Number Of Ingredients 11

6 cups chopped peaches (about 3 pounds)
3 large fresh tomatoes
1 1/2 cups chopped red onions
4 medium jalapeno peppers, seeded and finely chopped
1 large sweet red pepper, seeded and finely chopped
1/2 cup finely chopped cilantro
1/2 cup white vinegar
2 tablespoons liquid honey
3 garlic cloves, finely chopped
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper

Steps:

  • Sterilize 8, 1/2 pint jars, then place upside down in a 325 F oven for about 15 minutes.
  • Blanch peaches, cool in cold water, peel, pit and chop to measure 6 cups.
  • Blanch tomatoes and cool with cold water, peel, remove seeds and cut into chunks.
  • In a large stainless or enamel cooking pot, combine peaches, tomatoes, onion, Jalapeno peppers, sweet red pepper, cilantro, vinegar, honey, garlic, cumin and cayenne pepper.
  • Bring to a boil, and cook for about 5 minutes, stirring frequently. If the mixture is too sloppy or soupy, boil for a few minutes longer so that some of the liquid evaporates and the mixture thickens.
  • Adjust seasonings to taste.
  • Add more cayenne pepper if you desire a spicier taste.
  • Ladle salsa into hot jars to within 1/4 inch of top for headspace.
  • Remove air bubbles by sliding a rubber spatula between the glass and salsa.
  • Re-adjust the headspace to 1/4 inch.
  • Wipe jar rim to remove any stickiness.
  • Center lid on top of jar; apply screw band just until finger tight.
  • Place jars in a hot bath in a canner and process for 10 minutes.
  • Remove jars and place on a towel, then cover with another towel to cool slowly.
  • Jars are sealed when the lids pop and are curved down, (concave).
  • Label jars and store in a cool, dark place.
  • NOTE: You can substitute and use 6 cups of fresh, chopped pineapple for a different flavor.

6 cups chopped roma tomatoes
2 1/2 cups diced yellow onions
2 cups chopped green bell peppers
10 cups chopped peaches
2 cups chopped granny smith apples
4 tablespoons whole mixed pickling spices
1 tablespoon canning salt
2 teaspoons crushed red pepper flakes
3 3/4 cups packed light brown sugar
2 1/4 cups cider vinegar (5%)

Steps:

  • Wash and rinse pint canning jars; keep hot until ready to use. Prepare lids according to manufacturer's directions.
  • Place pickling spice on a clean, double-layered, 6-inch-square piece of 100% cheesecloth. Bring corners together and tie with a clean string. (Or use a purchased muslin spice bag).
  • Wash and peel tomatoes (place washed tomatoes in boiling water for 1 minute, immediately place in cold water, and slip off skins). Chop into ½-inch pieces. Peel, wash and dice onions into ¼-inch pieces. Wash, core, and seed bell peppers; chop into ¼-inch pieces. Combine chopped tomatoes, onions and peppers in an 8- or 10- quart Dutch oven or saucepot.
  • Wash, peel and pit peaches; cut into halves and soak for 10 minutes in an ascorbic acid solution (1500 mg in half gallon water). Wash, peel and core apples; cut into halves and soak for 10 minutes in ascorbic acid solution. Quickly chop peaches and apples into ½-inch cubes to prevent browning. Add chopped peaches and apples to the saucepot with the vegetables.
  • Add the pickling spice bag to the saucepot; stir in the salt, red pepper flakes, brown sugar and vinegar. Bring to boiling, stirring gently to mix ingredients. Reduce heat and simmer 30 minutes, stirring occasionally. Remove spice bag from pan and discard.
  • With a slotted spoon, fill salsa solids into hot, clean pint jars, leaving 1¼-inch headspace (about ¾ pound solids in each jar). Cover with cooking liquid, leaving ½-inch headspace.
  • Remove air bubbles and adjust headspace if needed. Wipe rims of jars with a dampened, clean paper towel; apply two-piece metal canning lids.
  • Process in a boiling water canner for 15 minutes. Let cool, undisturbed, 12 to 24 hours and check for seals.

1 small Granny Smith apple, peeled, cored, chopped
1/2 cup chopped fresh cilantro
3 1/2 tablespoons honey
2 tablespoons fresh lime juice

Steps:

  • Bring medium saucepan of water to boil over high heat. Add peaches; cook 30 seconds. Using slotted spoon, transfer peaches to bowl of cold water. Drain peaches. Peel and chop coarsely. Place peaches in large bowl. Mix in all remaining ingredients. (Can be made 4 hours ahead. Cover and chill.)

1 teaspoon chopped fresh cilantro
1 teaspoon white sugar
1 teaspoon salt

2 teaspoons cinnamon
1 red apple
1 green apple (tart)
1/4 cup dried cranberries, chopped
1/4 cup caramel sauce or 1/4 cup butterscotch sundae sauce
1/4 teaspoon cinnamon
1 lemon, juice of

Steps:

  • For chips, preheat the oven to 400 degrees.
  • Spritz or brush a small amount of water onto the tortilla. Sprinkle with cinnamon and sugar. Cut into 8 wedges. Place on baking sheet. Bake for 8-10 minutes or until lightly brown. Cool and store in air tight container.
  • Coarsely chop the apples (core but keep the skins on). Add the remaining ingredients.
