1/2 cup sugar
1/4 cup brown sugar (, packed)
1/2 teaspoon ground cinnamon
3 tablespoons cornstarch
1 lemon (, juiced)
2/3 cup rolled oats
1/4 cup flour
1/2 cup brown sugar (, packed)
1/4 teaspoon salt
1/4 cup unsalted butter

Steps:

  • Preheat oven to 375 degrees and line pie pan with pie crust.
  • Mix peaches with sugar, brown sugar, cinnamon, cornstarch and lemon juice.
  • Pour peaches into pie crust.
  • To make the crumb topping use a fork to combine the oats, flour, brown sugar, salt and butter until it forms a pea sized crumb.
  • Top the peaches with the crumb mixture and place the pie plate on a baking sheet lined with foil.
  • Bake for 45-50 minutes until golden brown.

PEACH FILLING
6 large peaches, peeled & sliced

1 quart(s) high quality ice cream

Steps:

  • For Crust: in food processor, combine the flour, oatmeal, pecans and sugar. with the motor running, add the egg yolk, vanilla,and butter through the feed tube and process until a dough forms on top of the blades.Cut the dough in half. On a well floured board, roll the dough out into two 10 inch circles. set aside.(the dough can be prepared ahead of time. roll into ball and wrap with plastic wrap and refrigerate for up to 4 days or freeze up to 6 months.
  • Filling: Preheat oven to 425*, place peaches in a bowl. Add the sugar, bourbon, cornstarch, cinnamon and ginger. mix well.Place one circle of dough in a 9 in. pie plate, and top with filling. Dot with butter. lay the top crust over the filling and crimp the edges. Bake for 15 minutes. LOWER, the heat to 350* and bake 25 to 30 minutes longer or until golden brown. Let cool for about 15 minutes. Serve warm with vanilla ice cream

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Brush egg white over dough; refrigerate while making filling. , In a large bowl, combine peaches and 2 tablespoons flour; toss to coat. In a small bowl, combine remaining 3/4 cup flour and sugars; cut in butter until mixture resembles fine crumbs. Sprinkle two-thirds into pastry; top with peach mixture. Sprinkle with remaining crumb mixture. , Bake at 375° for 40-45 minutes or until filling is bubbly and peaches are tender. Cover with foil during the last 15 minutes if it begins to brown too quickly.

1 (15 ounce) package pastry for a 9 inch double crust pie
1 egg, beaten
5 cups sliced peeled peaches
2 tablespoons lemon juice
½ cup all-purpose flour
1 cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
2 tablespoons butter

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C).
  • Line the bottom and sides of a 9 inch pie plate with one of the pie crusts. Brush with some of the beaten egg to keep the dough from becoming soggy later.
  • Place the sliced peaches in a large bowl, and sprinkle with lemon juice. Mix gently. In a separate bowl, mix together the flour, sugar, cinnamon, nutmeg and salt. Pour over the peaches, and mix gently. Pour into the pie crust, and dot with butter. Cover with the other pie crust, and fold the edges under. Flute the edges to seal or press the edges with the tines of a fork dipped in egg. Brush the remaining egg over the top crust. Cut several slits in the top crust to vent steam.
  • Bake for 10 minutes in the preheated oven, then reduce the heat to 350 degrees F (175 degrees C) and bake for an additional 30 to 35 minutes, until the crust is brown and the juice begins to bubble through the vents. If the edges brown to fast, cover them with strips of aluminum foil about halfway through baking. Cool before serving. This tastes better warm than hot.

Cut from our local newspaper a few years ago. It has become a family favorite. "If apple is the quintessential American pie, then peach is surely our summertime favorite, and all the more if it's served a la mode. To make a peach pie worth of the name, use fully ripe fruit and a pastry crust that's rich and tender but still sturdy enough to contain its sweet, juicy burden without collapsing. To remove the skins from peaches easily, pour boiling water over them, then quickly dip fruit into ice water. Use your fingers or a small knife to slip off the skins. This recipe calls for a crumbly nut topping, but you could substitue a classic lattice crust that lets the fruit show through. Serve the pie warm or at room temperatue, with or without ice cream. To gauge the amount of sugar and cornstarch to use, take your cue from the ripeness of the peaches; if they are very sweet-tasting and quite juicy, use the smaller amount of sugar and the large amount of cornstarch."

  • Line a 9-inch pie plate with pastry. In a large bowl, combine sliced peaches, granulated sugar, cornstarch and nutmeg. Allow to stand 15 minutes.
  • Lightly brush uncooked pie shell with a thin layer of egg white to moisture-proof pie crust. Stir lemon juice and almond extract into peach mixture; spoon into pie shell.
  • Mix brown sugar with flour; cut in butter until crumbly. Stir in nuts. Sprinkle mixture over peaches.
  • Bake for 15 minutes. Reduce oven to 400 degrees and bake 35 minutes more. To prevent overbrowning of rim of crust, cover edges with strips of foil.

3 cups peeled pitted and sliced ripe fresh peaches
1/2 cup sugar, plus
2 tablespoons sugar
1 tablespoon fresh lime juice
1 grated lime, zest of
3 tablespoons cornstarch
3/4 cup all-purpose flour
3/4 cup pecan halves
1/2 cup sugar
1/4 teaspoon salt
6 tablespoons cold unsalted butter, cut into 1/4-inch pieces
1 tablespoon milk or 1 tablespoon light cream

Steps:

  • Place prepared pie crust (one that has been rolled out, placed in 9-inch pie pan, and edges crimped/fluted) in the freezer for 15 minutes; preheat oven to 400°.
  • In a large bowl, combine the blueberries, peaches, ½ cup sugar, lime juice, and lime zest; mix well and then set aside for 10 minutes.
  • In a small bowl, mix the cornstarch and 2 tablespoons sugar; stir this mixture into the fruit mixture.
  • Turn the filling into the chilled pie crust; smoothing the top with a spoon or your hands; place the pie on the center oven rack and bake for 30 minutes.
  • Meanwhile, to make the topping-combine the flour, pecans, sugar, and salt in a food processor; pulse several times to chop the nuts coarsely.
  • Scatter the butter over the top and pulse again until the mixture resembles fine crumbs.
  • Sprinkle the milk over the mixture and pulse again briefly.
  • Transfer the topping to a bowl and rub it between your fingers to make damp, gravelly crumbs; refrigerate until ready to use.
  • Remove the pie from the oven and decrease temperature to 375°; carefully dump the crumbs in the center of the pie; spreading them evenly over the surface with your hands.
  • Tamp them down lightly; return pie to oven, placing it so that the part that faced the back of the oven now faces forward.
  • Slide a large foil-lined baking sheet onto the rack below to catch any drips.
  • Continue to bake 30-40 minutes until the juices bubble thickly around the edge.
  • If necessary, cover the pie with loosely tented foil for the last 15 minutes to keep the top from getting too brown.

6 peaches
1 apple
3/4 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon cinnamon

1 (9 ounce) container apple crumble mix
3 tablespoons butter, very soft
9 inches pie crusts, roll-out

Steps:

  • Preheat your oven to 400°F.
  • Peel, pit and slice your peaches and do the same for the apple. Make sure your apple is sliced very thinly. Combine the fruit in a medium sized bowl and set aside.
  • Roll out the pie crust and sprinkle it with a pinch of your sugar.
  • Add the rest of your sugar, vanilla, cinnamon and nutmeg to your fruit mixture and fold together. Fill your pie crust with the fruit mixture.
  • Cover the filling of the pie with aluminum foil and bake this for 10 minutes.
  • While your pie is baking, add the butter to your apple crumble mix and combine until the mix is completely coated.
  • Remove pie and aluminum foil. Add the crumble and bake for a remaining 30 minutes.

  • Combine peaches with the flour, sugar, salt, and vanilla in a large bowl. Toss gently until combine. Spoon into prepared baking dish.
  • Whisk the brown sugar, flour, oats, cinnamon, salt, and pecans together. Make sure to get out all those brown sugar lumps. Add the butter and stir with a rubber spatula or a wooden spoon to break up the butter until the mixture is crumbly. (A fork works for this too!) Evenly sprinkle topping over peaches.
