I absolutely love them. I've used them to make eggplant involtini, quinoa-stuffed poblano peppers, and, as here, peach and pluot cobbler with hot sugar crust. They are dishwasher safe and clean up like a dream.

10 large, ripe peaches (about 4 1/2 pounds / 2kg) or pluots or other stone fruit, pitted but not peeled, cut into 1-inch (2.5cm) chunks
1 large lemon
1/2 cup (110g) unsalted butter, softened
2 cups (400g) sugar, divided
1 1/2 cups (190g) all-purpose flour
2 teaspoons baking powder
1 teaspoon kosher salt
3/4 cup (185g) whole milk
1/2 cup (120g) hot water
Heavy cream or ice cream, for serving

Steps:

  • Heat the oven to 350°F (175°C), with a rack in the center. Line a large rimmed baking sheet with aluminum foil or parchment paper.
  • Arrange the peaches in a 9 by 13-inch (23 by 33cm) or two 10-inch pie plates or other similar-size baking pan or gratin dish. Using a zester or Microplane, zest about 2 teaspoons of lemon zest evenly over the fruit. Cut the lemon in half and squeeze about 1⁄4 cup (60g) of lemon juice over the top.
  • In a stand mixer fitted with the paddle attachment, cream the butter and 1 1/2 cups (300g) of the sugar on medium speed until creamy but sandy, about 1 minute. Add the flour, baking powder, and salt and beat on medium speed until all the flour is incorporated and the mixture is evenly crumbly, about 30 seconds more. Scrape down the sides of the bowl. With the mixer on low speed, slowly pour in the milk. Increase the speed to medium and beat until the batter is light and fluffy, about 2 minutes.
  • Scoop the batter in about 6 large blobs over the peaches. With an offset spatula or the back of a big spoon, carefully spread the batter evenly over the fruit.
  • Sprinkle the remaining 1/2 cup (100g) sugar over the batter. Drizzle the hot water evenly over the sugar, using it to melt the sugar topping.
  • Set the pan on the foil-lined baking sheet and bake the cobbler until the top is golden brown and cracked, 70 to 80 minutes. A toothpick stuck in the topping should come out clean or with just crumbs clinging-be sure to check in a few places.
  • Let the cobbler cool for about 30 minutes to firm up. Serve warm, scooping it into big bowls and pouring a little heavy cream over the top. Refrigerate any leftovers airtight.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

This classic southern old-fashioned Peach Cobbler recipe uses brown, white, and turbinado sugar to create the best crispy sugared crust BURSTING with flavor!

4 cups ripe peaches (sliced 1/4" thick, from about 4 large peaches (see notes for canned))
1/2 cup brown sugar (packed)
8 tablespoons salted butter (melted (see notes for unsalted))
1 cup all-purpose flour
1 teaspoon baking powder
3/4 cup sugar
3/4 cup milk
1 teaspoon ground cinnamon
1/4 cup turbinado sugar
vanilla ice cream or whipped cream (for serving, optional)
kosher salt

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium saucepan, combine the sliced peaches (4 cups) with the brown sugar (1/2 cup) and a small pinch of salt and and cook on medium for just a few minutes, until the sugar is dissolved and the peaches are very juicy.
  • Add the melted butter (8 tablespoons) to the bottom of a 9x13 baking dish. (Tip: You can melt it separately and pour it in, or just stick the whole pan in the microwave or in the oven to melt the butter directly in it.)
  • In a large bowl, mix together the flour (1 cup), the baking powder (1 teaspoon), and the sugar (3/4 cup). Stir in the milk (3/4 cup) until just combined. Pour on top of the melted butter in the baking dish, and smooth it out as best you can with a wooden spoon or spatula (it's OK if it's not perfect!).
  • Pour the peach mixture evenly on top of the flour mixture.
  • Sprinkle evenly with the ground cinnamon (1 teaspoon) and the turbinado sugar (1/4 cup).
  • Bake for 30-40 minutes, or until browned on top. If you like, you can broil it for the last 2-3 minutes to form an extra-crispy and browned caramelized sugared layer on top. Serve warm with vanilla ice cream or whipped cream, if desired.

10 large peaches (about 4½ pounds), unpeeled, cut into 1-inch chunks
Zest and juice of 1 large lemon
½ cup (1 stick) unsalted butter, softened
2 cups sugar, divided
1½ cups (about 192 grams) all-purpose flour
2 teaspoons baking powder
1 teaspoon kosher salt
¾ cup whole milk
½ cup hot tap water
Heavy cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the peaches in a 9-by-13-inch (or similar) baking pan or gratin dish. Pat the peaches into a roughly even layer, then, using a zester or a Microplane, zest the lemon evenly over the fruit and squeeze the lemon juice evenly over the top.
  • In the work bowl of a stand mixer fitted with the paddle attachment, cream the butter and 1½ cups of the sugar on medium speed until sandy, about 1 minute. Add the flour, baking powder, and salt, and beat again for another 30 seconds, until all the flour is incorporated and the mixture is evenly crumbly. With the mixer on low speed, slowly add in the milk. Increase the speed to medium and beat until light and fluffy, about 2 minutes.
  • Plop the batter in 6 large blobs over the top of the peaches. With an offset spatula or small knife, carefully spread the batter evenly over the fruit, so it's no more than about ½ inch thick in any one place.
  • Sprinkle the remaining ½ cup sugar directly over the batter. Drizzle the hot water evenly over the sugar, using it to melt the sugar into the topping. (Use it all. It's a strange method, but it works.)
  • Bake the cobbler for 70 to 80 minutes, or until the top is browned and cracked. (A toothpick inserted into the topping should come out dry-be sure to check in a few places.)
  • Let the cobbler sit for about a half an hour to firm up before serving warm in big bowls, with heavy cream poured on top.

I was looking for peach cobbler recipe that was a bit different and found this one at TOH. Dh ended up making this so that speaks to the ease of the recipe. This would be easy to substitute other fruit for peaches and I personally would increase the fruit filling but it was good as written as well. This makes for a nice cobbler with a crunchy crust with a light meringue flavor.

2 1/2 tablespoons cornstarch or 2 1/2 tablespoons Clear Jel

1 cup sugar
2 egg whites, stiffly beaten

Steps:

  • Combine peaches (drained), cornstarch or clear jel and sugar; place in a greased 13-in. x 9-in. baking dish.
  • For crust, combine flour, egg yolks, butter, baking powder and sugar in a bowl. Gently fold in stiff egg whites - this is a kind of a crumbly dough. Drop and then spread over peaches.

I was requested to make a cobbler with them, and I researched the internet for the perfect recipe to WOW everyone.I thought the boiling water in the dough was unique and decided to try this recipe that I adapted from All.Recipes.com turned out to be the hit of the vacation. I double the recipe and put in 9 x 13 pan.

8 fresh peaches, peeled, pitted and sliced into thin wedges (I have only used fresh)
1/4 cup white sugar
1/4 cup brown sugar

2 teaspoons cornstarch (I used flour)
1 cup all-purpose flour (I used self-rising and omitted the baking powder)

  • Bake in preheated oven for 10 minutes(I cooked filling on top of stove until thickened).
  • Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt.
  • Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal.
  • Stir in water until just combined.
  • Remove peaches from oven, and drop spoonfuls of topping over them.
  • Sprinkle entire cobbler with the sugar and cinnamon mixture.
  • I sprinkled only a little bit, since it was turning the top too brown for my taste.
  • Bake until topping is golden, about 30 minutes.
