PAT'S GOURMET SALMON CAKES

Pat's Gourmet Salmon Cakes image

If you wanted something as elegant and tasty as fresh crab cakes but you don't have the money just now, this dish is a great alternative! These are not your run-of-the-mill salmon patties, nope. These are moist, thick, flavorful (yet mild) salmon cakes with a lot of eye appeal. They are certainly worth spending a few extra minutes on the details of this recipe. I love these for brunch with an old friend over a glass of Pinot Grigio or, as a light main entrée with green beans and some creamy pasta for side dishes. I usually try to submit versatile recipes in which changes make little difference but since this recipe involves only a small amount of canned salmon (you get about 1 ½ cans of salmon from the two cans once it's been totally cleaned), any substitutions may significantly alter the flavor. I have listed a couple of viable substitutions that have worked out well for me in a pinch. Make this dish for someone special and, Bon Appétit, my good friends!

Categories     Camping

Time 45m

Yield 7 patties, 4 serving(s)

Number Of Ingredients 14

30 ounces canned salmon, drained, de-boned, and cleaned (two 15-ounce cans)
2 cups oyster crackers, whole
6 tablespoons mayonnaise
2 large eggs, beaten
3 tablespoons pimientos (canned, drained and diced)
1/3 cup fresh parsley, chopped
1 tablespoon fresh lemon juice, strained
1 teaspoon dried basil
1 teaspoon rice vinegar (sub., white wine vinegar)
1/2 teaspoon kosher salt
1 1/2 teaspoons prepared yellow mustard
1/2 teaspoon Mrs. Dash seasoning mix (sub., Italian dressing dry mix)
1 teaspoon Old Bay Seasoning (sprinkled on frying cakes)
2 cups Crisco shortening, butter flavored (for frying)

Steps:

  • Drain canned salmon and carefully remove all bones, skin and dark brown material. Take your time in doing this -- all remaining salmon should be light pink when you're finished.
  • In a large mixing bowl, combine salmon, mayonnaise (not Miracle Whip), beaten eggs, pimientos, parsley, lemon juice, basil, vinegar, salt, mustard, and Mrs. Dash seasoning, (but NOT the Old Bay). Mix carefully with a spatula -- the mix will be runny at this point.
  • Crush the oyster crackers by hand and add them to the mix which should make the blend stiff enough to make up the salmon cakes -- you do not want a "dry" mix.
  • In a large skillet, heat the Crisco over high heat until a few drops of water in the oil crackles and pops. If you cut down on the amount of shortening, the sides of the salmon cakes will not brown up properly and you'll experience a temperature drop in the oil which can result in a greasy end product!
  • Make up the salmon cakes so that they look like "fat" burgers, (gently make them up, taking care to not "squeeze" them together -- they will flatten out on the tops and bottoms by themselves as they fry), laying them on a large plate, (I get 7 thick ones, about 3" across), and then sprinkle on the Old Bay seasoning.
  • When the cooking oil is hot enough, (they should start frying immediately -- if not, the oil is too cold!), lay in the salmon cakes. Don't crowd them or you'll drive down the oil temperature -- I always make two batches with 3-4 patties in each.
  • When one side has reached a deep golden brown, (about 4 minutes), carefully turn the cakes and allow the second side to brown. As soon as they are browned equally on both sides, remove them to a plate with a couple of paper towels on it to soak up excess oil. Do not overcook them -- when they're brown, they come out! Serve while still hot.
  • NOTE: Do not mash these salmon cakes with a spatula as they fry because they will be very dry-tasting if you do.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Salmon Recipes

Time 1h15m

Number Of Ingredients 18

2 pounds skinless salmon fillet
Coarse salt and ground pepper
1 teaspoon hot sauce, such as Tabasco
1/2 cup plain dried breadcrumbs
1/3 cup chopped fresh parsley
1/4 cup light mayonnaise
1/4 cup Dijon mustard
2 large eggs, lightly beaten
2 tablespoons fresh lemon juice
1/4 cup light mayonnaise
1/4 cup reduced-fat sour cream
2 tablespoons fresh lemon juice
2 teaspoons chopped fresh parsley, dill, or cilantro
Coarse salt and ground pepper
3 tablespoons prepared horseradish
2 tablespoons minced capers
1 teaspoon hot sauce, such as Tabasco
2 tablespoons minced pickled jalapeno chile

Steps:

  • Preheat oven to 400 degrees. Place fish on a rimmed baking sheet; season with salt and pepper. Roast until cooked through, 15 to 20 minutes. Let cool completely; pat dry with paper towels. Break salmon into smaller pieces; flake with a fork.
  • In a large bowl, combine scallions, breadcrumbs, and parsley. Add mayonnaise, mustard, eggs, lemon juice, and salmon. Season again with salt and pepper, plus an additional flavoring if desired. Mix gently until ingredients just hold together.
  • Form mixture into 8 patties (each about 3 inches wide). Place on a foil-lined baking sheet. Refrigerate until cold and firm, 20 to 30 minutes.
  • Make Lemon-Herb Sauce: Whisk together mayonnaise, sour cream, fresh lemon juice, and chopped herbs. Season with coarse salt and ground pepper.
  • Heat broiler. Broil patties until lightly golden on top (without turning), 6 to 8 minutes. Serve with Lemon-Herb Sauce.

Number Of Ingredients 19

2 tablespoons olive oil mayonnaise
2 tablespoons fresh lime juice
3 tablespoons reduced- sodium tamari soy sauce
1/2 red bell pepper, seeded, ribs removed, and finely chopped
1/2 small red onion, finely chopped
2 tablespoons chipotle peppers in adobo sauce, finely chopped (omit for kids)
1/2 cup panko bread crumbs
1/2 cup flaxseed meal
1 large egg, beaten
Three 5-6-ounce cans high-quality boneless and skinless wild salmon, drained
2 tablespoons extra- virgin olive oil
For serving:
1 package regular or gluten- free mini-slider buns, toasted
12 small kale leaves, tough ribs or stems removed, torn
1/2 red onion, thinly sliced
Creamy chive sauce:
1/2 cup Greek yogurt
1/4 cup fresh chives, finely sliced on the diagonal
1 tablespoon Worcestershire sauce

Steps:

  • In a medium bowl, whisk together the mayonnaise, lime juice, and soy sauce. Add the bell pepper, onion, and chopped chipotle peppers, and stir until well combined. Fold in the panko, flaxseed, and beaten egg. Gently fold in the salmon.
  • Divide the mixture into six equal parts and, using clean hands, shape each into a ball. Pat each ball into 2 1/2-inch-wide and 3/4-inch-thick burger patties. Place the patties into an airtight container and cover.
  • Heat a medium grill pan or cast- iron skillet over medium- high heat. Add the olive oil, reduce the heat to medium, and cook the patties, in batches, until golden brown, 2 to 3 minutes. Gently turn them over and brown the opposite sides for an additional 2 to 3 minutes. Transfer the cooked patties to a paper towel-lined plate while you prepare the sauce.
  • In a small bowl, whisk together the yogurt, chives, and Worcestershire sauce.
  • To serve, place each burger on a toasted bun, smear on a dollop of the sauce, and layer on the kale and thinly sliced red onion.
  • Clean green tip:
  • Instead of making burgers, you can shape the salmon mixture into mini-salmon cakes for bite- size party appetizers. Top with a little dollop of creamy chive sauce and watch your guests devour these bites!

For an elegant main course, serve Ina Garten's Salmon Cakes, made with a mix of fresh veggies, capers and Old Bay, from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     appetizer

Time 2h20m

Yield 5 servings

Number Of Ingredients 17

1/2 pound fresh salmon
Good olive oil
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (1 small pepper)
1/2 cup small-diced yellow bell pepper (1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers, drained
1/4 teaspoon hot sauce (recommended: Tabasco)
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)
3 slices stale bread, crusts removed
1/2 cup good mayonnaise
2 teaspoons Dijon mustard
2 extra-large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the salmon on a sheet pan, skin side down. Brush with olive oil and sprinkle with salt and pepper. Roast for 15 to 20 minutes, until just cooked. Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes and refrigerate until cold.
  • Meanwhile, place 2 tablespoons of the butter, 2 tablespoons olive oil, the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, crab boil seasoning, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature.
  • Break the bread slices in pieces and process the bread in a food processor fitted with a steel blade. You should have about 1 cup of bread crumbs. Place the bread crumbs on a sheet pan and toast in the oven for 5 minutes until lightly browned, tossing occasionally.
  • Flake the chilled salmon into a large bowl. Add the bread crumbs, mayonnaise, mustard, and eggs. Add the vegetable mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into 10 (2 1/2 to 3-ounce) cakes.
  • Heat the remaining 2 tablespoons butter and 2 tablespoons olive oil in a large saute pan over medium heat. In batches, add the salmon cakes and fry for 3 to 4 minutes on each side, until browned. Drain on paper towels; keep them warm in a preheated 250 degree F oven and serve hot.

SALMON & DILL FISH CAKES IN 4 EASY STEPS

Salmon & dill fish cakes in 4 easy steps image

Everybody loves fish cakes, and even the complete beginner can master these mouthwatering morsels

Provided by Good Food team

Categories     Dinner, Main course, Supper

Time 1h

Yield Makes 8

Number Of Ingredients 14

800g skinless salmon fillet
2 bay leaves
small bunch dill , stalks and fronds separated
500ml milk
600g Maris Piper potato , peeled and chopped into even sized chunks
zest 1 lemon
4 tbsp mayonnaise
1 tsp Dijon mustard
4 tbsp caper , rinsed and dried
flour , for dusting your hands
1 egg , beaten
100g breadcrumb
4 tbsp vegetable or sunflower oil
lemon wedges and watercress, to serve

Steps:

  • Poaching the salmon: Put the salmon in a frying pan with the bay leaves and dill stalks. Pour over enough milk to cover the fish (you may not need all the milk), bring to the boil, then lower heat to a gentle simmer and leave to poach for 4 mins. Turn off the heat, then leave the fish to continue cooking in the poaching liquid for 5 mins. Lift the salmon out with a fish slice onto a plate. Flake into large pieces with a fork, then leave to cool.
  • Making and drying out the mash: Meanwhile, cook the potatoes in boiling salted water for about 10 mins, or until tender. Drain well, then leave to cool in a colander for 2 mins. Tip back into the pan and return to the hob on a low setting. Mash the potatoes, watching that the mash doesn't catch at the bottom of the pan, for 2-3 mins - it should be dry and fluffy. Stir in lemon zest, mayonnaise, mustard, capers and some seasoning.
  • Mixing and shaping fish cakes Pat away any liquid from the fish, then carefully lift the pieces into the pan with the mash. With your hands, gently mix together until roughly combined; it should take just a few movements or the fish will break up. Dust hands and work surface with flour. Shape a handful of the mix into a patty-shaped cake, about 2.5cm thick. Repeat to make 8 cakes.
  • Breadcrumbing and frying Dip the cakes into the egg, then press into the breadcrumbs all over. Heat half the oil in a frying pan until very hot. Fry 4 fish cakes for 5 mins each side until golden. Remove; keep warm. Repeat with the rest, or freeze. Serve with lemon wedges and watercress.
