GRILLED PORK TENDERLOIN

Marinated in a flavorful sauce and grilled to perfection, your family and friends will love this pork tenderloin!

Number Of Ingredients 9

1 pork tenderloin
1/2 cup soy sauce
2 oranges
1 lime
1/2 cup ground tamarind concentrate
1 tablespoon dijon mustard
1 teaspoon ginger
1 clove garlic
1 tablespoon scallions

Steps:

  • Place the pork tenderloin in a plastic, sealable bag. Squeeze juice of oranges and lime into measuring cup. Combine remaining marinade ingredients in measuring cup and stir to combine. Pour over the tenderloin and seal bag. Marinate overnight in the refrigerator.
  • Preheat an outdoor grill or preheat oven to 350 °F.
  • Remove pork tenderloin from marinade and pat dry. Brush olive oil onto grill and over meat for extra flavor. Reserve marinade. Grill tenderloin about 35 minutes to 40 minutes over medium heat. Or roast for 45 minutes. Allow meat to sit about 10 minutes before cutting into two inch serving pieces.
  • While meat is grilling, bring reserve marinade to a boil in a small saucepan, them lower the heat and gently simmer until it is reduced to about 2 tablespoons. Stir occasionally. Drizzle a small amount of marinade over each piece of meat.

Grilled Pork Tenderloin a la Rodriguez with Guava Glaze and Orange-Habanero Mojo image

2 pork tenderloins (about 1 1/2 pounds each)
2 tablespoons canola oil
Salt and freshly ground pepper
Guava Glaze, recipe follows
Orange-Habanero Mojo, recipe follows
1 cup guava jelly, or apricot jam
1/4 cup Dijon mustard
1/4 cup freshly squeezed orange juice
Salt and freshly ground pepper
2 tablespoons canola oil
1 small red onion, finely chopped
4 cloves garlic, finely chopped
1/2 cup fresh lime juice
3 cups freshly squeezed orange juice
1/2 habanero chile, seeded and finely chopped
2 tablespoons chopped fresh cilantro leaves
1 teaspoon cumin seeds
Salt and freshly ground pepper

Steps:

  • Preheat a grill to high.
  • Brush pork with oil, and then season it with salt and pepper. Set aside a few tablespoons of the Guava Glaze for brushing the cooked pork. Grill for 4 to 5 minutes per side, brushing frequently with the Guava Glaze. Remove from the grill, brush again with glaze and let rest for 10 minutes. Slice into 1/2-inch thick slices, drizzle with the Orange-Habanero Mojo, and serve immediately.
  • Whisk jelly, mustard, and orange juice together in a small bowl. Season, to taste, with salt and pepper.
  • Heat oil in a small saucepan over medium-high heat. Add onion and garlic and cook, stirring, until soft, about 5 minutes. Add lime juice, orange juice, and habanero chile and bring to a boil. Cook until reduced by half. Whisk in the cilantro and cumin and season, to taste, with salt and pepper. Drizzle over pork.

1/3 cup orange juice
1/3 cup orange marmalade
1/4 cup maple syrup
2 tablespoons red wine vinegar
1 garlic clove, minced
2 pork tenderloin, approximately 1 lb. each
salt and pepper
1 teaspoon extra virgin olive oil

Steps:

  • In a small saucepan, all the orange juice, marmalade, maple syrup, red wine vinegar, and garlic. Whisk together over hight heat. Boil for 5-8 minutes, whisking occasionally until sauce is slightly thickened. Divide glaze in half. Keep half of the glaze warm in the saucepan.
  • Season the tenderloins with salt and pepper. Over high heat, in an ovenproof skillet, heat the extra-virgin olive oil and sear all sides of the tenderloins. Transfer skillet into a preheated 375°F oven After 10 minutes, brush the tenderloins with half of the glaze. Continue to cook until the internal temperature of the pork reaches 160°F Remove the pork from the skillet and tent with foil to rest for at least 5 minutes before slicing. Slice into 1/2 inch medallions and arrange on serve platter, Drizzle with remaining glaze.

1 cup pineapple juice
1/4 cup apple cider vinegar
1/4 cup soy sauce (or Tamari Sauce, gluten free)
1 1/2 lb. pork tenderloin
1 12 oz. jar of orange marmalade

Steps:

  • Combine juice, vinegar and soy sauce and marinade pork for at least one hour or over night in the refrigerator.
  • Warm marmalade in a small pan over medium heat until melted. Reserve 1/4 cup for basting.
  • Grill pork until it reaches 145 degrees F with a 3 minute rest, basting with marmalade for the last 5-10 minutes or cook in oven at 375 until cooked through.
  • Slice pork and serve with remaining warmed marmalade on top.

1 cup orange juice
1/4 cup olive oil
2 cloves garlic, chopped
1 teaspoon salt
2 pork tenderloin (1 1/4 pounds each)
1/3 cup honey

Steps:

  • In a blender, combine the orange juice, olive oil, garlic, and salt, and blend until smooth. Place the tenderloins in a 2.5-gallon resealable plastic bag or a large bowl. Pour the marinade over them, seal or cover with plastic wrap, and marinate in the refrigerator for 8 hours or overnight.
  • Fire up the grill. Remove the tenderloins from the marinade and pat drive. Pour the marinade into a small saucepan, add the honey, and let the mixture boil until it is reduced to a syrupy consistency, about 20 minutes.
  • Meanwhile, brush the grill with oil and grill the pork over medium heat for 20 minutes, turning occasionally. Brush some of the orange glaze over the pork and continue to cook, brushing with more glaze, until an internal temperature of 150°F is reached (check with an instant-read thermometer), about 20 minutes more. Let the pork rest for a few minutes before slicing.
