1 tablespoon vegetable oil (if using chuck roast)
2 1/2-3 lbs beef short ribs or 2 1/2-3 lbs boneless beef chuck roast, roast*
4 quarts cold water
1 (28 ounce) can diced tomatoes
1 1/2 cups chopped onions
3 tablespoons dried parsley
2 tablespoons beef bouillon granules
1 tablespoon dried Italian seasoning
1 tablespoon seasoning salt, plus extra for seasoning
1 tablespoon Worcestershire sauce
1 teaspoon celery salt
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper, plus extra for seasoning
2 bay leaves
1 cup thinly sliced carrot
1 cup diced celery
1 cup sliced green beans
1 cup frozen black-eyed peas
1 cup frozen butter beans
1 cup cut okra
1 cup corn kernel
1 cup diced potato
1/2 cup uncooked elbow macaroni
chopped fresh parsley leaves
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • If using chuck roast, heat the oil in a large skillet over medium heat. Place the roast in the skillet and cook until browned on both sides, about 5 minutes per side. Remove the roast from the skillet and cut it into 1 1/2 to 2-inch cubes; discard the fat. Place the beef cubes in a large stockpot. (If using short ribs, you can put them right in the pot with no preparation).
  • Add the water, tomatoes, onions, dried parsley, beef bouillon, dried Italian seasoning, House Seasoning, seasoned salt, Worcestershire sauce, celery salt, garlic powder, black pepper and bay leaves.
  • Bring to a boil over high heat. Cover the pot; reduce the heat so that the liquid simmers, and cook for 1 1/2 to 2 hours, or until the meat is very tender.
  • If using short ribs, remove them from the pot and cut the meat from the bones, discard the bones and fat, and return the meat to the pot. Add the remaining vegetables and the macaroni and return the soup to a boil, stirring to distribute the ingredients.
  • Reduce the heat and simmer for 45 minutes.
  • Just before serving, season with salt and pepper and add fresh chopped parsley. To remove excess fat from the surface of the soup, swirl a lettuce leaf around the surface-it will pick up a lot of the fat.

PAULA DEEN'S TEXAS PEPPER PORK RIBS

These ribs can either be grilled or baked. Since the temperature is too cold for grilling at the moment, I've only tried the baked version. These ribs are quite peppery, so if you're not a huge fan of black pepper I would recommend reducing the amount in the recipe by half.

2 tablespoons ground black pepper
1 tablespoon ground oregano
1 tablespoon paprika
2 teaspoons celery salt
1/2 teaspoon cayenne pepper
2 pork rib racks (st. louis-cut ribs)

Steps:

  • To make the rib rub, combine all the ingredients. Rub over the surface of the ribs to coat.
  • Preheat BBQ or oven to 250 degrees F.
  • Rub both sides of the rack of ribs evenly with the rib rub. Place on the grill or in the oven, bone side sown, and roast for about 3 hours. About 15 minutes before the ribs are done, turn the rack over and let the other side get some color. (In the oven, turn the ribs every half hour, then broil to brown.) When the ribs are done, the rack relaxes and droops when you lift it at the center.

This is a Paula Deen recipe, but it is the way I learned to cook beans nearly 50 years ago. Usually I cut my potatoes in half instead of peeling the strip from them because its faster and easier. This makes such good beans that you'll be wiggling like a speckled pup.

3 lbs fresh green beans
1/4 lb salt pork, sliced
1/4 cup bacon grease
2 cups chicken broth, plus more if needed
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
12 small red potatoes
1 onion, cut into slivers
1/4 cup unsalted butter, sliced
ground black pepper

Steps:

  • Remove the ends from the beans. Snap the beans in 2 pieces, place into a colander, wash, and set aside to drain.
  • Meanwhile, in a large cast iron Dutch oven, lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the broth, salt, pepper and garlic powder. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.
  • While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth, if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add the butter and season with more pepper if needed.

"STOVE TOP" BBQ (BEEF OR PORK RIBS)



This recipe is from the Paula Deen cooking show on the TV Food Network. Originally shown for beef short ribs only, I have found it works as well with pork ribs. I have increased the amount of sauce ingredients - the original amounts didn't seem to be quite enough to really enjoy!

3 -4 lbs pork spareribs or 3 -4 lbs pork country-style pork ribs
1/2 cup minced onion
1/2 cup ketchup
1/2 cup water
4 tablespoons fresh lemon juice
4 tablespoons brown sugar
2 tablespoons mustard (Dijon)
1/4 teaspoon salt (for the sauce)
salt (sprinkled on ribs when browning)
2 tablespoons Worcestershire sauce
1 tablespoon vegetable oil

Steps:

  • Cut all ribs into serving size pieces Sprinkle ribs with salt (to taste) In a Dutch oven, brown ribs on all sides in veg oil over medium heat Remove ribs from pot Saute onions in pot until lightly browned Return ribs to pot Combine all remaining ingredients in a bowl and mix together- Add to pot Cover pot and cook over low heat for approx 2 hours, or until tender, stirring occasionally.
