ONE-POT WHITE BEAN PASTA
This quick white bean pasta makes a wonderful One-pot family meal ready in less than 15 minutes. It's everything you want in a pasta dish: it's comforting, packed with fresh ingredients, BIG flavor, protein, veggies, and it's no fuss.

- Warm the olive oil in a large pot over medium heat. Add the minced garlic and cook until fragrant and smells good, about 45 seconds.
- Add paprika, chili flakes, beans, black pepper, and give a good stir.
- Add hot water or low sodium vegetable broth, salt, turn to high heat and bring to the boil.
- Stir in pasta, reduce the heat to medium-low, cover with a lid and cook stirring frequently. The amount of liquid is enough to partially cover the pasta (but keep an eye on it to make sure the pasta doesn't stick to the bottom of the pot, and add a touch of water if needed).
- In the last 2 minutes of the pasta's cooking time, add fresh spinach, a handful at a time, and cherry tomatoes. Stir until the spinach is wilted, it takes a couple of minutes.
- Turn off the heat, finish the dish with freshly grated parmesan, and give a good stir until the cheese melts and the pasta looks well combined (taste and adjust the season according to your taste if needed).
- Serve immediately with a drizzle of extra virgin olive oil, more freshly ground black pepper and parmesan cheese if you like. Enjoy!

- Cook the pasta according to package instructions. Set aside. Cook the Italian sausage and slice into rounds. Set aside and keep warm.
- Meanwhile, heat the olive oil in a large saute pan or cast-iron skillet over medium heat. Add the smashed garlic cloves and saute for 2-3 minutes, or until fragrant and tender.
- Lower the heat to medium-low. Add the tomatoes and continue to cook until the tomatoes begin to burst and expel their juices. Add the beans to the pan, stir until combined and coated with olive oil from the pan. Add in the cooked pasta, arugula, and sausage. Stir until heated through.
- Season to taste with salt and pepper. Serve with freshly grated parmesan cheese, if desired.

- Cook the pasta in a large pot of salted water al dente according to package directions. Drain the pasta and keep warm. Reserve about one cup of pasta water. Add the oil to the pot and bring heat to medium. Brown the sausage and cook for about 10 minutes or until no longer pink. Add the garlic, sun dried tomatoes and spinach. Cook for a few minutes or until the spinach is wilted. Add the chicken broth and stir in the tomato paste. Add the beans and simmer on low for about 10 minutes or until the veggies are cooked and the sauce thickens. Add the pasta to the pot along with the dried basil. Add the pasta water, stir and cook on low until everything is well blended. Add salt and pepper to taste. Serve in a large bowl with grated Parmesan cheese.

- Spread the onions over the bottom of a 5 1/2- to 6-quart slow cooker and top with the carrots, garlic, white beans, thyme bundle and sausage links. Mix the diced tomatoes with the broth and 3 cups water and pour over the sausages. Add the Parmesan rind if using.

- Preheat oven to 400°F.
- Cut off and discard top of garlic head to expose cloves, then wrap head in foil and roast in middle of oven until cloves are tender, about 45 minutes. Open foil carefully and cool to warm. Squeeze garlic from skins into a small bowl, then mash to a paste with a fork.
- Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook sausage, stirring and breaking up large pieces, until browned, about 4 minutes. - Set oven to 400 degrees F.
- Grease a 13 x 9-inch baking pan.
- Cook the pasta until just al dente (do not overcook); drain, do not rinse and immediately toss with 1-2 Tbsp oil to prevent sticking; set aside.
