GRILLED MAHI-MAHI WITH LEMON-PARSLEY POTATOES



Grilled Mahi-Mahi with Lemon-Parsley Potatoes image

Mahi-mahi is the rib-eye steak of the sea: dense and firm, it holds up beautifully on the grill (it's also ideal for fish tacos). Look for fish caught off the U.S. Atlantic coast for the most sustainable option. If you can't find it, tilapia or swordfish would also work. If you have time to fire up the grill instead of using a grill pan, skewer the potatoes before cooking so they are easier to flip. You can also skip the microwave and use refrigerated red potato wedges (such as Simply Potatoes) instead of fresh.

Yield Serves 4 (serving size: 1 fillet and about 1/2 cup potatoes)

Number Of Ingredients 10

Cooking spray
1/4 cup extra-virgin olive oil, divided
4 (6-oz.) mahi-mahi fillets, skinned
3/4 teaspoon kosher salt, divided
1/2 teaspoon black pepper
8 medium red potatoes, cut into wedges (about 1 lb.)
2 tablespoons water
1/2 cup chopped green onions
1/2 cup chopped fresh flat-leaf parsley
1 1/2 tablespoons fresh lemon juice

Steps:

  • Heat a grill pan over medium-high. Coat pan with cooking spray. Drizzle 1 1/2 teaspoons oil over fish; sprinkle evenly with 1/2 teaspoon salt and pepper. Add fish to pan; cook 5 minutes on each side or until fish flakes easily when tested with a fork.
  • Place potatoes in a microwave-safe bowl with 2 tablespoons water; cover and microwave at HIGH 2 minutes or until crisp-tender. Combine potatoes, 1 1/2 teaspoons oil, and remaining 1/4 teaspoon salt in a bowl; toss. Add potatoes to grill pan; cook 5 minutes on each side or until tender and grill marks appear. Place potatoes in a bowl.
  • Place remaining 3 tablespoons oil, green onions, parsley, and juice in a mini food processor; process until smooth. Add half of parsley mixture to potatoes; toss. Spoon remaining parsley mixture over fish.

4 6-ounce skinless mahi mahi fillets (about 3/4 inch thick)
Kosher salt and freshly ground pepper
4 tablespoons unsalted butter
1/2 head cauliflower, florets cut into 1/2-inch pieces
1/4 cup sliced almonds
1/4 cup golden raisins
1/4 teaspoon ground coriander
1 tablespoon fresh lemon juice
1/4 cup chopped fresh parsley
Lemon wedges, for serving

Steps:

  • Preheat the oven to 375 degrees F. Season the fish with salt and pepper. Heat 1 tablespoon butter in a large nonstick skillet over medium-high heat. Sear the fish until golden brown on one side, about 3 minutes. Transfer to a rimmed baking sheet, cooked-side up, and roast in the oven until just cooked through, about 10 minutes.
  • Meanwhile, melt the remaining 3 tablespoons butter in the skillet over medium-high heat. Add the cauliflower and cook, stirring, until golden brown and crisp-tender, about 6 minutes. Add the almonds, raisins, coriander, 1/4 teaspoon salt, and pepper to taste; cook until the almonds are golden, about 2 minutes. Remove from the heat and stir in the lemon juice and parsley.
  • Divide the fish among plates and serve with the cauliflower and lemon wedges.

You can easily control the level of spiciness in blackened fish by making your own Cajun spice mix. This is a super fast, incredibly delicious way to add more seafood to your diet.

4 mahi mahi fillets (approximately 6 ounces each)
2 tablespoons butter
1 tablespoon olive oil
1 lemon
1 ½ teaspoons onion powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon dried thyme leaves
1 teaspoon dried oregano leaves
1 teaspoon fine grain sea salt
½ teaspoon freshly ground black pepper
½ teaspoon cayenne pepper (or to taste)

Steps:

  • Combine all Kickin' Cajun Seasoning Mix ingredients in a small bowl.
  • Pat fillets dry with paper towels. Season the fillets liberally with Kickin' Cajun Spice Mix on both sides, pressing the seasoning into the fish with your hands. Wash hands thoroughly.
  • Place a large saute pan over medium-high heat and add butter and oil. When the fat is nice and hot, add the seasoned fish. Cook, undisturbed, for several minutes, until golden brown on one side. Flip fish over and continue to cook until opaque and completely cooked through.
  • Squeeze lemon juice over the fish and serve.

3 tablespoons olive oil
3 medium russet potatoes
3 garlic cloves, minced
4 mahi mahi fillets (I get the bag of frozen Mahimahi at CostCo)
3 tablespoons unsalted butter, cut into 1/4-inch pieces
4 sprigs fresh thyme
1 lemon, sliced thin

Steps:

  • Oven to 425°. Spread 1 Tbsp olive oil over the surface of rimmed cookie sheet.
  • Run the potatoes through a mandoline or slice by hand to get 1/4" thick slices. Toss potato slices with 2 Tbsp olive oil and minced garlic. Salt and pepper to taste. Arrange the potatoes into 4 piles on the cookie sheet. Bake until brown in spots and just tender, 30-35 minutes.
  • Pat the mahimahi dry with paper towels and season with salt & pepper. Place 1 mahimahi fillet on top of each potato pile. Top with butter pieces, thyme sprigs and lemon slices on top. Return to oven and continue to bake until fish flakes when poked with knife, about 15 minutes.
  • Place one potato & fish pile onto each plate and serve!

1 pound mahimahi fillets, cut into 2-ounce strips
Salt and freshly ground black pepper
2 to 3 tablespoons olive oil
Poblano Mashed Potatoes, recipe follows
Tomato-Cumin Relish, recipe follows
5 large baking potatoes, quartered
1 cup hot milk
4 tablespoons butter
1 roasted poblano
3 scallions, sliced
1/4 cup chopped cilantro leaves
1/4 cup chopped parsley leaves
1/2 cup spinach leaves
1/3 cup lime juice
Salt and pepper
1 cup very ripe diced red tomatoes
1 cup very ripe diced yellow tomatoes
1/2 cup 1/4-inch dice red onion
1/2 cup sliced scallions
Olive oil
1 tablespoon ground cumin

Steps:

  • Season both sides of fish. Heat a large saute pan, and then add the olive oil. When oil is hot, add mahimahi pieces, skin side down. After 3 minutes, turn strips over and cook for another 3 minutes. Place fish over the Poblano Mashed Potatoes and spoon Tomato-Cumin Relish on top to plate.
  • Boil potatoes until tender. Rice potatoes and then, with a whisk, incorporate milk and butter. Puree poblano, scallions, cilantro, parsley, spinach and lime juice in a blender. Add mixture to potatoes and combine. Season to taste.
  • Combine tomatoes, onion, and scallions. Coat with olive oil. Add cumin. Season, to taste.

This mahi mahi sautés until golden and then simmers in a light and lemony butter sauce. This dish looks restaurant quality but it's actually easy and ready in under 20 minutes!

4 6-oz mahi mahi fillets
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil (extra virgin)
1/4 cup butter, ghee, or vegan butter
2 tbsp lemon juice
2 tsp garlic (minced)
2 tbsp fresh parsley (finely chopped)

Steps:

  • Use paper towels to pat the mahi mahi fillets dry.
  • Sprinkle the top and bottom of the mahi mahi with salt and pepper.
  • Add the oil to a large skillet over medium-high heat. Once hot, carefully add each fillet to the skillet. Let the fish cook until the side touching the bottom of the pan is a beautiful golden color, about 4 to 5 minutes depending on the size of the fillets.
  • Carefully flip the mahi mahi. Reduce the heat to medium-low. Add the butter, lemon juice, and garlic. Give the sauce a stir so that it's combined. Cover and let the mahi mahi cook until it flakes easily with a fork, 3 to 4 minutes.
  • Remove the skillet from the heat. Stir the parsley into the sauce and spoon the sauce over the mahi mahi.

1/4-ounce butter, softened
1 teaspoon chopped parsley leaves
Salt and freshly ground black pepper
1 (12-ounce) mahi fillet
1/2 tablespoon herb butter
3 tablespoons garlic lime broth, plus another 3 tablespoons
2 tablespoons white wine
5 cloves garlic, roasted
1/2-ounce fried spinach
1 lemon wedge, for garnish
1 sprig parsley, for garnish

Steps:

  • Preheat the oven to 250 degrees F.
  • In a medium bowl, mix the potato pearls with the butter, parsley, and salt and pepper, to taste. Set aside.
  • Preheat a flat-top griddle or medium skillet over medium-high heat. Season the mahi fillet with the herb butter, salt, and pepper. Top the fillet with the potato pearl mixture. Place the fish on the hot griddle, with the potato pearl side down. Sear on each side until golden brown. Place the fillet in a non-reactive pie pan, and then add 3 tablespoons lime broth, 2 tablespoons water, and the white wine. Place the pan in the oven, and bake for 8 minutes. Remove fish to a large serving bowl with the roasted garlic and remaining lime broth. Top with the fried spinach, and garnish with the lemon and parsley sprig.
