4 to 5 tonic water Ice Cubes (recommended: Schweppes) (see Note)
3 ounces gin (recommended: Plymouth Gin)
4 ounces tonic water (recommended: Schweppes)
1 tablespoon freshly squeezed lime juice
Lime wedge for garnish

Steps:

  • Place the ice cubes in a tall, narrow, chilled glass (the cubes should come near the top.) Add the gin, then the tonic water, then the lime juice, stirring well. Garnish with lime wedge, and serve immediately.
  • Note: To make the ice cubes, simply fill an empty ice cube tray with tonic water, and let the cubes freeze. It takes just a few hours. Covered well, the cubes will remain fresh-tasting in the freezer for at least a few weeks.

6 small cucumbers, such as Persians, ends trimmed and quartered lengthwise
1/2 c. Gin
1/2 c. tonic water
1/4 c. lime juice
4 slices of lime
2 tsp. sugar
1 tsp. kosher salt

Steps:

  • Add cucumbers and lime slices into jar. Top with gin, lime juice, sugar, and salt. Screw lid on tightly and shake to combine.
  • Open jar and pour in tonic water; making sure that cucumbers are fully submerged.
  • Keep in refrigerator overnight or up to 2 days to allow cucumbers to pickle. (Pickles will keep in the fridge up to 1 month.)

1/2 cup sugar
2 sprigs mint
2 thick slices lime
One 2-inch piece cucumber, chopped
4 dashes bitters
Ice
4 ounces gin, such as Tanqueray
Tonic water
Cucumber spear, for garnish

Steps:

  • For the mint simple syrup: Combine the sugar and 1/2 cup water in a small saucepan over medium heat. When the sugar dissolves, turn off the heat, add the mint sprigs and let cool. Strain into a clean jar. Can be stored in the refrigerator for a week.
  • For the gin and tonic: Heat a grill pan and grill the lime slices on both sides, just until it gets nice grill marks but is still firm.
  • Cut 1 lime slice into pieces and put it into the bottom of a cocktail shaker or mixing glass along with the chopped cucumber, bitters and 1 tablespoon mint simple syrup. Muddle to mash all the solids. Add ice to the glass and pour over the gin. Shake or stir to get the gin cold. Strain into a martini glass (or over ice in a tall glass) and top with a splash of tonic water. Garnish with the grilled lime slice and cucumber spear.
