TURKEY AND ZUCCHINI BURGERS
Make lean yet juicy burgers by combining ground turkey with grated zucchini and chopped scallion.

- Combine the turkey, zucchini, carrot, chili powder, coriander, cumin, scallions, garlic, 1 teaspoon salt and a few grinds of pepper in a large bowl until well blended. Form into four 1/2-inch-thick patties and brush both sides of each with the oil.
- Heat a large nonstick skillet over medium heat. Add the patties and cook, flipping once, until browned on the outside and cooked through, 5 to 8 minutes per side. Serve on the toasted buns with lettuce, mustard and red onion; add pickle spears on the side.

- Chop your garlic and veggies.
- Cook bacon in a large nonstick skillet over medium high heat until crisp. Wipe excess grease from pan and return skillet to heat.
- While bacon cooks, combine turkey meat, garlic, shallot or onion, thyme, cilantro or parsley, bell pepper, serrano or jalapeno pepper, cumin, hot pepper sauce, grill seasoning or salt and pepper. Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with vegetable oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like.
- Pile cooked cheeseburgers into buns. Spread sweet relish or jelly on bun tops and set red leaf lettuce into place, using the relish or jelly as glue. Top cheeseburgers with 2 slices of cooked, crisp bacon or turkey bacon and lettluce. Then serve with tortilla chips, tossed salad and/or spicy o-nuts.
TURKEY-ZUCCHINI BURGERS
Consider this your dependable, blank-slate turkey burger that will always be juicy and well-seared no matter how you embellish it. Add ground spices, such as cumin or garlic powder; chopped herbs; or Worcestershire sauce or anchovies for umami - or leave the patty alone. With just a swipe of ketchup or mustard, it'll hold its own. Grated zucchini keeps the burgers moist, mayonnaise helps bind and brown them, and salting only on the outside ensures that the meat stays tender. (For a cheeseburger, drape sliced cheese on the patties before the last 2 minutes of cooking and cover the pan.)

- Lightly grease a plate with neutral oil and set aside. In a medium bowl, mix together the turkey, zucchini and mayonnaise. Form 4 patties, each about 4 1/2 inches wide (about 5 ounces). Press a small dimple in the center of each patty, then place the burgers on the plate and refrigerate to firm up for at least 5 minutes (or keep them covered for up to 2 days).
- Heat a large (12-inch) cast-iron or nonstick skillet over medium-high. Add about 1 tablespoon oil to the skillet to lightly coat. Generously season the tops of the patties with salt and pepper. Add the patties, seasoned-side down, to the skillet and cook until seared and dark brown, 3 to 5 minutes. (Don't press down; that'll release juices.) Season the tops generously with salt and pepper, then flip and cook until cooked through, 3 to 5 minutes, turning the heat down as necessary to avoid scorching.
- Transfer to a clean plate and let rest for at least 5 minutes before building into a burger on the buns with desired toppings and condiments.
SIMPLE SAVORY TURKEY BURGERS WITH ZUCCHINI RELISH
A "Burger of the Month" from Everyday with Rachael Ray. I switched up the recipe a bit, as I don't keep fresh herbs on hand. The relish is good, but you can certainly serve the burger without and it will be just as yummy!!! Sometimes instead of topping them with the cheese, I stuff them with swiss or cheddar cheese. . .so good! And sometimes I make them into sliders, making 6 burgers instead of 4.

- In a medium bowl, combine the ground turkey, grill seasoning, mustard and poultry seasoning.
- Form 4 patties. Using your thumb, make an indentation in the center of each to prevent bulging while cooking. Let the patties sit so the flavors blend while you make the relish.
- In a small bowl, combine zucchini, bell pepper, onion, hot sauce, lime juice, tomatoes and salt to taste. Set aside.
- Spray your large skillet with cooking spray (or use one turn of olive oil) and place it over med-high heat. Add the patties and cook until the juices run clear, which is about 5 minutes on each side. During the last minute of cooking, top each burger with a cheese slice so that it melts.
- Toast and butter the English Muffins. Set a lettuce leaf and burger on each muffin bottom and top with a spoonful of zucchini relish and the muffin top. Enjoy!

GRANDMAS TASTY ZUCCHINI RELISH
I'll be honest-I never tried this relish when my grandma served it because I wasn't too keen on the look of it. This year I "inherited" 15 zucchini and have been told I'll be "inheriting" more. Out of desperation, I decided to make a batch of her relish. I reasoned that everyone else in the family loves it-I'll give it to them. Now that I've actually eaten it-I'm not sharing. This is not only a great way to use up a bumper crop of zucchini it's a great condiment!

- Slice zucchini as thinly as possible (food processor is a big help to do this).
- Sprinkle with the salt.
- Let sit overnight.
- Wash and drain the zucchini.
- Put in a large pot, add onions to the zucchini and mix well.
- Add sugar and 6 cups vinegar.
- Cook on a medium-high heat, stirring often-It will easily scorch because of the sugar content.
- In the meantime, in a separate dish mix together the mustard seed, turmeric and flour well. Add the 2 tbsp of vinegar to make a runny paste-You may need to add more vinegar.
- Add mixture to pot and stir constantly.
- Continue to cook mixture until it thickens (approx. 1 - 1 1/2 hour).
- Scoop into sterilized jars and seal.
SAVORY TURKEY BURGERS WITH GARLICKY MAYONNAISE

Ok, I just tried this last night and I have to say these are the best turkey burgers I have had. Hubby is a huge fan of turkey burgers and I am not so much but these were very juicy and tender and the flavor is very good. I was disappointed with the garlicky mayo since I ran out of real garlic and had to use powder. I can only imagine how good it would have been with real garlic!

- Heat gas or charcoal grill. In small bowl, mix mayonnaise, lemon juice and garlic. Cover; refrigerate until serving time.
- In large bowl, stir turkey, oats, soy sauce, seasoning blend, onion and egg white until well mixed. Shape mixture into 4 patties, about 3/4 inch thick.

- Squeeze ALL the moisture from the zucchini with paper towels. In a large bowl, combine ground turkey, zucchini, breadcrumbs, garlic, onion, salt and pepper. Make 5 equal patties, 4 ounces each, not too thick so they cook in the center.
