PEACH MOUSSE RECIPE
This peach mousse is loaded with fresh peaches - more than 1 pound goes into making this dessert so it actually tastes like peaches!

- Peel and dice peaches (you should have 3 cups diced), transfer to a blender or food processor, add 2 Tbsp lemon juice right away to keep from discoloring and blend until pureed. Keep puree in the blender jar until ready to use.
- In a small sauce pan (off the heat), add 1/4 cup cold water and sprinkle top with 1 Tbsp gelatin. Let sit 5 minutes to soften then stir in 1/3 cup sugar and place over medium heat, stirring just until sugar has dissolved (1 to 2 min) then remove from heat - don't overcook.
- Add gelatin mixture to the fruit puree and blend until well combined. Cover with lid and chill in refrigerator until mixture begins to thicken (2 hours).
- Once puree starts to thicken, beat 1 cup heavy whipping cream until stiff peaks form. Fold whipped cream into fruit mixture, mixing until smooth. Divide evenly between 6 ramekins or serving glasses and refrigerate until set.
- In a small saucepan, combine sliced peach, 2 tablespoons sugar and 1 Tbsp lemon juice. Place over med/high heat and stir to dissolve sugar. Bring to a boil over medium-high heat and simmer 2 minutes. Remove from heat and cool completely before spooning it over your peach mousse. Garnish with mint if desired.

- In a small bowl, combine the crumbs, sugar and butter. Press into a 13-in. x 9-in. dish. In a large bowl, beat cream cheese and sugar until smooth; gradually add the milk. Fold in the whipped topping. Spread over crust., Cut peach slices in half lengthwise; arrange over top. In a small bowl, dissolve the gelatin in boiling water; stir in the cold water. Refrigerate for 1-1/2 hours or until slightly thickened. , Gently spoon gelatin over peaches; chill until set. Cut into squares.

- Place peaches and lemon juice in a blender or food processor. Cover and process until smooth., In a microwave-safe bowl, sprinkle gelatin over peach nectar; let stand 1 minute. Microwave on high for 30-40 seconds. Stir and let stand 1 minute or until gelatin is completely dissolved. Let stand 5 minutes. Stir in pureed peach mixture. Pour into eight 8-oz. glass dessert dishes. Refrigerate until set, at least 3 hours., In a small saucepan, sprinkle gelatin over milk; let stand 1 minute. Heat and stir over low heat until gelatin is completely dissolved. Stir in cream, sugar, lemon zest, salt and vanilla. Pour over peach gelatin layers. Refrigerate until set, at least 2 hours. If desired, garnish with peach slices and mint leaves.

PEACH JELLO SALAD RECIPE

- Boil water and stir in gelatin until it dissolves. Add mixture to a blender along with peaches, the juice from the can, and the cream cheese. Blend until smooth. Pour mixture into a large serving bowl or individual serving cups, cover, and refrigerate for 4 hours, or until set. Enjoy cold!

STRAWBERRY PEACH GELATIN DESSERT
I derived this recipe from one I got here on 'Zaar (Cherry Gelatin Squares recipe #64331 submitted by Carolyn Young). I wanted to try it in a different way as well as make a smaller amount, using less gelatin. I used a whole can of Peach Pie Filling because I did not know what to do with the rest if I used half the can. I am sure it will be be just as good using a half can of the pie filling. Cook time is time it takes to set in the refrigerator. Time is approximate.

- Put gelatin in a medium sized bowl.
- Add the boiling water and stir until gelatin is dissolved.
- Add the cold water and stir.
- Add the pie filling.
- Stir until well mixed.
- Keep the gelatin mixture in the bowl or pour it into a 6 1/2 inch square Pyrex or Corningware dish.
- Refrigerate until set.
- Serve in individual soup or salad bowls.
- Top with whipped topping. (if desired)

PEACHY GOOD JELLO DESSERT
A combination of cream cheese and whipped topping on a graham cracker crust topped off with peach slices and peach jello makes for a wonderful make ahead dessert. Allow time in the refrigerator to set.

- Beat together cream cheese and sugar until smooth and gradually add milk.
- Fold in Cool Whip and spread over crust.

- In separate bowl, combine jello with boiling water, then stir in cold water.
