Tender Baked Whole Chicken Recipe-Just 5 Ingredients image

This ultra tender, 5-ingredient, and amazingly easy baked whole chicken has a secret ingredient: butter. Added into the cavity before cooking, a little butter prevents drying in the oven and brings the sweet flavor of a pastured bird into the spotlight. You won't ever cook chicken any other way again. ½ cup 1 stick butter
1 whole pastured chicken
Coarse salt and pepper to taste
1 tablespoon rubbed sage
A few heads fresh rosemary (chopped)

Steps:

  • Heat the oven to 350 degrees F.
  • Melt about ¼ cup (half the stick) of butter in your microwave or a small saucepan on the stovetop.
  • Place the chicken in a roasting pan or a basic pyrex baking dish. Drizzle the butter over the top of the chicken and rub the butter over the surface of the chicken.
  • Sprinkle on the salt, pepper, sage, and rosemary and rub onto the chicken, inside and out.
  • Place the remaining ¼ cup (half a stick) butter in the cavity of the chicken.
  • Now here's where things get interesting: you can either place your chicken breast down, as I did, or breast up, as many people like to do. I personally prefer putting mine breast down, because all the juices soak downwards into the meat and make the breast meat very tender. Others prefer to put theirs breast up because it gives the breast meat a beautiful golden crust. You make trade-offs either way, so take your pick.
  • Anyway, put your chicken in the oven and cook for about 1 1/4 to 1 1/2 hours, until a thermometer stuck into the center of the meatiest part reads about 180 degrees F (cooking time will vary depending on how big your chicken is, so go by temp check)! Remove from oven and rest 15 minutes before slicing the chicken. Serve in the pan to allow the chicken to absorb the juices in the pan.

I found a version of this recipe online somewhere and used it to take a roasted chicken to church for a special sampling of foods you can get from ordering foods from Angel Food Ministries. (http://www.angelfoodministries.com/) Everyone raved about it and since I am going to roast one for home today I decided to add the recipe here too. This is a well seasoned bird which is cooked with high heat for the first 20 minutes then cooked the remaining 40-50 minutes at a lower temperature. This makes the chicken nice and moist and very flavorful. It's easy and quick to prepare as well.

1 -3 lb roasting chicken
1 1/2 tablespoons olive oil
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon paprika

Steps:

  • Preheat your oven to 450 degrees before starting to prepare the chicken.
  • Place the whole chicken into a medium sized baking pan.
  • Rub the entire bird with the olive oil.
  • In a small bowl combine the salt, pepper, oregano, basil, and paprika, then sprinkle evenly over chicken.
  • In the preheated oven bake the chicken for 20 minutes.
  • Lower the oven to 400 degrees.
  • Continue baking for 40-50 minutes, or until golden brown and juices run clear.
  • If your chicken looks like it is browning too quickly, Lay a sheet of tin foil over the top loosely and it will slow down the browning for you.
  • Let the chicken rest in it's juices for at least 10 minutes before carving and serving. (This let's the bird reabsorb some of the juices and helps to make it even more moist.).

This is one of my newly adopted recipes. This is Mermaid's original description: The most tender, juicy chicken anywhere. My mom has made this for years. Great with baked potatoes and veggie.

4 lbs whole chickens
2 garlic cloves
3 tablespoons butter
1 onion
2 tablespoons vegetable oil
salt and pepper

Steps:

  • Preheat oven to 325.
  • Place 1 tablespoon oil on the bottom of glass pan.
  • Thoroughly clean chicken, removing all excess from cavity.
  • Put 1 tablespoon oil on a paper towel and lightly rub the chicken down with oil Salt and pepper the skin.
  • Insert 1 tablespoon butter, garlic and some chopped onion into cavity.
  • Place the chicken on it's back and insert one tablespoon of butter between the skin and the breast, for each breast.
  • (You have to kind of pull the skin a little to get the butter underneath it. This is what causes the chicken to be so tender and juicy.) Cook for approx 2 hours, basting every 30 minutes if possible.

Steps:

  • Preheat oven to 375.
  • Prepare the spice blend by combining the ingredients in a small bowl.
  • Place the chicken pieces onto a baking sheet, skin side up. Bake for 20 minute Remove the chicken from the oven and cool for 5-10 minute.
  • When you can handle the chicken, remove the skin, sprinkle the entire surface with a light coating of the spice blend and replace on the baking sheet. Bake 10 min more or until done.
  • 5 Points per serving (6 ounces).
