Canned pumpkin, allspice and cinnamon bring the flavor of fall to the breakfast table in our pumpkin pie pancakes that are ready in just 15 minutes.

1 egg, beaten
1 1/4 cups fat-free (skim) milk
2 cups Bisquick Heart Smart® mix
1/2 cup canned pumpkin (not pumpkin pie mix)
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
Real maple syrup, if desired

Steps:

  • Into medium-large bowl, mix all ingredients except syrup until smooth. Batter will be thick.
  • Spray griddle with cooking spray; heat over medium-high heat. For each pancake, pour about 1/4 cup batter onto hot griddle. Cook until bubbles form around edges. Turn pancakes; cook about 3 minutes or until golden brown on bottom.
  • Serve pancakes with maple syrup.

We make this every year for Halloween dinner. It would also be good for Thanksgiving morning breakfast and the whipped cream would be great on pumpkin pie.

2 ⅓ cups pancake mix (such as Bisquick®)
2 ½ tablespoons white sugar
⅓ teaspoon ground cinnamon
⅓ teaspoon ground nutmeg
¼ teaspoon ground ginger
2 eggs
1 ¼ cups milk
⅓ cup canned pumpkin
¼ cup vegetable oil
1 cup whipping cream
2 tablespoons white sugar
¾ teaspoon vanilla extract
½ teaspoon ground nutmeg

Steps:

  • Whisk together the pancake mix, white sugar, cinnamon, the 1/3 teaspoon nutmeg, and ginger; set aside. Beat together the eggs, milk, pumpkin, and vegetable oil. Combine the two mixtures, stirring just until all ingredients are moistened.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Bubbles will start to form in the pancakes. Cook until the edges of the pancakes start to look dry, and a bubble popped near the edge holds its shape. Flip the pancakes over, and continue cooking until the other side is golden brown. Repeat with remaining batter, adding more oil to the griddle if necessary. Stack the pancakes on a plate and keep warm until serving. For larger batches, keep pancakes warm in a single layer on a cooling rack positioned over a baking sheet in a 300 degrees F oven (150 degrees C).
  • Place whipping cream in a small, deep, chilled bowl. Add the 2 tablespoons sugar, vanilla, and nutmeg; beat using a mixer with chilled beaters on medium-high speed until soft peaks form.

When it comes to canned foods, my mom has always told me to get Festal brand, for that is what her mom always told her. "It's the best!" she would say. Festal is distributed by the Owatonna Canning Company, of Owatonna, Minnesota, so it is actually pretty close to home. This is the recipe on Festal's Golden Pie Pumpkin. It's delicious! I like it best served cold. When I make it, there seems to be a lot extra after filling the one 9-inch pie crust, so I just divide the filling between two crusts. It makes 2 smaller pies, but that way none goes to waste!

1 (15 ounce) can festal golden pie canned pumpkin
1 (9 inch) deep dish pie shells
3 eggs, slightly beaten
1 cup granulated sugar or 1 cup light brown sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1 cup Carnation Evaporated Milk or 1 cup milk

Steps:

  • Prepare 1 pie crust.
  • Combine eggs, sugar, salt, and spices and beat well.
  • Blend in pumpkin.
  • Add milk and beat well.
  • Turn into pastry lined pie pan.
  • Bake in a hot oven (450 degrees) for 10 minutes, then reduce heat and bake at 350 degrees for 40 to 45 minutes.
  • Pie is done when knife, inserted in center, comes out clean.
  • Cool on rack for 2 hours, then serve immediately or refrigerate.

DRY INGREDIENTS:
2 c all purpose flour
4 tsp baking powder
1 tsp ground cinnamon
1/8 tsp nutmeg
1/8 tsp ground allspice
3/4 c sugar
WET INGREDIENTS:
1 1/2 c canned pureed pumpkin (not pumpkin pie mix)
3 large eggs
1 c milk
3/4 c vegetable oil
1/2 tsp vanilla extract

Steps:

  • 1. In a large mixing bowl combine the dry ingredients: flour, baking powder, cinnamon, nutmeg, allspice and sugar until blended.
  • 2. In another separate large mixing bowl combine together the wet ingredients: pureed pumpkin, eggs, milk, vegetable oil and vanilla extract until blended.
  • 3. mix the blended dry ingredients with the blended wet ingredients until well blended into pancake batter consistency (avoid over mixing/ over beating).
  • 4. Pour 1/4 cup batter scoops onto a greased hot griddle.
  • 5. Cook until bubbles form then flip pancake over to cook on the other side until golden brown. Serve hot with your favorite pancake toppings!

½ teaspoon baking soda
1 teaspoon pumpkin pie spice
½ teaspoon salt
⅔ cup chopped pecans
maple syrup, (for serving)

Steps:

  • Preheat oven to 450˚F.
  • Generously grease an 18×13 baking sheet with cooking spray and set aside. For taller pancakes, use a 15×11 baking sheet.
  • In a mixing bowl, whisk together milk, egg, pumpkin, sugar, butter, and vanilla; set aside.
  • In a separate mixing bowl, combine flour, baking powder, baking soda, pumpkin spice, and salt; whisk until well combined.
  • Add the flour mixture to the milk mixture and, using a rubber spatula, fold the mixture until thoroughly incorporated. Do not overmix.
  • Transfer batter to previously prepared baking sheet and spread it out into an even layer. Top with pecans.
  • Bake for 14 to 18 minutes, or until pancake is puffed up, top is golden brown, and pulls away from the edges of the pan.
  • Remove from oven and allow to cool slightly; about 10 minutes.
  • Cut into squares, and serve with maple syrup.

1 1/2 cups all-purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons ground cinnamon

3/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 (15 ounce) can pumpkin puree
2 cups 2% low-fat milk
1/3 cup brown sugar

Steps:

  • In large mixing bowl, whisk together flours, baking powder, baking soda, spices, and salt until thoroughly combined.
  • In second bowl, whisk together pumpkin, milk, sugar, vanilla and oil until thoroughly combined.
  • Pour wet ingredients into dry, and mix just until integrated. (leaving a few lumps is a good idea).
  • Pour batter by 1/4 cup onto a griddle at low-medium heat, and let cook three minutes or until edges are set.
  • Flip, and allow to cook for two more minutes.
