CINNAMON SPICED PEACHES (1 PT)
I came across this recipe in a Weight Watcher's cookbook while looking for a shrimp recipe. It sounded so good I immediately decided that it would be a side dish for tonight! Really fast, easy, and tasty. The kids loved it. For peach nectar I drained a can of peaches in their own juice and used the juice for this recipe. (And then packed the canned peaches for lunches!)

Steps:
- Mix all the ingredients in a medium sized pan, stirring well.
- Put the top on the pan and turn the heat to medium. Let it cook for 10 minutes or until the peaches are tender.
- 1/4 cup of the mixture is 1 WW point.

- Place peach halves, cut-sides up, in microwaveable pie plate.
- Combine next 3 ingredients; sprinkle over peaches.
- Microwave on HIGH 30 sec. to 1 min. or until sugar begins to melt and peaches are heated through. Top with yogurt. Serve warm.

CINNAMON-GRILLED PEACHES
Steps:
- Rinse the peaches and blot them dry with paper towels. Cut each peach in half and discard the pit. Then, cut each peach into quarters. Using a pointed chopstick or metal skewer, make a starter hole in the center of each peach quarter, working from the pit side to the skin side. Skewer 2 peach quarters on each cinnamon stick, placing a mint leaf between the 2 quarters.
- Combine the butter, brown sugar, rum, cinnamon, and salt in a saucepan and bring to a boil over high heat. Let the glaze boil until thick and syrupy, about 5 minutes.
- Prepare and preheat the grill to high. Brush and oil the grate. Next, place the skewered peaches on the hot grate and grill until nicely browned, 3 to 4 minutes per side, basting with the rum and butter glaze. Spoon any remaining glaze over the grilled peaches and serve at once. Peach or vanilla ice cream makes a great accompaniment.
GRILLED PEACHES WITH CINNAMON SUGAR BUTTER

- In a small bowl add the butter and stir until smooth. Add the cinnamon sugar, granulated sugar and salt and mix until combined.
- Heat grill to high. Brush peaches with oil and grill until golden brown and just cooked through. Top each with a few teaspoons of the butter and garnish with mint leaves.

- Preheat the oven to 375 degrees F. Arrange the peaches face side up in a small baking dish.
- In a small bowl, combine the melted butter with the honey and cinnamon. Then pour the mixture over the peaches; making sure to coat the peaches completely. Roast the peaches for 20 minutes, until the peaches are tender.
- Meanwhile, using an electric mixer, starting at low and slowly increasing to high, whisk together all the whipped cream ingredients until stiff peaks form.
- Plate the peaches, making sure to drizzle the remaining cinnamon butter sauce left in the baking dish on top of the peaches. Serve with a large dollop of cream. Top with chopped crystallized ginger if you would like.
- Serve immediately.

CANNING PEACHES WITH HONEY AND CINNAMON
Steps:
- Peel the peaches. The easiest way to do this is to dunk them in boiling water for 2 minutes, and then immediately dump them in ice cold water. The skins will come right off. SO much easier than using a knife, and less waste, too.
- While you are working on your peaches, bring the 9 cups of water, and 1 cup of honey to a boil in a medium saucepan.
- Remove the pits from the peaches, then halve or quarter them. You could even cut them into small slices, but I like to just cut them in half since it takes less time.
- Place 1 cinnamon stick in the bottom of each sterilized quart jar.
- Fill the jar with the peaches, placing them pit-side down (if you are using halves)
- Fill the jar the rest of the way full with the hot honey-water solution. Leave 1/2″ headspace.
- Adjust lids and process quart jars in a hot water-bath canner for 30 minutes.
PEACHES AND CREAM GRILLED CINNAMON ROLLS RECIPE BY TASTY

- Preheat the grill to medium heat (350°F/180°C). Grease a 6-7-inch (16-17 cm) cast iron skillet with canola oil or butter.
- Open the can of cinnamon rolls and set the icing aside. Arrange the rolls in 2 rows of 4 on a lightly floured surface. Gently press together to seal into one large piece. Flour the top of the cinnamon rolls and use a rolling pin to roll out to a 12 x 8-inch (30x20 cm)rectangle.
- In a medium bowl, toss the diced peaches with the sugar.
- Spread the peaches evenly over the cinnamon roll dough. Starting from a long end, roll up the dough, sealing the peaches inside.
- Cut the dough log into 8 equal pieces and arrange in the prepared pan with the fruit facing up. Cover with aluminum foil.
- Place the pan on the grill over indirect heat and cook for 30-35 minutes, until the cinnamon rolls are cooked through.
- Remove the pan from the grill and drizzle the warm cinnamon rolls with the reserved icing.
- Let cool for about 5 minutes before serving.

- Drain can of peaches.
- Dump can of peaches into bowl.
- Dump cinnamon onto peaches.
- Stir peaches until cinnamon is all over 'em.
- Eat peaches.
- Goooood peaches.
- If you want to look more fancy, put the peaches into individual little dessert bowls and sprinkle the cinnamon over the top like a garnish, or garnish with orange zest. You can also sub Chinese 5 spice powder for the cinnamon.
