AMAZING PEANUT BUTTER CHOCOLATE CHIP BROWNIES

Amazing Peanut Butter Chocolate Chip Brownies image

If you love peanut butter then this is for you, these are moist, rich and they bake out perfrectly, I made mine in an 11 x 7-inch baking pan but you can also bake it in a 13 x 9-inch pan and adjust the baking time slightly --- you don't need a mixer to make this everything is mixed by hand and you won't even need icing on these, just serve these topped with ice cream, yield is only estimated.

DARK CHOCOLATE PEANUT BUTTER BROWNIES

Dark Chocolate Peanut Butter Brownies image

First Place Winner in RSC#12! Super rich peanut butter dark chocolate brownies with a thick peanut butter topping accented with chocolate drizzle! Serving size will vary on tolerance for rich, sweet foods - the first time I made these, I cut into 20 bars and some of my guests thought that half the size would have been enough... I, on the other hand, had two!

Categories     Dessert

Time 45m

Yield 24-36 serving(s)

Number Of Ingredients 14

1/4 cup butter
1 cup bittersweet chocolate chips (I use 60% Cocoa Ghirardelli baking chips)
1/8 cup chunky peanut butter or 1/8 cup creamy peanut butter
1/4 cup Splenda granular
1/2 cup sugar
1 teaspoon vanilla extract
1 egg
2 egg whites
1/4 cup whole wheat flour
1/3 cup semisweet mini chocolate chips
1/2 cup peanut butter (NOT chunky)
1 cup powdered sugar
3 -4 tablespoons evaporated skim milk (or milk)
1 tablespoon sugar-free chocolate syrup (optional)

Steps:

  • Preheat oven to 350 and spray 9x9 (recommended) or 8x8 baking dish with cooking spray.
  • Melt butter in a medium sized saucepan over low heat. Add baking chips and peanut butter, stirring over low heat until melted.
  • Remove from heat. Immediately stir in splenda, sugar and vanilla. Beat in egg and then the two egg whites.
  • Add the flour and stir for about one minute, until batter becomes smooth and glossy.
  • Stir in mini chocolate chips.
  • Spread into prepared cake pan and bake for 20-25 minutes for a 9x9 dish or slightly more for an 8x8 dish - brownies are done when moist crumbs cling to a toothpick inserted in the middle. Don't overcook (toothpick will come out clean) or they will be dry.
  • Cool on a wire rack.
  • To make topping: using an electric mixer combine creamy peanut butter and powdered sugar until you have coarse crumbs. Scraping down sides when necessary.
  • On medium-high speed, beat in evaporated milk (or milk) one tablespoon at a time until mixture is smooth and spreadable, although not runny. This is not a frosting, the consistency should be rather thick and sturdy.
  • Spread over cooled brownies.
  • Plate brownies, then drizzle sugar-free chocolate syrup over brownie before serving for an elegant brownie dessert or drizzle onto uncut brownies, cutting will create a different look each time! Measurement is a guesstimate - I just squeeze it right out of the bottle.
  • Store leftovers in refrigerator.

4 tablespoons unsalted butter
1/2 cup light brown sugar, lightly packed (115 grams)
1/3 cup smooth peanut butter
1 egg white, from 1 large egg, at room temperature
1 teaspoon pure vanilla extract
1/4 cup your favorite roasted peanuts, roughly chopped
1 1/2 sticks (12 tablespoons) unsalted butter
2/3 cup mini semisweet chocolate chips
1 cup light brown sugar (215 grams)
1/2 cup Dutch process cocoa powder (50 grams)
1 tablespoon hot water
Heaping 1/2 teaspoon fine salt
2 large eggs, at room temperature
1 large egg yolk, leftover from cookie dough, at room temperature
1 teaspoon pure vanilla extract
1/2 cup all-purpose flour (65 grams)
3 tablespoons smooth peanut butter
2 tablespoons mini semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F. Grease a 9-inch square pan with cooking spray, line with parchment paper, then spray the parchment.
  • For the peanut butter cookie base: Whisk together the flour, salt and baking soda in a medium bowl and set aside.
  • Melt the butter in a medium microwave-safe bowl and then stir in the brown sugar and peanut butter until smooth. Stir in the egg white and vanilla until fully combined. Stir in the flour mixture and peanuts until combined, then transfer the dough into the prepared pan.
  • Use a rubber spatula or your fingers to press the dough into an even layer. Bake until the cookie puffs up and the edges are light golden, 10 minutes.
  • Meanwhile, prepare the brownie batter.
  • For the brownie batter: Put the butter in a medium saucepan and cook over medium heat until melted and bubbling, about 1 minute. Stir constantly with a rubber spatula until the butter is light golden brown, about 2 minutes. Transfer the browned butter to a heat-resistant medium bowl and stir in the chocolate chips until smooth. Stir in the brown sugar, cocoa powder, hot water and salt until combined. Stir in the eggs, yolk and vanilla until the eggs are fully incorporated. Stir in the flour until completely combined and the batter is thick and shiny. Pour the batter over the just baked peanut butter cookie base and spread it with a rubber spatula or spoon until smooth.
  • Lower the oven to 300 degrees F and bake until a toothpick inserted about 3 inches from the edge of the pan comes out with fudgy crumbs, but no raw batter, 40 to 43 minutes. Let cool completely, about 2 hours 30 minutes.
  • To finish: Melt the peanut butter in a small microwave-safe bowl in 10 second intervals, stirring after each, until it has the consistency of a smooth sauce, about 20 to 25 seconds total. Transfer to a small resealable plastic bag, snip off the tip and drizzle the peanut butter sauce over the bars. Sprinkle with the mini chocolate chips and then slice into 16 squares. The bars can be stored in an airtight container at room temperature for up to 3 days.

PEANUT BUTTER BROWNIES

Peanut Butter Brownies image

Super gooey brownies with a crunchy peanut butter centre

Provided by zippylongstocking

Time 1h

Yield Makes Brownies

Number Of Ingredients 6

200g dark chocolate
170g unsalted butter
5 heaped tbsp crunchy peanut butter
325g caster sugar
130g plain flour
3 eggs

Steps:

  • Preheat the oven to 170C/Gas 3
  • Line and grease a baking tray measuring 30x23x4cm well with excess baking paper which will allow you to lift the brownies out rather than turning out of the tray.
  • Put the chocolate, butter and 2 heaped tablespoons of the peanut butter in a heatproof bowl over the pan of water on a low heat. Make sure the bowl does not touch the water and the water is not boiling. Gently stir the ingedients until completely melted.
  • Once melted, take the bowl off the heat. Add the caster sugar to the mixture and mix well, then add the flour and stir well and finally add the eggs and mix until smooth.
  • In another bowl over the hot water, melt the remaining peanut butter (3 heaped tablespoons-add more if you want it really peanutty!) until smooth and runny.
  • Pour half of the brownie mixture into the baking tray making sure the whole bottom of the tray is covered. Over the layer of bronwnie mixture, drizzle the melted peanut butter, then pour over the remaining brownie mixture.
  • (This isn't essential but looks pretty) Take a teaspoon and put the handle straight down into the mixture in the top left corner of the tray, run it through the mixture in a swirling left to right motion until you reach the bottom of the tray. If there is any peanut butter showing through the top layer of brownie mixture, this will create a marble effect.
  • Place in the oven for 30 minutes. Once out, leave to cool in the tin for at least 30 minutes before lifting out of the tray and cutting into squares.
