pan and allow to cool for another 30 minutes before slicing and serving.
  • Brownies can be stored in an airtight container at room temperature for up to 3 days or in the fridge for up to 5 days. Serving chilled makes the brownies extra fudgy!

1 and 1/4 cups (156g) all-purpose flour (spoon & leveled)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (115g) unsalted butter, softened to room temperature
1/2 cup (100g) packed light or dark brown sugar
1/4 cup (50g) granulated sugar
1 large egg, at room temperature*
3/4 cup (185g) creamy peanut butter*
1 teaspoon pure vanilla extract
20 Miniature Peanut Butter Cups, unwrapped
1 cup (180g) semi-sweet chocolate chips
2 teaspoons creamy peanut butter

Steps:

  • Whisk the flour, baking soda, and salt into a bowl until combined. Set aside.
  • In a large bowl using a hand-held mixer or stand mixer with paddle attachment, cream the butter, brown sugar, and white sugar together on medium speed until combined. On low speed, beat in the peanut butter, egg, and vanilla. Turn the mixer to high and beat until light in color and smooth. Turn the mixer to low and slowly pour in the dry ingredients. Mix until combined and a dough is formed.
  • Cover tightly and chill the cookie dough for at least 1-2 hours and up to 3 days. Chilling is mandatory.
  • Remove cookie dough from the refrigerator. Preheat oven to 350°F (177°C). Take 1 Tablespoon of dough and roll into a ball. Take another 1 Tablespoon of dough and roll into a ball. Stick a peanut butter cup into one ball, kind of like a "cradle" as shown above. Top the peanut butter cup with other cookie dough ball and seal down the sides so that the peanut butter cup is securely stuffed inside. Roll the large cookie dough ball in your hands to ensure it's smooth. Repeat with the rest of the dough and peanut butter cups.
  • Bake the cookies for 12-13 minutes or until very lightly browned on the sides. Some cookies may be taller than others, depending how the peanut butter cup was positioned inside. Just press the cookies down a bit to flatten them out. Allow to cool on the cookie sheet for at least 10 minutes and transfer to a wire rack to cool completely.

160g (5¾ oz / ½ cup + 2 tablespoons) smooth peanut butter
220g (8 oz / 1 cup) light brown sugar
1 large egg, plus 2 large egg yolks
100g (3½ oz / ¾ cup) all-purpose flour
1 teaspoon bicarbonate of soda (baking soda)
½ teaspoon fine sea salt
100g (3 oz) salted peanuts, roughly chopped
For the brownie layer
150g (5½ oz / 1⅓ sticks) unsalted butter, diced, plus extra for greasing
85g (3 oz / 1 cup) cocoa powder
100g (3½ oz / ½ cup) caster (superfine) sugar
100g (3½ oz / ⅓ cup + 2 tablespoons) light brown sugar
¼ teaspoon fine sea salt
1 teaspoon vanilla extract
2 large eggs
70g (2½ oz / ½ cup + 1 tablespoon) all-purpose flour

Steps:

  • Preheat the oven to 180°C (350°F), Gas Mark 4. Lightly grease a 13x9" baking tin and line with a piece of parchment paper that overhangs the two long sides. Secure in place with metal clips.
  • For the peanut butter cookie layer, mix the peanut butter and brown sugar together in a large bowl for a couple of minutes until combined and slightly lightened. Add the egg and egg yolks and beat together for a further 2-3 minutes. Add all the remaining ingredients (reserving 3 tablespoons of the peanuts for sprinkling over later) and gently mix together to form a uniform cookie dough. Spread the cookie dough in an even layer in the prepared tin, then set aside.
  • For the brownie layer, add the butter and cocoa to a small saucepan over a medium heat, stirring constantly, until melted and smooth. Remove from the heat and set aside. Place the sugars, salt, vanilla and eggs in a large bowl and whisk together with an electric mixer for 2-3 minutes or until slightly thickened and pale. Pour in the melted butter mixture, mixing briefly until combined, then fold in the flour. Pour the batter over the cookie layer and spread into an even layer, then sprinkle over the reserved peanuts.
  • Bake for about 25-30 minutes, or until a skewer inserted into the middle comes out with a few moist crumbs.
  • Leave the brookies to cool completely in the tin, before using the parchment paper to lift them from the tin and cutting into squares.Store in a sealed container for 3-4 days.
