Easy to throw together, yet full of flavor. Please note that this recipe calls for chicken with bones - if you really prefer to use boneless, then I would assume that all of the cooking times would be halved. I have always used bone-in chicken for this recipe. If you like it less spicy, go ahead and reduce the amount of black pepper.

Steps:
- Preheat oven to 350 degrees F.
- Use poultry shears to cut each breast in half (poultry shears will easily cut through the bones).
- Heat a large nonstick skillet over medium high heat, spray with nonstick cooking spray, and brown chicken pieces briefly (not to cook all the way through).
- Place browned chicken pieces into a 9x13" casserole sprayed with nonstick spray.
- Combine water, ketchup, vinegar, brown sugar, pepper, and celery seed with a whisk until blended.
- Pour sauce over chicken, add bay leaf to the pan, and bake uncovered at 350 F for 30 minutes.
- Baste chicken with some of the pan drippings and continue cooking until the chicken is fully cooked, approximately another 30 minutes (time will vary based on the weight of your chicken pieces) Once chicken is fully cooked, remove to a platter and if desired, pour any remaining pan drippings/liquid into a gravy dish to use as a dipping sauce.
- Or pour any remaining sauce into a saucepan and heat until reduced (you can thicken this by adding a little flour that has been whisked with a small amount of water first and whisking this mixture into the heateed drippings and cooking until thickened).
- *If you prefer, you may substitute bone-in chicken thighs or drumsticks in place of the breasts. Just be sure to end up with 8 small pieces of chicken with bones.

POBLANO AND PEPPER JACK-STUFFED CHICKEN BREASTS WITH ANCHO CHILE CREAM SAUCE
Steps:
- For the poblano and pepper jack-stuffed chicken breasts: Roast the poblano peppers over an open flame until completely charred, transfer to a plastic bag and seal for 10 minutes. Peel the charred skin, remove all the seeds and cut each pepper in half.
- Meanwhile, put chicken breasts on a cutting board and pound with a meat mallet to 1/4-inch thickness. Season with salt and pepper.
- Heat a large skillet over medium high heat. Add the oil, heat, then add the chicken and cook until the first side is golden-brown, 1 to 2 minutes. Flip and cook until the second side is golden-brown, another 1 to 2 minutes. Transfer the skillet to the oven and roast until just cooked through, about 8 minutes.
- Meanwhile, make the ancho chile cream sauce: Bring the cream to a simmer in a small saucepan and cook until reduced by 1/3. Add the Cajun spice and ancho chile powder and simmer for another minute or so. Keep warm.

- In high-sided skillet over medium-low heat, bring the broth to a simmer. Add the lemon zest, lemon juice, onions and seasoning packet and stir to combine. Add the chicken to the skillet and cover. Simmer on low until the chicken is cooked through, about 20 minutes. Remove the chicken from the skillet when cooked through. Slice in 1/2-inch thick slices.
- Add the peppers with their liquid to a blender along with 1/3 cup of the poaching liquid. Puree until smooth. If it is too thick, slowly add additional poaching liquid until desired consistency. Season with salt and pepper. Transfer to a small pot and bring to a simmer.

- Whisk together oyster sauce, soy sauce, vinegar, black pepper, half cup water and one tablespoon of cornstarch and set aside.

- Sprinkle lemon pepper on both sides of breasts. Sprinkle the lemon pepper to your own taste.
- Using a non-greased 9"x13" glass baking dish place the chicken, and melted margarine (or butter) inside. Cover.

- Pound chicken breast to an even thickness.
- Cut celery stalks into 2 inch long "matchsticks".
- In a small bowl, combine the pepper jelly and mustard, set aside.
- Season both sides of the chicken breast with salt and pepper.
- In a large skillet, melt butter over medium-high heat, when foam cooks down, add chicken breast.
- Cook 5 minutes on each side.
- Tilt the skillet and pour off most of the fat.
- Add 1 tbs. water and shake skillet to loosen browned chicken bits.

- Add celery sticks, stirring for 1 miunte.
- Add pepper jelly mixture and lemon juice.

Portugal launched great explorations in the 15th and 16th centuries, often in search of spices, and to a large extent, their discoveries defined their national cuisines. They discovered Madeira, the Azores and the Cape Verde Islands. Vasco da Gama, seeking a sea route to India, brought back one of most important spices of all, black pepper. - Preheat the broiler. Put the potato in a medium saucepan, cover with water and add 1 tablespoon salt. Bring to a simmer and cook until just tender, about 8 minutes. Drain well. Meanwhile, pat the chicken dry and sprinkle with the oregano, and salt and pepper to taste. Heat 2 tablespoons olive oil in a large cast-iron skillet over high heat. Add the chicken and cook until browned, about 5 minutes per side. Transfer the chicken to a plate. Add the potato to the skillet and cook, stirring, 3 minutes. Add the onion and bell pepper and cook until slightly soft, about 1 minute. Reduce the heat to medium; add the remaining 1 tablespoon olive oil and the garlic and cook 2 minutes. - In shallow dish, mix marinade ingredients.
- Add chicken turn to coat chicken completely.
- Cover and refrigerate overnight.
- In large skillet, melt 3 tablespoons unsalted butter and saute peppers for 2 minutes.
- Remove peppers.
- Simmer wine and chicken broth.
- Increase heat to high and keep over heat until sauce is reduced to 2 tablespoons- about 5 minutes.
- Add cream and cook until sauce is reduced- about 4 minutes.
- In another skillet, saute mushrooms in 2 tablespoons unsalted butter over medium-high heat until brown.
- Add peppers, cream sauce, and salt.
- Drain chicken and discard marinade.
- Grill chicken turning once (chicken can be cooked on stove top either).
- Cut chicken into 1/4 inch strips.
- Stir Parmesan and 3/4 cups basil into peppers.
- On heat serving platter, arrange fettucini noodles, top with chicken, and pour sauce over all.
- Serve immediately.

- In a shallow dish or bowl, combine flour, 1/2 teaspoon salt and ground black pepper. Coat chicken breasts with flour mixture. Melt butter in a large skillet over medium heat, and brown chicken on all sides. Remove from skillet, and drain on paper towels.
- In the same skillet, combine the tomatoes, water, brown sugar, vinegar and Worcestershire sauce. Season with salt, chili powder, mustard, celery seed, garlic and hot pepper sauce. Bring to a boil; reduce heat, and return chicken to skillet. Cover, and simmer for 35 to 40 minutes, or until chicken is tender, no longer pink and juices run clear.
