1/4 Cup butter, softened
1/2 Cup sugar
1/2 Cup no-stir natural peanut butter
2 eggs
1 teaspoon vanilla extract
1 1/2 Cups mashed bananas, about 3 large
1 1/4 Cups white whole wheat flour or whole wheat flour
1 Cup all-purpose flour
2 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
3/4 Cup non-fat milk
1/3 Cup mini chocolate chips, plus additional for sprinkling on tops

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Lightly spray muffin tin with non-stick cooking spray or line with cupcake liners.
  • In the bowl of a stand mixer (or using an electric hand mixer), cream together butter and sugar. Add in peanut butter, eggs, vanilla, bananas, and milk. Mix until well-combined. Set aside.
  • In a medium bowl, whisk together flours, baking soda, cinnamon, nutmeg, and salt. Slowly add dry ingredients to wet ingredients and stir until just combined.
  • Stir in mini chocolate chips.
  • Fill each muffin cup about 3/4 full. Bake for 8-11 minutes or until toothpick inserted in the center comes out clean.

Incredibly moist and delicious Peanut Butter Banana Chocolate Chip Muffins packed with peanut butter flavor and sweet morsels of chocolate. For mornings when you just need a little chocolate.

3 ripe bananas (3 to 4 - approx 1 1/2 cups mashed)
6 tbsp butter softened
1/2 cup creamy peanut butter
3/4 cup light brown sugar
1 egg
1 tsp vanilla
1 1/4 cups flour (divided)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3/4 cup semi-sweet chocolate chips
1/2 cup Reese's peanut butter chips

Steps:

  • Preheat the oven to 325 degrees. Peel and mash the bananas.
  • Add in the egg, butter, peanut butter, brown sugar and vanilla and mix until well combined.
  • Combine 1 cup of flour and remaining dry ingredients, reserving 1/4 cup of flour. Add the dry ingredients and stir just until combined. Do not overmix.
  • Combine Reese's peanut butter chips, and chocolate chips in a bowl. Sprinkle remaining 1/4 cup of flour over the chips and gently coat the chips with flour.
  • Add to batter and mix just until combined.
  • Lightly grease a muffin tin or line with baking cups.
  • Divide batter evenly among 12 cups.
  • Bake muffins for 20-25 minutes or until golden brown. Let the muffins cool slightly before removing from tin. Enjoy!

1/2 cup peanut butter

2 cups mashed banana, 4 medium
2 teaspoons pure vanilla extract
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
3/4 cup mini chocolate chips, plus 2 tablespoons, divided

Steps:

  • Preheat the oven to 350°F. Place 20 liners in 2 muffin tins. Beat the sugar and oil until mixed together. Add the peanut butter, eggs, banana, and vanilla and mix again. Stir together the flour, baking powder, baking soda, salt, and cinnamon and slowly add to the banana mixture. Gently stir in 3/4 cup mini chocolate chips. Spoon the mixture evenly into the liners. Sprinkle the remaining chocolate chips on top. Bake 18 minutes. Remove the pan from the oven and let the muffins cool in the pan for 2 minutes before removing them and placing them on a wire rack. Let cool completely. Store in a tightly sealed container. These muffins can also be frozen for later.

This is our favourite Peanut Butter muffin recipe, (having tried a few). The balance of flavours is just right, they're not too heavy and very moreish. That said I deliberately make just six at a time! However should you want to bake a full batch this recipe doubles with equal success.

3/4 cup flour (96g)
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 cup sugar
1 egg
1/4 cup milk
1 tablespoon butter (melted)
1/3 cup peanut butter, i use half crunchy half smooth (86g)
1/3 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350/gas 4.
  • Measure flour using the spoon (not scoop) method.
  • Into a medium sized bowl sift flour, baking powder, baking soda and salt. Whisk to combine and set aside.
  • In a small jug mix vanilla extract and milk, set aside.
  • In a large bowl mix melted butter with peanut butter followed by sugar, beat until light and fluffy.
  • With a fork, whisk egg until lightly beaten and in two steps pour into butter/sugar mixing to combine.
  • Next in three steps start to add the flour alternating with the milk (flour, milk, flour, milk, ending with flour).
  • Finally fold in chocolate chips.
  • Spoon batter into paper lined muffin tin and bake for 20-23 minutes.

3 tablespoons vegetable oil
3 tablespoons peanut butter
1 large banana, mashed
1 egg
1 teaspoon vanilla
3/4 cup all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 cup low-fat yogurt
3 tablespoons semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F.
  • Spray 12 muffin cups with vegetable spray.
  • In large bowl or food processor, combine sugar, oil, peanut butter, banana, egg and vanilla; mix until well blended. In another bowl combine flour, baking powder and baking soda; add to batter and mix just until blended. Stir in yogurt and chocolate chips.
  • Fill muffin cups half-full. Bake for 15 to 20 minutes, or until tops are firm to the touch and cake tester inserted in the center comes out dry.

Steps:

  • Preheat the oven to 375°F.
  • In a large bowl, mix together the flour, brown sugar, baking powder and salt.
  • In a separate bowl, beat together the peanut butter, oil, eggs, milk and bananas.
  • Stir the wet ingredients into the dry ingredients just until moistened.
  • Spoon the batter into 12 well greased muffin cups. Bake for 20 to 25 minutes, or until a toothpick inserted in the centre of a muffin comes out clean. Makes 12 muffins.
