PEANUT BUTTER PRETZEL COOKIES

Steps:

• Line 2 cookie sheets with parchment. Position racks in the upper and lower thirds of the oven and preheat to 350 degrees.
• In a bowl, whisk together the flour and baking soda.
• Using an electric mixer, beat the butter, sugar and peanut butter on medium speed until fluffy, about 5 minutes.
• Add the eggs, 1 at a time, beating well after each addition and the vanilla.
• With the mixer on low speed, gradually add the flour mixture, beating until just combined.
• Stir in peanuts.
• Place the pretzels in a bowl. Scoop dough by rounded Tbs.full and drop a few balls of dough in the bowl and toss to coat.
• Place the cookies on the prepared pans.
• Bake, rotating the pans after 10 minutes, until golden but still soft to the touch, about 15 minutes.
• Let cool slightly before transferring to racks to cool.

• In a saucepan over medium heat, whisk to combine butter, milk, and sugar until smooth and melted. Allow to cool.In a large bowl, combine oats, pretzels, and salt. Pour cooled peanut butter mixture over and stir to combine. Fold in 1/2 cup chocolate chips.Drop spoonfuls of batter onto parchment paper. Allow to cool until hardened, about 15 minutes.Melt remaining chocolate chips in a bowl in the microwave at 30-second intervals, stirring in-between, until melted.With scissors, snip off one corner and use as a piping bag to drizzle melted chocolate over each cookie. Combine the flour, baking soda, and salt; stir into the peanut butter mixture. Fold in chocolate chunks. Drop by 1/4 cupfuls 3 inches apart onto ungreased baking sheets.
• Bake for 12 to 14 minutes in the preheated oven, or until edges are golden. Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.
