A hearty, hand-held pastry filled with meat and potatoes, pasties (PASS-tees) became popular fare for miners around the world. Try this updated version made with sweet potatoes and stout for a flavor adventure!

Steps:
- Heat oven to 375°F. Grease cookie sheet with shortening or cooking spray.
- In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in sweet potato, stout, salt and pepper. Heat to boiling. Reduce heat; cover and simmer about 8 minutes or until vegetables are tender. Uncover; cook 1 to 2 minutes longer or until liquid is evaporated.
- Separate dough into 8 biscuits. Press or roll each to form 6-inch round. Place on cookie sheet. Spoon about 1/4 cup meat mixture onto center of each round. Fold dough in half over filling; press with fork to seal.
- Bake 12 to 15 minutes or until golden brown.

BEEF & POTATO HAND PIES (CORNISH PASTIES)
Simple beef and potato hand pies (aka: classic Cornish Pasties) made with leftover roast and healthier store bought pie crust!

Steps:
- Preheat oven to 400 degrees and line two baking sheets with parchment.
- Roll out pie crusts and use a 8-9" tart pan or other pan, inverted, to cut the dough into 4 large circles. You may have to reform and roll the dough between cuttings to get all four circles. Lay 2 dough circles on each parchment lined baking sheet.
- Pile about 1 1/2 cups of the meat and potato mixture (with juices) onto one half of each dough circle. Spread evenly over that half of the dough circle, leaving about 1/2" rim around the edge for crimping. Sprinkle some sea salt and pepper over the meat and potato mixture.
- Use a pastry brush to brush the 1/2" rim of pastry with some of the beaten egg - this will serve as "glue" to seal the pastry edges.
- Gently fold the "blank" side of each dough circle over the meat and potato filling side, matching the edges of the pastry to create a half-circle shaped hand pie. Use your finger to press and seal the edges of the pastry together, fluting them for decoration if desired.
- Once each hand pie is formed, use a very sharp knife to lightly score the top of each pie.
- Use a pastry brush to cover the surface of each hand pie with beaten egg.
- Bake for 25-30 minutes or until crusts are golden and firm to the touch.
PASTIES (HANDHELD MEAT PIES)
These pasties are a family favorite. Filled with your favorite savory filling they are sure to be a crowd pleaser.

Steps:
- Brown meat with onion soup mix and salt and pepper to taste. Set aside.
- Peel, dice, and par-boil potatoes and carrots.
- Add potatoes, carrots, and peas to meat and mix.
- Roll out pie crust to about a 6" circle.
- Add ½ to 1 cup of the meat mixture to the pie crust.
- Brush a little water to one edge of the pie crust.
- Gently fold the crust over and seal with a fork or your preferred method.
- Place the pasties on an un-greased cookie sheet and brush with egg and cut two or three vent holes.
- Bake at 375 degrees for 25 to 30 minutes or until done.

- Make the crust: Combine flour, 1 1/2 teaspoons curry powder, and pinch of salt. Cut in 1/4 cup margarine and shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Do not overstir; that makes tough crust. Shape dough into a log, and cut into 10 equal sections. Roll each section into a six inch circle (approximately 1/8 inch thick). Set aside.
- Next, prepare the filling.: Melt margarine in a skillet over medium heat. Saute onion until soft and translucent. Stir in ground beef. Season with 1 teaspoon curry powder, thyme, 1 teaspoon salt, and pepper. Cook until beef is browned, stirring constantly. Stir in beef broth and bread crumbs. Simmer until liquid is absorbed. Remove from heat.
- Now make the patties: Spoon some filling into each pastry circle. Fold over and press edges together, making a half circle. Use a fork to press edges, and brush the top of each patty with beaten egg.
- Bake in preheated 375 degree oven for 25 - 30 minutes, or until golden brown.
- NOTE: If you have the time and organization, it might be best to make the filling in advance, long enough to cool down before fillng the pastry. Otherwise, it might melt the pastry somewhat. Just a thought from a review on another recipe.

- In a large bowl, stir shortening and water until shortening is melted. Gradually stir in flour and salt until a very soft dough is formed; cover and refrigerate for 1-1/2 hours. , Cut potatoes and rutabagas into 1/8- or 1/4-inch cubes; do not make cubes too large or they will not cook properly. Gently combine ground beef and pork; break into small crumbles. In a large bowl, combine potatoes, rutabagas, onions, meat mixture and seasonings. , Divide dough into 12 equal portions. On a floured surface, roll out 1 portion at a time into a 8-in. circle. Mound 1-1/2 to 2 cups filling on half of each circle; dot with 1 teaspoon butter. Moisten edges with water; carefully fold dough over filling and press edges with a fork to seal. , Place on ungreased baking sheets. Cut several slits in top of pasties. If desired, brush with cream or beaten egg. Bake at 350° until golden brown, about 1 hour. Cool on wire racks. Serve hot or cold. Store in the refrigerator.
