⅓ vanilla bean
¼ cup olive oil
1 large sweet potato, peeled and halved
1 large Red Delicious apple, unpeeled
2 tablespoons brown sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
1 pinch ground nutmeg
ground ginger

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil; spray with nonstick spray.
  • Split vanilla bean lengthwise with the tip of a sharp knife. Holding the pod open, scrape seeds from each half using the flat side of your knife.
  • Combine vanilla bean, scraped seeds, and olive oil in a small saucepan over very low heat. Warm the oil until fragrant, about 5 minutes. Remove from heat and let cool, about 5 minutes.
  • Cut sweet potato and apple into noodles using a spiralizer. Place in a large bowl.
  • Whisk 2 tablespoons olive oil, brown sugar, cinnamon, salt, nutmeg, and ginger together in a small bowl. Drizzle over sweet potato and apple; toss well to coat.
  • Spread sweet potato and apple in an even layer on the prepared baking sheet.
  • Bake in the preheated oven, turning once, until golden, about 10 minutes. Increase oven temperature to 425 degrees F (218 degrees C). Roast until ends of sweet potato start to brown and toast, 5 to 10 minutes more.

2 sprigs fresh rosemary, picked and finely chopped
1/2 cup coarsely chopped walnuts
Juice of 1/2 lemon
2 large sweet potatoes, peeled and cut into 1-inch dice
Extra-virgin olive oil
Kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
3 Honeycrisp or Granny Smith apples

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
  • Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
  • Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
  • Serve immediately or keep in a warm oven and serve hot.

3 medium baking potatoes
1 red onion
3 tablespoon extra-virgin olive oil
1 teaspoon finely chopped rosemary
1 teaspoon dried oregano
1/2 teaspoon chilli flakes
A Pinch of salt and pepper

Steps:

  • Preheat the oven to 400°F (210°C).
  • Wash and remove the skin from the potatoes and spiralize them, using a medium size blade. Spiralize the red onion as well.
  • Spread out the potato and onion noodles on a parchment-lined baking sheet and drizzle with extra-virgin olive oil.
  • Sprinkle with salt, pepper, chilli flakes, dried oregano and freshly chopped rosemary.
  • Toss to coat with your fingers and then place the noodles in the oven.
  • After 15 minutes, if there are any pieces that are starting to brown too quickly, cover them with aluminium foil. Continue to bake the potato noodles until they crisp up, checking every couple of minutes. After 30 minutes, all noodles should be cooked and ready to eat.
  • Let the fries cool for 5 minutes to crisp up a bit more and then serve immediately.

2 tablespoons olive oil
3 tablespoons rosemary ( chopped )

1/2 teaspoon pepper

Steps:

  • Preheat oven to 450. Prepare a lined baking sheet with parchment paper or a silpat liner.
  • Spiralize potatoes on noodle blade (you want them to be thin and round like spaghetti)
  • With a scissors, roughly trim all potato noodles until they are in smaller pieces (You don't want them to be too big/long!)
  • Squeeze excess water out of potato noodles with paper towels or a dish towel. Make sure to get as much water out of them as possible
  • In a bowl, toss potato noodles with olive oil, salt, pepper, and rosemary until coated (you can use your hands or tongs)
  • Lay potato noodles on lined baking sheet. Bake at 450 for 35-40 minutes, tossing noodles every 10 minutes. Every oven is different and may need more or less time, so watch your potatoes towards the end! You can broil the potatoes on high for 2 minutes to get extra crispy at the end if you would like.

2 peeled sweet potato (4.5 cups spiralized)
2 oz cream cheese or 1/4 to 1/3 cup sour cream (see notes for non dairy option)
1/2 to 2/3 cup almond or coconut milk (drinking milk works great).
1 egg and 2 egg whites whisked
1 tbsp olive oil
1/2 tsp garlic (minced)
1/4 tsp onion salt or sea salt (dash of garlic/salt for after baking as well)
2 oz diced olives or pimentos (drained if using canned)
1/4 cup tomato sauce
2/3 cup cooked sliced gluten free sausage (chicken sausage, chickpeas, or any gluten free breakfast sausage all work)
1 cup greens (spinach or kale)
5 oz crumbled cheese - Parmesan or Feta work great. (see notes for non dairy option)
4-5 basil leaves for topping
optional black pepper seasoning on top
Optional 2 -3 tbsp pesto mixed with spaghetti noodles before baking

Steps:

  • Preheat oven to 350F
  • Peel your sweet potatoes then spiralize them. Comes out to about 4.5 cups.
  • Place sweet potato noodles in a bowl and steam in microwave for about 1 minutes or on stove top for 5 minutes, until potato noodles are al dente.
  • Then add 1 tbsp oil and your garlic, onion salt. Toss so that the noodles are lightly coated. To make more flavorful, feel free to toss the cooked sweet potato spaghetti noodles in a pesto before placing in casserole dish. (I used an 8×11)
  • In another bowl, mix your sour cream (or cream cheese), whisked eggs, and milk.
  • Lightly coat a casserole dish with oil or coconut spray.
  • Layer your ingredients. starting with noodles, then chicken sausage, olives or pimentos, then spinach or kale greens.
  • Next add your cream cheese/egg mixture. then add tomato sauce and crumbled cheese (parmesan or feta work great).
  • Bake for 30-35 minutes or until cheese starts to brown. Check noodles for tenderness if you can.
  • Optional: Top with fresh basil, black pepper and any additional sea salt or garlic.

2 medium sweet potatoes (4 cups, cut into 1" cubes)
2 medium apples (about 2 cups, cut into 1" cubes)
3 TBS coconut oil (melted & divided)
1 tsp sea salt
2 TBS pure maple syrup
1 tsp ground cinnamon

Steps:

  • Preheat oven to 425 degrees F.
  • Grease a large baking pan, set aside.
  • In a large bowl, toss cubed sweet potatoes with 2 TBS of melted coconut oil. Stir until coated.
  • Add sea salt and stir until evenly distributed.
  • Bake in the preheated oven for 20 min, stirring halfway through, until sweet potatoes just barely start to brown.
  • While the sweet potatoes are baking: stir the remaining 1 TBS of coconut oil into the apples. Add maple syrup and cinnamon and stir to combined.
  • After 20 minutes, or the sweet potatoes have begun to brown, remove the sweet potatoes from oven and add the apple mixture and stir to combine.
  • Return to the oven and bake for 20 more minutes, stirring halfway through.
  • Once the sweet potatoes and apples are browned and the maple syrup has caramelized on them remove them from the oven and serve immediately!

  • Adjust oven rack to middle position and heat oven to 450 degrees. Using spiralizer, cut sweet potatoes into ⅛-inch-thick noodles, then cut noodles into 12-inch lengths.
