This icing is good on any cake, but it is to die for on chocolate! The reason it is called "Mrs. Echard" icing is that it is a Must at every dinner at my mom's church, and it's made by a Wonderful lady there named Virginia Echard.

8 ounces cream cheese, softened
3 cups powdered sugar
1 teaspoon vanilla
12 ounces Cool Whip

Steps:

  • Mix cream cheese and sugar well with mixer.
  • Add vanilla and Cool Whip; mix well.
  • MUST be refrigerated, except when serving.
  • Ices 1 triple layer cake or 2 other cakes.
  • When using on layers just ice top of layers and let icing ooze over sides.
  • It's easy and attractive to take somewhere.

I seen this on Paula Deen's Paula's Home Cooking and have been making this one ever since! Makes a great cake for Christmas or Valentine's Day! Very pretty cake too; I take the coconut and pecans and press only into the sides of the cake ( I make it as a round two layer cake), makes for a very pretty presentation!!!

2 cups sugar
1 cup butter (2 sticks)
2 eggs
2 tablespoons cocoa
2 ounces red food coloring
2 1/2 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla
1/2 teaspoon baking soda
1 tablespoon vinegar
8 ounces cream cheese, softened
1/2 cup butter (1 stick)
1 cup marshmallow creme
1 (1 lb) box powdered sugar
1 cup coconut, shredded (optional)
1 cup pecans, chopped (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a mixing bowl cream sugar and butter, beat until light and fluffy.
  • Add eggs on at a time.
  • Mix cocoa and food coloring together in a small bowl; add to mixture and mix well.
  • Sift together cake flour and salt.
  • Add flour to creamed mixture alternately with buttermilk, beginning and ending with flour.
  • Blend in vanilla.
  • In a small bowl combine baking soda and vineager. Add to mixture.
  • Pour batter into 2 9inch or 3 8 inch cake pans.
  • Bake 20-25 minutes or until done.
  • Cool completely before frosting.
  • For Icing:.
  • Blend cream cheese and butter together in a mixing bowl.
  • Add marshmallow creme and sugar; blend well.
  • Fold in coconut and nuts if desired (or what I always do is press them into just the sides of the cake after I get the icing on it; very pretty this way!).
  • Spread between layers and on top and sides of cooled cake.

This is a recipe for cream cheese icing that has been adapted to ice a single 9" cake- it's delicious with carrot cake. I am always having to have to reduce cream cheese recipes to suit my needs- they always make way too much for me to use! So here is an adapted version that I will use forevermore, and hope others will find helpful. Enjoy!

6 tablespoons cream cheese
1/4 teaspoon vanilla
3 tablespoons butter or 3 tablespoons margarine
2/3 cup icing sugar

Steps:

  • Measure out the ingredients into a bowl.
  • Using an electric mixer, or vigorous your hand mixing skills, blend the ingredients till smooth- about 1-3 minutes, depending on your vigor :).
  • Scoop the icing onto your cake/whatever you were going to ice, and spread evenly.

100g butter , softened
1 tbsp orange juice (optional)
100g icing sugar , sieved
200g full fat cream cheese

Steps:

  • Beat the softened butter to a soft and even consistency. Add the orange juice, if using, then the icing sugar. Cream until you have a smooth, soft buttercream consistency.
  • Add the cream cheese and work it in - don't beat it in, just slowly mix with a wooden spoon. Depending on how soft the mixture is, you may want to put it in the fridge for 10 mins at this point. If it's runny, it will firm up again. It should be spreadable and not run off the cake.
