SLOW-COOKER GRITS RECIPE
Classic Southern grits just got a slow cooked makeover and you're going to love it. We love grits, but don't love spending time standing over a hot stove stirring as our arm steadily turns to jelly. Finally, we have a solution. Enter, our Slow Cooker Grits. They have the same great flavor we love, but with a set-it-and-forget-it mentality that we can really get behind. Be sure to opt for stone-ground grits-this is not the time to sub in the quick-cook variety. You'll stir together the grits and 6 cups of water in your slow cooker. Allow the grits to settle into the bottom of the slow cooker by letting the combination sit for about 2 minutes. You'll want to skim the solids off the top of the liquid. To make it easier, tilt the slow cooker slightly and use a fine-mesh strainer. Let the grits sit for 8 hours. A few hours before you're ready to serve, turn the slow cooker on high and cook the grits for two hours stirring after one hour. Once two hours has elapsed, stir in cream, butter, salt, and pepper. You can either transfer the grits to a covered dish or let friends and family scoop straight from the slow cooker for a casual, no-fuss meal.

- Stir together grits and 6 cups water in a 5- or 6-quart slow cooker. Let stand 1 to 2 minutes, allowing grits to settle to bottom. Tilt slow cooker slightly, and skim off solids using a fine wire-mesh strainer. Cover and soak 8 hours or overnight.
- Cover and cook grits on HIGH 2 hours to 2 hours and 30 minutes, stirring halfway through. Stir in cream and remaining ingredients.

- In a small pot, bring water, milk and salt to a boil. Slowly stir grits into boiling mixture. Stir continuously and thoroughly until grits are well mixed. Let the pot return to a boil, cover pot with a lid, lower the temperature, and cook for approximately 30 minutes stirring occasionally. Add more water if necessary.
- Grits are done when they have the consistency of smooth cream of wheat.
- Serve with butter, fruit or savory with a meal.

- Combine the first 6 ingredients in a greased 3-qt. slow cooker. Cook, covered, on low until liquid is absorbed and grits are tender, 2-1/2 - 3 hours, stirring every 45 minutes. Stir in cheeses until melted. Serve immediately.

PAULA DEEN'S GRILLADES AND GRITS
Recipe by Paula Deen of The Lady and Son's in Savannah, GA. It's Mmmm-Good! I found that the cooking time may need to be increased to get the meat fork tender, so allow yourself some extra time. This can also be fixed in the crockpot.

Steps:
- Season beef with kosher salt, black pepper and garlic powder.
- Dust beef with about 1/3 cup flour and toss lightly.
- Spray a cast iron Dutch oven with cooking spray.
- Heat 4 tablespoons of bacon grease and 4 tablespoons of cooking oil (you may use all bacon grease, all solid shortening, or all cooking oil if desired).
- Brown meat in hot fat and remove to a large bowl using a slotted spoon.
- Leaving fat in Dutch oven, saute bell pepper, onions, celery, and garlic. Brown vegetables and remove to bowl with a slotted spoon, leaving fat in the pot.
- Add or take away to total 3 tablespoons of fat to make your roux.
- To make roux, add about 1/4 cup of flour, stirring constantly and slowly until flour is a nice deep brown, being careful not to burn the flour.
- Slowly add 4 cups of beef broth or water and stir. Bring to a simmer and add back beef and vegetables.
- Add bay leaves, thyme, hot sauce, Worcestershire sauce, salt, dried basil and stir.
- Add fresh tomatoes and 1 can extra hot tomatoes.
- Simmer for about 1 hour and 15 minutes, stirring occasionally.
- Just before serving, remove bay leaves and stir in 1/2 cup chopped parsley.
- Serve over your favorite hot buttered grits.

This is a recipe from her magazine "Cooking With Paula Deen" Grits is the one breakfast food I will eat that is more like a cooked cereal (Which I normally call gruel" I grew up sneaking my daddys grits from his breakfast plate, and now have learned to eat them with the help of Paula Deen any time of the day.
