RASPBERRY PROSECCO COCKTAIL

1 tablespoon Raspberry Syrup, recipe follows
1 tablespoon fresh lemon juice
Chilled prosecco, for serving
1 cup sugar
2 tablespoons fresh lemon juice
2 pints raspberries

Steps:

  • Add the Raspberry Syrup and lemon juice to the bottom of a champagne flute. Fill the glass with prosecco.
  • Place the sugar and 2 cups water in a medium saucepan over medium heat. Bring to a simmer, stirring occasionally, until the sugar is dissolved, 3 to 4 minutes. Add the lemon juice and raspberries and simmer, stirring occasionally, until the raspberries have broken down, about 10 minutes. Pour the mixture through a strainer and return to the pot. Simmer over medium heat until the syrup has thickened, about 10 minutes more. Let cool completely, then pour into an airtight container and store in the refrigerator for up 2 weeks.

1 tablespoon lemon juice
6 raspberries
One 750-ml bottle prosecco

Steps:

  • Stir together the cassis, lemon juice and 1 cup water. Divide the mixture among 6 slots of an ice cube tray; insert a raspberry into each. Freeze until solid, 1 to 2 hours.
  • Drop the ice cubes into 6 Champagne flutes. Top off with prosecco.

PROSECCO-ROASTED TURKEY WITH LEMON AND THYME



Prosecco-Roasted Turkey with Lemon and Thyme image

1 12- to 14-pound turkey, thawed if frozen
Kosher salt and freshly ground pepper
1/2 onion, quartered
1/2 bulb fennel, trimmed and cut into chunks
1 apple, cut into chunks
3 sprigs thyme, plus 1 tablespoon chopped leaves
1 lemon, zest grated, halved
1 1/2 sticks (12 tablespoons) unsalted butter
1 750-ml bottle dry prosecco or champagne
3 tablespoons chopped fresh herbs (such as tarragon, chives and/or parsley), for the gravy

Steps:

  • Position an oven rack in the lowest position (remove the other racks); preheat to 350 degrees F. Remove the neck and giblets from the turkey and set aside for the gravy. Pat the turkey dry with paper towels and rub inside and out with 2 tablespoons each salt and pepper. Stuff the cavity with the onion, fennel, apple, thyme sprigs and lemon halves. Tie the legs together with kitchen twine. Put the turkey on a rack set in a large roasting pan and tuck the wings under the body. Let sit at room temperature while you make the lemon-thyme butter.
  • Melt the butter in a small saucepan over low heat; whisk in the lemon zest and chopped thyme. Let cool slightly, then brush all over the turkey. Transfer to the oven and roast 1 hour. Meanwhile, start your gravy (use 1/2 cup of your prosecco in place of the white wine in your gravy).
  • After the turkey has roasted 1 hour, pour the remaining prosecco all over the turkey (about 2 1/2 cups). Continue roasting, basting with the pan drippings every 30 minutes, until the skin is golden brown and a thermometer inserted into the thigh registers 165 degrees F, 1 1/2 to 2 more hours.
  • Transfer the turkey to a cutting board and let rest 30 minutes before carving; reserve the drippings for the gravy. Stir the herbs into the finished gravy.

1/4 cup vodka, chilled in the freezer
1 (750 ml) bottle Prosecco, chilled
1 pint vanilla ice cream, softened

Steps:

  • Place the raspberry sorbet and vodka in the bowl of an electric mixer fitted with the whisk attachment. Whisk on low speed for 30 seconds, until the mixture is smooth and creamy.
  • Spoon the sorbet mixture into 3 low cocktail glasses and, while beating with a fork, add enough Prosecco to each glass so the sorbet is still creamy but not thick. Add one small scoop of ice cream to each glass and top with another splash of Prosecco. (The sgroppino should be the texture of a light slushy. The ice cream will melt into the raspberry slush.) Serve immediately with a small spoon.

2 pounds peaches, preferably the aromatic white-fleshed variety
2/3 cup granulated sugar
1 1/2 cups Prosecco or other young, fruity, dry white wine
1/2 pint raspberries
1/2 pint blueberries
Zest of 1 lemon

Steps:

  • Wash the peaches, peel them, pit them, and cut into slices about 1/4 inch thick. Put the peaches in a serving bowl, add the sugar and wine, and stir thoroughly. Wash the raspberries and blueberries and add them to the peaches.
  • Grate the thin, yellow skin of half a lemon, being careful not to dig into the bitter white pith beneath, and add it to the bowl. Turn over the bowl's contents several times. Refrigerate at least 1 hour before serving, or even as far ahead as early morning of the day in which you intend to serve the fruit.
